Crockpot Bacon Wrapped Apple Chicken

The other day I succumbed to peer pressure for the first time in many years. No I didn’t Rob Ford and except a pipe or anything that crazy but I did do something that I wasn’t comfortable doing. 
 
So, here in BC you’re expected to turn left on a red light… on a one-way… or something like that. I don’t know anywhere else you can do that. I just don’t do it. The other day I was driving with my MBesty and we are at a red light and she was coaxing me to turn left, “you can do it, come on put your foot on the pedal. It’s LEGAL do it.” 
 
And I did it! I close my eyes and went and turned left on a red. It’s been days now and I’m still feeling uncomfortable about it. When I’m at red lights and people are honking at me to turn left, I just don’t do it. LOL I’ve always been really good at doing what I want to do and I totally succumbed to peer pressure lol
 
Today we were driving again and she tried to get me to honk at an OLD lady!! LOL BAHAHAHA LOL She is hilarious and totally right!!
 
The lady was NOT turning left on the red like she is “supposed” to… apparently that makes others agnsty lol not me. Coming from a big city I quite enjoy the slow pace. I used to swear and yell and have severe road rage. It would take me 2 hours to get the University and on those weekdays when we had dinner across town at my In-Laws OMG at least 1.5 hours to get there for dinner!!!!
 
Yup. I’m in no hurry. Speaking of that, I tried downloading “I’m in a Hurry” by Brooks & Dunn and I can only find the Florida Georgia Line version!?!?!?! What is this world coming to?
 
Today was a day…
 
But I had a thought about HBear tonight. She isn’t like most kids. I am not just saying this because she is my daughter. She has the most inquisitive mind. 
 
After my day of… Bulletin board making with The FunLunch Crew and MBesty, finishing up the monthly newsletter, a PAC budget meeting, and “discussion” on a local political facebook page with elections around the corner…
 
Perhaps HBear is a rule follower and her mind follows rules. Words and numbers are rules.

Remember when I was talking about tomatoes the other day and having an overabundance yeah okay the same goes for apples right now LOL but believe me I am not complaining about either! I have apples here to make dinners, I had apples to make Thanksgiving coleslaw, I have apples to make cakes, and apples to make applesauce.

Ninja was home today (rain day) so I was able to get everything I needed to get done, done… without the Bean! Love her to death but sometimes when you need to get stuff done it is nice to have an awesome Daddy to have your back! He did all the laundry (folded and put away), vacuumed, took SBean for a rainy day nature walk on the KVR, made lunch (even for me after I got home from grocery shopping), and he even made ribs, stir fried veggies and this awesome potato gratin for diner that I will definitely show you sometime !

That’s why I call him Ninja 🙂

Crockpot Bacon Wrapped Apple Chicken

Adapted from Chef in Training
4 chicken breasts
1 cup BBQ sauce, I used Chicken & Rib Sauce
¼ cup brown sugar
2 tablespoons lemon juice
5 small apples, peeled and chopped
8 slices bacon

 

 

In a small bowl, combine BBQ sauce, brown sugar, and lemon juice.

 

Wrap each chicken breast with two slices of bacon and place in a greased slow cooker.

 

Toss the apples on top.

 

Pour BBQ mixture over chicken and apples 

 


and cook on low for 6-8 hours or until chicken is done.
