Funny Things Kids Say, Savoury Waffles and Healthy Chocolate Waffles

You know that book… On the Night You Were Born? I love that book. HBear loves listening to her story. SBean can’t because she was a planned C-section which makes for a pretty boring story 😳. SBean’s story is how she was named. You see, we liked Harper, Lydia, and Ella. In fact while she was in my belly I started calling her Harper, I so was sure 🙄  However, right after she was born we began saying those names to her but none of them seemed to fit. Sydney was always on our list but we really didn’t pay much mind, then Ninja just said, Sydney and she rolled her head back and her eyes popped open as if to say, “yes! I am Sydney.”

HBear just did a project in school last week all about her name. How did she get her name? Her name was going to be Noa however, after 30 hours of labour LOL Ninja said, “so what is her name?” and I said, “Rowyn.” He didn’t have the heart to argue with me LOL. 


What does she like about her name? She likes it because it is unique but not too unique that people don’t know how to say it 😂. 

They also asked her what her name would be if she got to choose her Aboriginal name? She chose Snowy Octopus! Snowy because it snowed on the day she was born, an Octopus because it has 8 tentacles and she is 8, she loves to swim, and an octopus doesn’t have any bones which makes them very flexible and she is very flexible too. I just love how her mind works 💛!

Their school has been taking a lot of Aboriginal art and culture. A while back they used plasticine and made beautiful totem poles. They learned all about the symbolism and then they made a family totem pole. HBear brought hers home and explained each animal to me and why she chose it. I was blown away at how insightful she is.


On the very top was me, the Thunderbird. She described me as powerful, the provider, authority.

Next was Ninja the Salmon. He is proud, confident and wise. He tends to swims upstream against the current. 

Papa was a Beaver because he works hard to make a home for family. He is a builder and he is determined.


Next was Grandpa and he is a wolf. His traits are loyalty, perseverance, and success.

While Grandma is an eagle. The words used to describe her were, Intelligent, sacrifice, healer.

My Mom or her Nana is the owl. The messenger. Her words are wise, omen, and freedom.

Of course she described herself as a bear and her sentiment is, those who appreciate the sweetness of life and wisdom.

While she described SBean as the raven. A courageous trickster that caws loudly in your life 😂.


Speaking of HBear, she has this terrible habit of licking around her chapped lips and that’s making her mouth chapped. If you ask me it looks like a babies asshole… all red and chapped with a tinge of diaper rash 😂. I keep on telling her that we need to put diaper cream on her mouth but apparently that won’t even stop her! She asked me what she could do and I said what she needed to do was stop licking and if her mouth was wet to just grab a tissue and dab. She thought that was a great idea and began to “dab” as in that ridiculous dance trend that all the kids are doing. She is hilarious.

She was being a little bit difficult the other day so I began to sing Bad to the Bone to her. B-B-B bad 🎶. She listened to me sing it once and then turned around and said, “Rowyn is the best B-B-B-Best.” 😂 


She must get it from PSBesty because on our way to Brownies the other night she told me that she had to find a username for her avatar. Her real name is Kaylee so of course she said she picked Kaylee Jenner 😂. That’s just freaking awesome.


I then had to explain to them who the Jenners were, and then the Kardashians, and then it went sideways and we talked about Bruce Jenner now known as Caitlyn Jenner. I am just amazed that transgender is so normal to them. They were like, “ok cool.” I love that! The biggest question they had was if Caitlyn was spelled with a K too? 😂

SBean has had her funny moments this week too. Her BFBesty (He was MusicBesty but I have a feeling BF as in best friend/boy friend will be a better name for him as they get older 😉) turned 5!

We were sitting at the dinner table and I asked SBean, “what would you like to get BFBesty for his birthday?” She answered very quickly and said, “I was thinking about it and I would like to take him out for dinner.” 😳

Ninja and I looked at each other and he said, “like to McDonald’s?” And she looked at him like he was completely stupid and said, “no. I was thinking the Pasta Factory.” 😳

Ninja and I looked at each other again and this time I said, “like you want me to drop you guys off at a restaurant?” This time she looked at me like I was stupid and said, “no. Who would feed me? You can stay Mommy.” 😳

We settled on getting him a pizza food truck Lego set 😂.

On Sunday he had his birthday party at the bowling alley. She had a fabulous time. I was worried a little bit about her being the only girl but she fit right in!

A while back I made waffles. I have been playing with my new waffle maker and experimenting. Ninja and Dad always feel like they are still hungry after a waffle dinner. I always feel like a big fluffy waffle with strawberries and whipped cream is more of a dessert then a dinner. So, I tried making savoury waffles with a garlic compound butter topped with a fried egg. They were super delicious! I knew the girls would have none of that LOL so I made them healthy chocolate waffles! These waffles are seriously like a chocolate cake! The girls loved them! Unfortunately I didn’t take very good pictures. Please don’t let my shoddy photography skills keep you from trying either of these two delicious recipes!


Savoury Pancetta and Cheese Waffles

Adapted from The Little Ferraro Kitchen

2 eggs, lightly beaten
2 cups flour
1 3/4 cup milk
1/2 cup oil
1 tablespoons baking powder
1/4 teaspoon salt
6 ounces pancetta, cooked and chopped
3/4 cup shredded cheese (I used cheddar)
3 green onions, chopped

Compound Butter
1 stick of butter, softened
1 tablespoon lemon zest
4 basil leaves, roughly chopped
1 garlic clove, grated

3 green onions, chopped
1 fried egg per serving

Pre-heat waffle iron while you make waffle batter.To make compound butter, add together the softened butter, lemon zest and grated garlic and stir together. Then wrap butter in plastic wrap and place back in refrigerator to firm up.


Cook chopped pancetta on medium heat in a skillet until fully cooked. Remove from skillet and place on paper-towel lined plate. Set aside.



In a large bowl, add the flour, baking powder and salt and whisk to combine. 
Then add the milk, oil and eggs and whisk everything together until a thick but pourable batter forms. 

Then add pancetta, cheese and green onions and stir everything together.


Pour batter into iron. Cook waffle until iron says done or until golden brown.


Top with slices of compound butter and a fried egg.

Healthy Chocolate Waffles
Adapted from Oh My Creative


1 cup whole wheat flour
1 cup all purpose flour
1/4 cup cocoa powder
1/4 cup sugar
2 teaspoon baking powder
teaspoon baking soda
1/2 
teaspoon salt
4 tablespoons melted butter
1 1/4 cups milk
1 cup Greek yogurt
2 eggs, separated
2 tablespoons apple cider vinegar

In a large bowl, combine flours, cocoa powder, sugar, baking powder, baking soda and salt. Whisk together and set aside.


In a large glass measuring cup, combine melted butter, milk, Greek yogurt, egg yokes and apple cider vinegar.
Whisk together and set aside.


In a medium bowl, beat egg whites until stiff peaks form.


Add milk mixture to flour mixture and whisk together.

Carefully fold in egg whites until combined.


Cook on a hot waffle iron according to manufactures directions.


 

This week the green started peeking through and I can see that spring is finally coming ☔️!! With all of the rain we have been getting all the buds are beginning to appear! When the clouds part and the sun finally shines, it is going to be gorgeous!


This week SBean was sick. She is so much like Ninja when she is sick… cuddly, whiny, and needy 😜. She was home from school on Tuesday and Wednesday but apparently it was just a cold so we toughed it out.

On Friday we had the Kindergarten Vaccination Fair. It is a day where they get all of the kids going into kindergarten next year to come in and get their booster vaccinations. It is a well oiled machine LOL. 
First you get the needle. SBean did fabulous! No tears!

Next you take your gold coin into the waiting room and you fish for a prize and get your face painted. Then you can check out the different displays. They do this so people wait the mandatory 15 minutes to make sure there was no reaction.

 

Of course the next day we noticed she in fact did have a reaction. I called the public health nurse and apparently everything was normal. Today it looks fine but on Saturday I was a little bit worried…

After SBean’s vaccination I dropped her off at my in-laws. They helped me out and took her to gymnastics while I went to a Hot Lunch from HELL. Our vendor, Subway, got the dates wrong and didn’t show up with our food until well past lunch hour! We had kids very upset and it was a severe gong show. When he finally did arrive with our food they had mislabelled the different subs and we were short 50 cookies. Thank goodness I remembered I had a case of Girl Guide cookies in the back of my van 😜. Each child received one chocolate and one vanilla Girl Guide cookie in a brown paper bag 😂.

Unfortunately a few more of those glasses happened and that evening we were fortunate enough to be asked to guest on a very popular podcast, The Listening Party Podcast. I can’t quite remember everything that I said but I’m going to go out on a limb and say it wasn’t my best work 😬. I will add the link to the podcast next week after it comes out… Maybe 🤣!
On Saturday I woke up with a gigantic hangover. I showered up and got ready for wine tasting with my PSBesty. We had to drop off letters at all the wineries asking for donations for our upcoming preschool fundraiser, an online auction. We figured while we worked we should take a little time to play 😉. It was a lot of fun and I found that while nursing a red wine hangover it is best to drink white wine, anything from a distillery, and fruit wine!


On Saturday Ninja and I had Date night! We went to the new Casino!

It opened up last Wednesday and it has a brand-new restaurant called Match Public House.  Ninja and I were servers growing up. No matter what else we are in this world I would always add Server to the list that defines me. I am a very good server. Ninja is also a very very capable server/bartender. Between the two of us we have opened many restaurants/stores in Winnipeg. So, we know all the things that could happen on a very busy opening weekend 😂.

Waiting in line because our reservation got lost was just the tip of the shit show iceberg that was our dinner at the new restaurant in the new casino. The food was good but I really wanted the pulled bacon macaroni and cheese however, they were apparently sold out of macaroni. I looked at my watch and realized it was 5 PM 😳. We ordered a few appies and we each had a steak sandwich. It was OK. We will give it another chance when they are a bit more settled as I think it will be a much better experience then.

After we played some slots we walked over to the SOEC for our much anticipated concert date night! We were lucky enough to see The Flatliners, the popular but mediocre Canadian band The Trews and the headliners, Weezer! We had already seen Weezer many years ago at Lollapalooza in Chicago but I am happy that we had the chance to see them again. It was such a fun night! They played all of their hits and the whole crowd was singing! It was like a giant 1994 sing-along 🤣. It was great!  

On Sunday while I was at BFBesty’s birthday party with SBean, Ninja took HBear to the driving range! They had a fabulous time and she can’t wait to go back! She even watched the Masters with me later on that day 😍! I was pretty happy with Sergio’s win! I have been watching him for 19 years and although he can be a bit whiny he can also be exciting, exuberant and a fantastic golfer. I loved his energy when he got into the game way back when and I was happy to see him win The Masters for his years of effort. Woot Woot!

Speaking of winning… guess who won the Step challenge this week?

Not me! My Little Sis stepped up and kicked my ass! I came in a close second but she did like 70 000 steps in our Workweek Hustle! Great job!!


You know what I DID win though… Our annual Castle/Maier Hockey pool! That’s right 1st baby! $325 in my pocket!


Also, the 4th Line Podcast puts on a”pool” called HiSticking. Every day they pick the Pavel Bure game (the must see game of the night) and people have to guess who scores the winning goal from each team. It has become a Twitter conversation about who would win… him or I and it turns out… it was ME! To the victor goes the spoils and we made a bet that whoever lost had to plan the next date night… so where are we going Ninja 😜
