Okay, so here’s the thing it’s been really busy around here plus I’ve been sick wah wah. Not really sick but annoying sick and sick enough that it has affected my voice.  Why does that matter you ask?
 
Well I’m gonna let you in on a little secret. 

I use a microphone. 

I use the microphone on my phone to dictate my blog. I never used to but I find it very helpful for so many reasons. 1 it gets done a lot quicker and 2 I can talk and talk and talk and talk and talk. 

You get what I’m saying? LOL But really, I can talk about whatever is bothering me you know all those things that you say off the top of your head and then want to take them back? Okay so I say them and then I have the ability to take them back when I edit LOL… or not!
 
So, anyways because I’m sick my microphone is misinterpreting everything I say and I sound just like my brother speaking different languages in texts to my dad WTF? You’re probably asking yourself 
 
Well, you see this weekend my brother and my sister with her family were in town for my brothers big 40th birthday.  There may or may not have been a few drinks drunk when I explained the microphone to my family on the last evening. My brother thought it would be hilarious to say every foreign phrase that he knows and text it to my dad well you should’ve seen what came out of that.  BAHAHAHA And I mean not just once but like many times over and over again throughout the evening.
 
Now I am the one asking… WTF? LOL
 
Everybody got in on Friday except for my SIL who got in late Tuesday with baby JQ, this freaking kid is adorable! He is such a ham, as soon as he sees the camera he totally poses. That’s alright though because he is gosh darn cute and I think he may have a serious career in the biz 🙂
 
For my Bro’s birthday I went a little out-of-the-box and made a really fresh Mexican dinner. It has been super hot here, as in like +38 for the majority of the week, so I wanted to have something light and refreshing and easy for everybody to do a dish themselves up and eat al fresco.
 
So we did fish tacos 🙂
 
Ninja grilled them on the barbecue and they turned out super well! Everybody enjoyed the flavors so I would say the fish taco bar for my Bro’s 40th birthday was a hit!
 
We started with two different types of marinated fish 1 a bit spicier and 1with a bit more… well, tequila! LOL

Tequila Lime Fish Tacos with Cilantro Lime Crema 
Adapted from Guy Fieri

Fish Marinade:


3 tablespoons tequila
3 teaspoons ground cumin
2 teaspoons minced garlic
Juice of 1 lime
Kosher salt and freshly cracked black pepper
4 boneless, skinless basa fillets

For the fish marinade: In a large mixing bowl, combine the tequila, cumin, garlic, lime juice and some salt and pepper. 



Add the fillets to the marinade. Set aside to marinate for 4 to 5 minutes.

Put the fish in a foil packet and grill on the BBQ for about 15 minutes or until nice and flakey.

Shred the fish and top with a squeeze of lime.

Cilantro Lime Crema


1 cup sour cream
1/4 cup milk

1/4 cup cilantro, finely chopped
3 cloves garlic, pressed
1/2 teaspoon ground cumin
2 limes, juiced

In a small bowl, combine the sour cream, milk, cilantro, garlic, cumin and lime juice and chill. Season with salt and pepper.

Chipotle Fish Tacos with Cilantro Peach Salsa
Adapted from Feasting at Home
3 pounds grill-able fish, at least an inch thick (we used Basa)
Flour and Corn tortillas 
Chipotle Marinade Ingredients:

 

5 garlic cloves
5 whole chipotles 
2 tablespoons adobo sauce (from the can of chipotles) 
½ cup olive oil 
zest from one lime 
2 tablespoons lime juice
1 tsp ground coriander 
1 tablespoon ground cumin
2 teaspoons salt
black pepper 
Cilantro Peach Salsa Ingredients:

 


4 peaches, diced  
1/4 cup red onion, finely diced 
2 teaspoons jalapeño, minced
1/2 cup cilantro, chopped
1/8 cup lime juice
1/8 teaspoon salt
1 teaspoon sugar


Toss all the marinade ingredients in a ziplock bag and marinate over night.

To make the Cilantro Peach Salsa. Very gently, rub the peaches with a towel to remove fuzz. Dice and place in a bowl. Half and seed the jalapeño, and mince as small as possible, add as much as you want to the peaches. Add the rest of the ingredients, and gently fold them together.


Put the fish in a foil packet and grill on the BBQ for about 15 minutes or until nice and flakey.



So I had every intention of making my yummy pineapple mango salsa but when I sliced open my pineapple… it was rotten inside!!! Oh the smell was HORRIBLE! I thought about returning it but realized time is money and I would just be wasting both so I scanned my fridge and thought up a new yummy salsa recipe!

Cherry Salsa


2 cups of cherries, pitted and coarsely chopped
1/41 red onion, finely chopped
1/4 cup cilantro, chopped
1 jalapeño, seeded and finely minced
2 tablespoons lime juice
salt and pepper to taste

Add all ingredients to a Tupperware bowl and shake it up. DONE! lol

I also made my awesome Pico De Gallo and my MIL made her awesome Corn and Avocado Salad PLUS Ninja made HIS awesome lemon and garlic shrimp!

Apparently we are all freaking awesome!  You know, I was just saying to my dad tonight that without Google when I was a kid, I remember carrying around a backpack with my dictionary, a grammar handbook and my thesaurus… man where is a synonym when you need it?? Lol


So, that’s a lot of fish hey? Yeah, especially for this girl lol so of course I made Taco Seasoning and made some traditional ground beef tacos too 🙂

Speaking of fish I took SBean to the Pediatrician the other day and we did a blood test and turns out she is iron deficient. I am not sure what to do about that. She won’t eat meat. EVER. We have another appointment tomorrow to talk supplements grrrr. 

So apparently having 11 people over kind of threw me off and I didn’t take any pictures of any final results?!?!?

I texted everybody this morning and asked if anybody had a picture and mySIL sent me the only picture taken and it’s of the beef which was still good but no pictures of the fish sorry folks lol
It was a really good night though and we made by request homemade ice cream sandwiches. In lieu of birthday cake.
 It was a great night of family talking, laughing and having some nice wine…
