No Cream Scalloped Potatoes and Inside Out Chicken Cordon Bleu

I’m not one to talk religion (yes I am) and I definitely will not be talking religion on this blog site (yes I will) buuuutt with all this talk of private school lately I’ve been thinking about some things…
 
So my parents were never overly religious we didn’t go to church and we didn’t have scripture on our walls.  I actually remember when my cousin got baptized and they asked us to bow our heads  in prayer I had to elbow my Mom to wake her back up because her snores were so loud lol.
 
My parents were always big on us learning for ourselves though and they never stopped us from learning about religion. In fact, my Mom bought me a children’s Jehovah Bible when I was a kid with beautiful pictures. It was wonderful for telling all of the parables and stories. On Wednesday nights we went to a Mennonite Bible study.  On Sundays I volunteered at the Baptist Church to work with the kids in the playroom. My next door neighbor was Greek Orthodox and every once a while I even went to evening study with her. My Winnipeg Besty was Anglican and went through the whole gauntlet getting confirmed and everything 🙂 so it was no surprise in University when I opted to spend quite a bit of time in Catholicism classes. I even served the Archbishop from Toronto and ended up sitting down with him after my shift and having a frank discussion about the Catholic Church lol.
 
Ninja went to church on Sundays and he grew up going to Sunday school. However he is not down with any of it lol
 
I remember one time when HBear and I were listening to my IPod in the car and Ninja happened to be there… HBear was about 3 and she was singing along I’m H-A-P-P-Y I’m H-A-P-P-Y I know I am I’m sure I am I’m H-A-P-P-Y.
 
On the next verse she started singing I’m S-A-V-E-D I’m S-A-V-E-D and I turned around and yelled “No! No you’re not HoneyBear!” Just as Ninja swiveled around and yelled “You’re WHAT? What the hell is she singing?!?!? Lol it was hilarious!
 
Ninja doesn’t have a problem with HBear learning about Bible stories, in fact I have since got her the same children’s Jehovah Bible that I read as a child with the beautiful pictures and all. She has been very interested in reading it and asks a lot of questions to which we went to the library and took out a book about evolution. 🙂 We believe in giving both sides and allowing her to make her own decisions. Also we don’t call it religion. We say Creationism and Evolution. All I really need her to get out of the stories is to help your neighbor, love one another, treat people the way you want to be treated… the golden rule, respect. I think that is so important and the stories help a child to learn those things. 
 
So, on that note why are most of the private schools religious schools? It would appear the only way to get an education in this province is to go to private school… Christy Clark is making it that way. OMG did I just get political in a religious rant? I am so sorry!!!!
 
Okay so I will stop now but it really drives me crazy that you have to say prayers and have a completely different science class than the majority of people in the world if you want to have a private education. I don’t think that it’s right and I think that that needs to change… now I’m done!

I have a problem the scalloped potatoes 🙁 I love them but the heavy cream and all the cheese and butter are just so not good for my Badonkadonk 🙂 
 
So when I found this recipe for scalloped potatoes using chicken stock I was all over it and it tasted even better than I was hoping 🙂 I will be making this a lot! I made this dinner with my Mom’s Mandarin Salad, Yummers!

 

 

No Cream Scalloped Potatoes
Adapted from Bacon, Butter, Cheese and Garlic

3 russet potatoes 
1 onion
Salt & pepper
1/2 cup shredded Parmesan cheese
4 stalks of rosemary
1 1/2 cup chicken stock
tablespoons margarine

Preheat the oven to 350.  


Slice the potatoes and the onion very thin.


In a Pam’ed dish, place a layer of the potatoes,



and spread around some of the onion slices.


Season with pepper. Cheese is salty so don’t season with salt. Sprinkle in a little Parmesan cheese and some rosemary sprigs. 


Continue layering the potatoes and onion with the cheese, rosemary, and pepper.  Season with a bit of salt at the end 🙂

Pour the stock all over the potatoes.  Slice the butter into pats and scatter them over the top.  


Sprinkle a generous amount of Parmesan cheese all over the top.  

Bake the potatoes for an hour to an hour and fifteen minutes or until the potatoes are fork tender.

 

 

 

I have to say I suck at stuffing chicken. I really don’t like touching raw chicken, all of that squishiness and yuckiness!! I could never be on Masterchef LOL, but I love chicken Cordon Bleu and I haven’t had it in years. Mostly because Ninja had it once and had a bad experience and has always told me how much he dislikes it 🙁 so I am trying to make chicken Cordon Bleu but with a little twist :). After he ate it he was all like, “that was delicious, you can make that anytime you want!” This is a definite keeper and so very easy!

Grilled Chicken Cordon Bleu

Adapted from Slice of Southern

 

3 boneless, skinless chicken breasts
3 slices of thinly sliced deli ham
3 slices of Mozza 
Dijon mustard
salt and black pepper
 

For the vinaigrette:

 

2 tablespoons white wine vinegar
tablespoon  Dijon mustard
tablespoon  honey
tablespoons  olive oil
tablespoon thyme, minced 
salt and pepper
 

Preheat the grill to medium-high heat.

Brush each breast with Dijon mustard, and sprinkle with salt and pepper.



Grill chicken 6-9 minutes per side, with the lid down, or until cooked through.

Layer a slice of ham with a slice of cheese.  Of course we all know the recipe usually calls for Swiss cheese but in the words of Peter Fassbender “I’m not a big fan of arbitration Swiss cheese” so we used fresh Mozza 🙂 Place them on top of the chicken until it gets all melty.

Meanwhile, whisk together the white wine vinegar, Dijon, honey, olive oil, and thyme.  Season with salt and pepper.


To serve, drizzle vinaigrette over chicken.

Finally I want to give a shout out to my Wpg Besty’s brother Dan who would have been 37 on September 5th and my nephew Aaron who would have been 11 today. Cancer sucks! We miss you both very much. I hope you are partying where ever you are… L-O-V-E.
