I have something I have been working on that I can’t wait to share with you!

A few weeks ago my SparksBesty challenged me to do a month long blog of menuing and budgeting so that she, or others could follow along.

The Challenge: 
Grocery shopping for a family of 5 
(3 adults & 2 kids) 
for $135/week


I have taken the challenge very seriously and next week I will be starting a special 4 week series about budgeting and menu planning! I will be posting The Challenge every Sunday and it will include tips, a shopping list and a week long menu 🙂

My normal journal/blog will come out on Tuesdays and will feature crafts and baking instead of dinner ideas.

The other day on the YummyMummyClub Facebook page they asked this question,

 
If you could travel back in time and meet your 10-year-old self and were only allowed to speak one sentence to her/him, what would it be?
 
There were so many amazing answers, some funny, some hilarious, some meaningful and ALL true! I wanted to share them with you now…
  • A pity date isn’t worth the aggravation!!!
  • Someday that stocky, not perfect body of yours will carry you far around the world, bear two beautiful, healthy babies and be known for great hugs – appreciate and love your strength and your softness.
  • You will be more funny than beautiful, but the people who think you’re funny will see your beauty faster so let your weird out, already.

  • Don’t worry about what others think of you . You are amazing just the way you are.
  • Remember to have fun and enjoy your life before settling down so you don’t have any regrets later.
  • Ask for exactly what you want and don’t settle for less.
  • You ARE enough.

  • Stay away from Shawn!
  • Being competitive is a good thing…in high school don’t give that up to make friends, you will have an abundance of friends in due time.
  • Kick and scream.
  • Get life insurance!
  • Loose the weight now it will change your life.
  • Embrace your moustache and unibrow and oh yes cool rainbow coloured braces.
  • Just wait until you see what you accomplish; don’t worry so much about today.
  • Don’t give up even if the road seems rough, you’ll pass school and get the job you want.
  • Stop giving a sh!t about what other people think or say about you.
  • You are not alone.
  • Run. Best feeling ever!
  • You don’t have to be perfect and please everyone. 
  • It never goes aways but sometimes it gets better.

And mine…
 
Be nice to your mom. 
 
That’s it. I wouldn’t of told myself you only have 24 years left with her. I know me, I would’ve spent half of that time mourning her already.
 
Now that I think about it, maybe I would actually just say be nice. Be nice to your Mom, be nice to your Dad, be nice to your Sister and Brother. Be nice to that guy… He becomes your Ninja. 🙂 
 
Just be nice.
 

Sometimes I wasn’t. Sometimes I’m not. 

Another thing I would tell me is… You are going to have 2 little girls. They are going to be your ENTIRE world! You are going to learn something from them every day. They are going to test you, make you cry, make you double over in laughter, make you tired and make you feel young again…  sometimes, all at the same time!!!

Ahhh I love those Freak-A-Beans! I am so very lucky 🙂
 
A while back we had this delicious salmon dish. At least I think it was delicious, everyone said it was! Today was a BEAUTIFUL sunny spring day! I had the windows open and I could hear the birds chirping and it just feels like a salmon day. So here is a super yummy, fresh, SPRING salmon dish for you! 
 
Honey Cilantro Baked Salmon
Adapted from Julia’s Album
 
1 lb salmon
1 tablespoon oil
2 tablespoons honey
1 tablespoon lime juice
2 tablespoons cilantro, chopped
3 garlic cloves, pressed
 
Preheat oven to 400.
 
Pat dry salmon. Brush with oil on all sides. Season with salt and pepper. 
 
Place the salmon on a large piece of foil. 
Fold foil sides and ends up. Place the salmon in foil on a baking sheet.
 
In a small bowl, combine honey, lime juice, cilantro, and garlic. Mix to combine.

 

Spread this mixture over the salmon.

 

Leave the salmon open (with foil sides up) and bake it for 15-20 minutes.
Remove salmon from foil, scoop up the sauce and pour it on top.
