Salisbury Steak Meatballs with Gravy and SBean is 4!

How is it possible that my baby girl is 4? ðŸ˜¢

I don’t know how it happened but when I look at her now she actually looks older. It’s like she matured into a little lady overnight.

And although I am bursting with pride I’m also wrecked. She will never be my baby again… she is an actual little kid or as she would say, she is now a BIG kid!


I have been so freaking emotional this week. The Girl’s birthdays are doing this to me I just know it. Why? Why do they have to grow up? Why can’t they stay my babies forever? I know this is not realistic but it would definitely be at the top of my list of Christmas miracles that’s for sure. Speaking of… This week I was inundated with emails, questions, and texts about hot lunch and other fundraisers. 

I was feeling very overwhelmed. 

On bowling night I finally had the Girls down and I was in the middle of a frantic reply to a text when I heard a song playing in the living room. I walked out there and it felt like there was a weight on my chest. I couldn’t breathe. My tears were silent and I swear my breath was held for a good minute… Or at least that’s the way it felt. The song was Get Me Through December by Natalie McMaster. I walked around the living room tracing the carpet like a robot listening to the words, silently trying to take a breath as the tears streamed. Just as the song ended I looked up through blurry, teary eyes and the light of our Scentsy warmer was the only thing that I could see in the haze… the soft yellow glow of the butterfly warmer. All of a sudden everything was OK. I knew Mom was there and not only was I going to make it through December, I was going to make it through both birthdays as well. ðŸ’›

SBean has so many little personality quirks that make her my little Bean. She is SO full of life. When she is happy… she is very very happy when she isn’t… run! The 1 word that comes to mind when I think of SBean is… emotion. LOL

She has many favourites:

TV: Paw Patrol, Masha and the Bear, Hi 5
Books: Pete the Cat, Piggy and Gerald, Fly Guy, Dr Seuss
Toys: Lego, Play Doh, Scissors, Board Games 
Snacks: Goldfish, Fruit, Gummies, Nutri Grain Bars, popcorn
Food: Kube (sausage), Caesar Salad, Shrimp, Coleslaw, PBJ’s
Friends: Nik, Graydon, Corbin, Abigail, Charlotte, and Tania
Activities: School, Swimming, Dancing, Singing, Soccer

Loves: Dressup, pretty things, movies, hot tub, jewelry and accessories

She still naps 3 afternoons a week but never wants to. In the morning, she wakes up right away. She bounces out of bed and is ready to go! This happens between 5:45am-7am!! She goes to bed at 7pm but likes Big Sis to read her some books before she goes to sleep. Mommy or Daddy read 3 books and sing 3 songs before nap/bed… every day… for 4 years… actually for 8 but these are the exact things I will miss when they are no longer there ðŸ˜ž . 

She also says the funniest things… all the time!

She asked me the other day why her birthday always comes first? She said, “next year can HBear have her birthday first? She would be very sad if I am always first, she likes to be first.” LOL

Or,


She came up to me and said, “Mommy I have good news and I have bad news.” I said give me the good news first and she said, “I have to give you the bad news first. The bad news is I ran into a plastic bug so I ran away from it! The good news is, it didn’t chase me.” 😳


Or even,

Over the weekend Ninja took the Girl’s to welcome Santa to the mall. The jolly Big Guy comes in and greets all the kids to officially start the pictures with Santa Season. He came up to the Girls and SBean was very shy. She later told Ninja, “I’m not shy about the Elves but I am with Santa because I might have been naughty.” ðŸ˜‚ Might????

And then there’s this,

We have been watching holiday movies on YTV lately or one of those kids networks. One of the big big kid networks that have… commercials!  ðŸ˜³ I guess she saw an advertisement for Pie Face and for Shopkins. ðŸ‘¹ Grrrrrr

I am so not going down the Shopkins path. My MIL was hanging out with SBean during hot lunch this week and she asked, “what did you ask for for your birthday?”

SBean replied, “Shopkins but my Mommy says I can’t have any because they’re just pieces of plastic that are a waste of money.” ðŸ˜‚

I put all SBean’s gifts in a pile on the morning of her birthday. I counted and thought hmmm I think 1 of HBear’s got into the Bean pile because there was 1 more than I thought there should be.

Later, SBean picked a gift and began opening it and looked up and said, “uh-oh Mommy I’m sorry.” She tore it open and it was a huge freaking box of SHOPKINS! I started looking around and saw Ninja sheepishly lower his gaze! WTF? He was like,”What? You bought all the presents I wanted to buy 1 too!”

SBean was VERY helpful getting her party ready. I printed the invitations and she signed them all.

 

We also made the goody bags. I pretty much did the same bags as I did for HBear when she had her bowling party in preschool. We made Pet Clouds!

We added a medal for each child… because everyone’s a winner at our bowling party ðŸ˜‰.

SBean went through her Halloween candy and picked all her favourites to give to her friends. Whatever ðŸ˜œ, we have a ton and I just can’t justify going out and spending more money on candy when we have a shit load on top of the fridge.

She stickered the bags and we added a little game we bought and TADA! Goody bags!

This next week is going to be cold. We might even get snow! I saw it up in the mountain tops and I can see it coming this way like a wall of rain over the lake. I thought I would share a recipe I made a few weeks ago, it is the epitome of comfort food! I hate meatballs. That is a strong word and I still said it… that’s how much I dislike meatballs. However, lately I have been changing my mind about those little balls made up of meat.

This is a delicious meal that will keep you warm on those chilly winter nights.

Salisbury Steak Meatballs with Gravy 
Adapted from Jo Cooks


1½ lb ground beef
½ cup Panko
1 egg
¼ cup ketchup
¼ cup coarse grain mustard
1 tablespoon Worcestershire sauce
1 teaspoon seasoning salt
½ teaspoon pepper
1 teaspoon onion powder
2 tablespoon oil 
2 tablespoon butter
1 large onion, chopped
1 tablespoon Worcestershire sauce (gravy)
1 cup beef broth
2 tablespoon cornstarch
½ teaspoon seasoning salt
1 tablespoon ketchup
parsley for garnish

Add first 9 ingredients to a large bowl and mix well, use your hands. Shape into 1 inch meatballs. 


Add the oil to a large skillet and heat over medium high heat. Add meatballs and cook, you might have to fry them in a couple batches. Cook the meatballs on all sides, add more oil if needed. Remove meatballs from skillet and set aside.



To the same skillet add butter and melt. Add onion and cook until onion is soft and translucent. 


In a bowl add the cornstarch and beef broth and whisk. Add broth and remaining gravy ingredients to skillet, and cook for about 3 to 5 minutes, sauce should thicken. Thin with beef broth if needed and taste for seasoning.

When the gravy is done add the meatballs back to the skillet and toss them around so they’re covered in the gravy. 


Garnish with parsley.

I totally forgot to add the parsley so Ninja took a snap of his lol.

This week was full of lots of smiles! We started it off by going to the Toy Drive breakfast at the Lakeshore. Grandma and Grandpa met us there and although the food totally sucked! The energy and the spirit filled the big ballroom.

 
HBear had Spirit Day at school and wore her favourite team jersey… well in her case it is the only jersey Daddy will buy for her ðŸ˜³.

To start HBear’s swim practice they do bobs and then pushups. I watch from upstairs as I do 2 minute jogs then 1 minute march on the spot. Steps!!! 

HBear helped SBean fill her goody bags. I love it when they do/play nicely together.

SBean got to decorate a Birthday Crown at Preschool. She wore it all weekend lol!

Gilmore Girls. Oh Gilmore Girls. So much to say, so little time. 

On Friday night my SBesty came over to watch the 1st episode of the Revival. I had a Sparkling Rose on ice and Warm Brie with Hellish Relish for a snack. We ended up chatting, eating and drinking for a while. We ended up drinking a lot of wine plus the sparkling — Needless to say I may have taken my nostalgia too far by thinking I could “party” like it was still actually the 90’s ðŸ˜‚.

The next day was bad. Ninja had no sympathy lol but still took great care of me. He took the Girls to soccer and then to the Mall to greet Santa and then to DQ for lunch.

SBean was up super early on her birthday. Ninja walked into her bedroom and HBear was still sleeping but she was just in the middle of the room jumping up and down. ðŸ˜‚ Just bouncing.

Ninja took SBean to his parents and to get the balloons.

 
She picked a Cupcake themed bowling party… with Shopkins hats ðŸ‘¹.  She asked for vanilla cupcakes with sprinkles inside and pink frosting with more sprinkles. Her friends were so well behaved for being 4-5. They all did amazingly well. I know there were bumpers but SBean scored a 113! 

 

 

After the party we all came home for presents and dinner. Uncle Smelly and Auntie FaceTimed too ðŸ’› Both the Aunties Face Timed first thing in the morning. Damn do I love that the whole family can see each other that easily.

 

 

For dinner SBean asked for Kube (sausage), macaroni & cheese and coleslaw… with raisins! I would NOT feed everyone KD so I made homemade mac & cheese. YUM! The Girl’s hated it. She picked a pink ice cream cake for her real birthday.
