Thai Sweet Chili Chicken Stir Fry

As we all know, I am a planner.
Every night I lay in bed and think of 3 things that made me smile that day. I find that by closing my eyes and thinking about the whole day and the good parts that stood out, that I have a much better sleep. It helps me go to bed with good thoughts rather than running through the things I have to do the next day. I reflect on the day.
First thing I do in the morning is check my calendar and then my to do list. Before I even get out of bed I prepare myself for the day.
This works for me. There’s nothing that I hate more than not having a game plan. LOL
Last week I was still fighting this stupid head cold, which has now become a full-blown head cold nightmare! All I can hear right now is HBear in my head saying “Mommy said the S word!” In her singsong voice. SBean has been using that word quite a bit lately. 🙁
I used it quite a bit the other day. At 30 Minute Hit. OMFG. For all of you that don’t know, 30 Minute Hit is a women’s kickboxing program. It actually wasn’t that bad. I do yoga daily so I’m not in terrible shape. I know a lot of people think that just doing yoga doesn’t mean you’re in shape  but they are wrong. Some people enjoy a high intensity sweaty workout… I am not one of them. LOL The trainer yelled at me and said “doesn’t this feel good?” And I was like, no. I don’t enjoy punching and kicking. I am a pretty high strung person as it is LOL I need downtime, not physical torture. Plus, I would rather yell & scream at a person than resort to physical violence 🙂 It was a fabulous workout but at the end I literally felt like puking. Thank goodness I am in OK shape and only my calves have been hurting since that fateful day. Every time I get up from being inactive my calves are screaming at me LOL damn roundhouse kicks!

This has nothing to do with working out but I made the best egg salad sandwich for lunch the other day! Yeah, that’s all.

On Friday, Dad went to Mexico for a 2 week vacation! That same day HBear had a Brownie sleepover at the Okanagan Science Centre in Vernon.

While I was looking at the camp gear list I noticed that she needed her camp blanket. Holy shit I had forgotten to sew on all of her badges. That’s right, not just 1 but all of them! LOL Her last Guider Camp was last spring, I thought I had a long time to do it… and now that time is here! After my morning at 30 Minute Hit, I sat there and sewed for the rest of the day! So not only were my calves killing me but my hands were a bloody mess! Man, if there was some ironing to do that would have been the freaking icing on the shit cake.

HBear drove to camp with 1 of her friends and her friend’s Mom. She was staying the night so it saved me the 3 hour drive there and the 3 hour drive back plus the 3 hour drive to pick her up and the 3 hour drive back the next day! Right after school I met them to handover all of her camp equipment and say goodbye. I was a little bit freakish about her going all the way to Vernon for the night.

But, the night before she went SHE was a basketcase. At 10:30 PM she came into my room and asked “Mommy, can we do some yoga? My tummy feels all nervous and excited and it’s just too much of everything. I need to calm down.” Jesus, if I knew what my body needed at that age things would be so different now LOL. With that being said by the time she got home on Saturday afternoon she was an overtired mess on the verge of moving right into Crazytown! She was constantly on the edge lol we went to Grandma and Grandpa’s house for dinner and at some points she was smiling and talkative and then she would start crying and had to lay down. LOL Holy Shnikeys!

I have to say though, recognizing her ebbs and flows helps the situation a ton. Understanding the reason for her insane behaviour allows her to use us to keep her tethered to reality :). She kept it together and maintained her composure for the most part so I’m pretty proud of her. When we got home she crashed hard! In fact, SBean screamed bloody murder because HBear wouldn’t play with her or read to her, you know, because she was snoring LOL

This weekend another one of HBear’s teeth fell out. It was kind of funny because we facetimed with my Dad and he asked “did you lose another tooth?” And then that evening she did LOL. The Tooth Fairy brought her $3.00. Actually, the Tooth Fairy dropped the coins on the hardwood floor which clattered and banged VERY loudly and then was very relieved to see that the sleepovers had made both girls so tired that neither of them woke up!
In the morning she took her coins and divided them up into her Savvy Pig. She chose to put the loonie in the charity slot and the toonie in her investment slot. I love that bank!
Another thing that HBear did this week was start watching the HBO series Saving My Tomorrow. It is about children activists talking about climate change, pollution, oil pipelines and so many other fantastic topics. It is a fabulous documentary series with some pretty impressive people lending their talent like Tina Fey, They Might Be Giants, Pharrell, Susan Sarandon, Willie Nelson and more. After watching the first episode she woke up the next morning with a ton of questions about how she could help save the Earth! Pretty cool 🙂

Now, SBean had a pretty great week too! Ninja took her on a nature walk when the rain finally stopped! She is very interested in the seasons right now and for the first time she is understanding that there is a change in seasons.

She also went with Ninja and took Papa to the airport in Kelowna. Of course, Daddy took her to McDonald’s Playland and let her go on the loonie rides at the mall! Best Daddy ever!
 


After they got back from Kelowna she went to Grandma and Grandpa’s for a sleepover! She was so excited 🙂 In fact when Ninja dropped her off, he went inside to talk a bit about   the Winter Games. After a few minutes she started the stomp lol The stomp consists of balled up fists, a pouty face, a little whine/grunt, and a “cute” little foot stomp. She looked down at the floor and did it repeatedly so she was obviously perturbed about something lol. Ninja asked “hey you, what’s wrong?” She did the stomp and pointed at the door, “you leave now!” LOL She is bossy. In fact I am beginning to worry about her social skills?!?!?!

The next morning, Ninja and I picked her up and we went for brunch at this new bistro called The Random Dish. Yum! SBean ordered her favourite, oatmeal or as she calls it eatmeal.

With both girls out for the night Ninja and I took the opportunity to have a Date Night! Date night apparently calls for awesome “leather” pants LOL

We went to Bogners. It is 1 of my favourite restaurants in  town and Dad bought me a Groupon for Christmas 🙂 When we got there our table was set up with a great bottle of wine and a thank you card. My Dad had come by earlier and picked out a bottle of wine to thank Ninja for driving him to Kelowna. Isn’t that sweet? Awe 🙂 We started with pulled flatbread with roasted tomatoes and basil. It came with housemade chorizo, hummus, feta/sundried tomato dip and pesto. It was very good.

Next course was Caesar Salad. It was ok. I prefer my dressing though. 🙂

The main course was… disappointing. I hate saying that because it was good but I was expecting more. It was mashed potatoes, beets, carrots and braised beef in a red wine sauce. I could have made that. I guess because we don’t go out often, when we do I want a special meal. A meal I don’t make on a… Tuesday let’s say. I know it is a set menu but it still cost a lot and I at least expected a decent cut of beef. Whatever, it was a night out so really I’m not complaining 🙂

Dessert was  shortbread with raspberry mousse. Ummmm it was a nice night out 🙂

We were going to go out after dinner but we thought, why? We have the house to ourselves! We went home, had a hottub and we were in bed catching up on shows by 8:00pm LOL WOW are we boring!

Last night we had friends over for dinner! She is gluten free so after all this time I finally had to research and find out what gluten free means :). Next week I’ll let you know how it went!
The other night I made this chicken dish. It was a bit spicy for our tastes but it was super good. The kids drank A LOT of milk that dinner lol I really liked the mandarin oranges in this recipe. The sweetness  of the oranges and the Thai sweet chili sauce was a great combination! If you like sweet heat this is the perfect dish for you 🙂
Thai Sweet Chili Chicken Stir Fry
Adapted from Tina’s Chic Corner
2 tablespoons sesame oil, divided
4 chicken breasts, sliced
1 red bell pepper, sliced thin
1/2 tablespoon fresh ginger, grated
1 cup Thai sweet chili sauce
1 tablespoon soy sauce
1/8 teaspoon ground cloves
1/4 teaspoon cinnamon
1/4 teaspoon pepper
1 can (10 oz) mandarin sliced oranges, drained
2 green onions, thinly sliced
sesame seeds
In a medium skillet, over medium heat, heat 1 tablespoon of the sesame oil.  Add the sliced chicken and cook it.

When chicken is done, remove it and set aside.

 

Heat the remaining 1 tablespoon of the sesame oil then add the red bell pepper and cook it until it has softened and is slightly browned.

 

Add the chicken back into the skillet, along with the ginger, sweet chili sauce, soy sauce, cloves, cinnamon, and pepper.  Stir all of the ingredients together and let it simmer for a few minutes.
Add in the mandarin sliced oranges.

Top with green onions and a sprinkling of sesame seeds.
