Chicken Caesar Lasagna Rolls and Dulce De Leche Apple Treats

 
Today was Halloween Prep day 🙂
 
Tomorrow SBean has Music class, HBear has Broadway class and then her Sparks Halloween party… so we needed to get some things done today!
 
SBean and I got the pumpkins cleaned and ready for some carving 🙂 I was reading my post from last year and remembered that SBean did NOT help with this task a year ago LOL This year I was super excited to let her feel everything and taste and smell and PLAY!

 

 

 

That’s as far as it went lol. She said it was “stinky” and “all done pumkin all done.” LOL

We also got HBear’s treat ready for her class on Friday. We received a note yesterday saying no Halloween treats.

I talked to the teacher and was all like “What’s up with that?”

That’s what Halloween is all about!

So she said we could bring something if we all ready bought stuff…

I was in a difficult position. Should we scrap our treat plan or should I be THAT Mom that brings a treat anyways?

That’s almost like buying a Xmas gift for someone after you agreed to NOT buy each other a gift!

Whatever! We are doing it anyways!

My BCBesty has a HUGE apple tree and gave me a ton of apples this fall. We are using some of those and giving everyone a “caramel apple kit”.

Dulche De Leche Apple Kits

2 cans Dulche De Leche 
20 Apples
20 bags with twist ties
20 tags
20 dixie cups with lids

Fill each dixie cup with about 2 tablespoons of dulche de leche.

I let SBean be the Halloween treat tester… OMG she almost choked trying to get all the apple and caramel into her mouth as fast as she could!!! LOL

When we got to school to pick up HBear, my MBesty had a present for the girls 🙂

 

SBean repeatedly yells “Mine! I a Princess!!!” to everyone for no reason now… Awesome! LOL

When HBear got home from school she filled the bags with 1 cup of caramel and 1 apple. Then we tied them up and put on the signed tag.

 

 

For dinner I am trying something new. This is perfect if you have leftover chicken in the fridge 🙂 Of course I used my homemade Caesar Dressing… because it’s the best! LOL This was yummy but rich. I served if with a light Kale salad.

Chicken Caesar Lasagna Rolls
Adapted from Mother Thyme
Sauce
3 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups milk
Salt to taste
Lasagna Rolls
4 small chicken breast, cooked and shredded
8-10 lasagna noodles, cooked al dente
15 ounce ricotta
1 egg yolk
1 cup shredded mozzarella, divided
1/4 cup grated Parmesan cheese
1/2 teaspoon dried parsley flakes
Salt and pepper to taste
Make your sauce:

Melt butter in a large saucepan over medium heat. 


Stir in flour until blended. 


Gradually whisk in milk and Caesar dressing stirring constantly until sauce becomes thick and creamy. 

Remove from heat and season with salt and pepper and set aside.

Preheat oven to 350.

Place shredded chicken in a medium bowl and toss with Caesar dressing.

 

Spread 1/3 cup of prepared sauce on the bottom of a dish.
In a medium bowl stir together ricotta, egg yolk, 1/2 cup mozzarella, Parmesan, parsley and 1/4 teaspoon garlic powder.

 

Lay lasagna noodles on a large surface and spread each noodle evenly with ricotta mixture.

 

 

Divide chicken evenly between noodles and sprinkle on top of ricotta mixture.

 

Carefully roll lasagna noodles and place seam side down in baking dish.
Pour remaining sauce evenly on top of lasagna rolls. Sprinkle with remaining 1/2 cup mozzarella cheese.

 

Bake for about 20 minutes until warm and bubbly.

We bathed early so that Ninja could take the girls to Grandma and Grandpa’s or as SBean says,

“PomPa’s!!!”

Right now as I type my amazing and self-admitted geek husband and HBear are reading beside me. HBear is allowed to pick from the red pile of books for her home reading. She loves picking non-ficton,

Ninja is in his GLORY talking about his favorite subject. LOL 

Listening to them is hilarious! Ninja is great at explaining each word she doesn’t know. And believe me (I know and never starts a sentence… it’s stream of consciousnesses get over it.) she asks a TON of questions but can really relate each new topic to concepts she just learned a few pages back. 

Crusteans. Exoskeletons. Arthropods. Mollusk and bivalves.

Horrible visions of Bio starting flashing through my head… groan.

But I was in University!!

LOL
