June & Crock Pot Pork Lo Mein

Ah, summer, what power you have to make us suffer and like it.

Russel Baker

I know I say it every year but seriously…

Fuck June!

I honestly don’t know what is worse September or June?

June is so ridiculously completely booked with end-of-the-year meetings, dance recitals, year end bookkeeping, prepping for summer, registering for summer camps, end-of-the-year carnival, prep for family visits, and still doing super duper fun family things in our “spare” time 😳😂.

Everybody is at the end of their patience, including the kids. Yesterday we were getting ready for school and I looked at the clock… We were going to be late… Again! I hate being late! We have not been late in 4 years and now we have been late 3 times in a week and a half 😡. I heard HBear talking under her breath to SBean and then I heard SBean yell, “AGHHHHHH!!!!” I went running to the bedroom and began to open the door and heard her scream, “no! Mommy! Don’t come in here!”

I opened the door and she was quickly trying to put back everything she had just flung out of HBear’s sock and underwear drawer… Which was everything 🤣😬.

When I got mad at her she got mad at me and opened HER own sock and underwear drawer and threw everything out of that one too! There’s no picture of that one because by that point I was seriously losing my shit!

Everybody is ready for some sun and fun.

This year I said the Girls were not going to have a scheduled summer… 😂😂😂😂.

However, some of the Girls favourite things to do are only offered during the summer months. Every time I asked HBear, would you rather hang out with me and go to the beach or do such and such camp? She always answered with camp. My feelings are a little that hurt LOL but I just want to give them as many opportunities as possible and she has so much fun experiencing new things! So, this is what our summer is going to look like,

We are very fortunate that my Dad and Ninja’s parents purchase these camps for Christmas, birthdays, and Easter! We are all about experiences over toys 😊.

If you want to catch up on the latest episode of How Was Your Week, Honey? You can catch it right HERE! Better yet, Ninja did an AMAZING episode of Our Liner Notes last week, a Tribute to the late Chris Cornell. It is such a great listen! If you were a 90’s teen I encourage you to listen to the is episode, I learned so much and the music, well it speaks for itself.

I have been trying out healthier less gluten recipes lately. I think next week I’m going to get out a week long menu plan of healthy summer recipes. For this week, let me share an easy crock pot dish that has a TON of flavour and is easy adaptable to whatever you have in your fridge.

Slow Cooker Pork Lo Mein

Adapted from Damn Delicious

1 package pork cubes
1 cup broccoli florets
2 carrots, chopped
1 cup cauliflower florets
1 cup snow peas
1 can sliced water chestnuts, drained
1 pound linguini
1/4 cup peanuts, chopped
1/3 cup soy sauce
3 cloves, garlic, minced
2 tablespoon brown sugar, packed
1 tablespoons sambal oelek
1 tablespoon fish sauce
1 tablespoon ginger, grated
1 teaspoon sesame oil

**You can use whatever noodles you have on hand and thrown it any veggies you have in the fridge!**

Spray crockpot with cooking spray.

Whisk soy sauce, garlic, brown sugar, sambal oelek, fish sauce, ginger and sesame oil and add to the slow cooker. Add pork, then cover and cook on low heat for 7-8 hours or high for 3-4 hours.

Stir in broccoli, carrots, cauliflower, snow peas and chestnuts. Cover and cook on high heat for 15-30 minutes, or until vegetables are tender.

Cook pasta according to package instructions; drain well.

Serve pasta immediately, topped with pork mixture.

This week HBear was at the dentist again. Poor kid got another 2 teeth pulled out. She was such a trooper! No complaints even though she had to miss her school field trip to the Safety Village 😞. When we got home I tucked her in all cozy and asked her if she wanted an ice cream sundae. She said,”actually I would rather just make my lunch and go to school please. ” 😳 WTF? I would have milked that shit for anything I could get 😂.

The next day was another gr. 3 field trip, this time to LocoLanding.

The kids started with Mini Golf. Unfortunately HBear was at the front of the line with 3 ROWDY boys and they got put into a group of 4. She handled it no problem though! She just kept on putting while the boys played “crazy golf” 😳.

SBean had a blast!!! She had no problem fitting in. HBear is so proud to be a big sister. I love watching them… when they are getting along 😜.

Next they went on the Bumper Boats. At first HBear insisted on taking SBean on the Bumper Boats for her very first time. However, one of her friends were left out so I moved SBean in with one of the TwinBesties. They had so much fun!!! He was such a gentleman allowing her to take the wheel and press the buttons he even helped her out of the boat at the end 💕.

They tried out the new Giant Slide and played on the Big Baller. OMG SBean was Hilarious!!!! No matter how many times she bounced off… she got right back on and tried again. She didn’t make it across this time but she is determined to do it next time 😀.

It was so hot out the other day that I took SBean to the Waterpark before we picked HBear up from school. She has no fear! That girl ran her ass off through every sprayer 🤣.

After school the other day I was chatting with my Ladies and we looked down the hill and all the kids were just sitting together and chatting. Theses kids have been in the same class with HBear since day 1 💕. I love them, PSBesty and the TwinBesties. We had to get a picture of them.

That day, instead of the Waterpark we set up the Mammoth sprinkler in the backyard to make it through the heat.

On Wednesday SBean had a field trip to the Safety Village. HBear missed out on the Monday so SBean invited her to come along 💗. How could I say no? So, I called HBear in and she came with us. I’m really happy because HBear has never been confident on her bike. In fact, this will be the first full summer she will ride without training wheels! SBean was a total pro! This is her first year with training wheels and she just goes! Her favourite part was getting off her bike and walking it over the “railroad tracks”. 😂. I took HBear back to school and got the little ones back for the rest of their day just as the rain hit.

After school we tried out a new sprinkler. SBean calls it the World sprinkler 😂.

HBear had Brownies at the public library this past week. I feel a bit guilty cause I got snotty with one of the leaders, as we are getting closer to the end of the year I feel that my patience is… Lacking LOL I feel some guilt so this week I will have to put on my big girl panties and issue an apology for my snotty behaviour.

On Friday I had planned an end of the year Dress Up Party at the Hat Hideaway! I told HBear she was allowed to invite 5 friends. She picked 5 but then insisted on her Sister attending as well. She said, “you said I could pick my friends and SBean is my very best friend Mommy.” Seriously! There is absolutely no way I can say no to that!

It was such a fabulous time! Gr2Besty’s Mom brought Starbucks and all the Girls were allowed to pick out dresses in the biggest dress up closet ever! 3 of the Girls picked very pretty flapper dresses while the other 3 Girls picked very fluffy ruffly dresses. SBean just wanted to be Rapunzel 😂. It was so damn cute!

The woman that owns it, Nancy was SO fabulous with the kids! It took an hour and a half and was just under $100. Within 4 days she had all of the edited images for me! These were some of my favourites!

On Saturday Ninja and I were invited to a Full Moon Party by HBear’s Gr1Besty’s parents or as Ninja calls them, our Pretty Friends 😀. They are both absolutely gorgeous and always up for a great time! They are from the prairies and had a few of their friends visiting. Even though they were strangers it felt like I had known them forever LOL they might as well have been my friends from high school. A few other couples that we have met through our PrettyBesty’s where there as well! It was a blast! However, you know you are in trouble when you get there and the host hands you a sand pail and tells you to fill it with ice, mix, and the booze of your choice 🍹😳. They live right on the beach but their beach was completely flooded! Even past the sandbags! The fire pit was even underwater! It was still so much fun 😊 The food was great, the music was awesome, and they even had black lights and glow-in-the-dark body paint 🎨🤣. We didn’t get home until midnight 😳!

The next day I felt like ass LOL. I woke up with such a major headache that I knew we had to get up and get going quickly or I would spend the day nursing a giant hangover. So, we went bike riding! The Girls did so well!

We also went to the new racetrack Area 27 to check it out and take picture wearing our new shirts! Ninja and I listen to a hilarious Podcast called Reasons are Several and they were kind enough to send us some swag last week! We took pictures around the Valley to tweet our thanks.

By the end of the day I was feeling completely human again and was able to reflect on the fabulous week we had!
