My FIL’s Taco Salad, Summer Reflection and My Funny Bean

Aaah, summer – that long anticipated stretch of lazy, lingering days, free of responsibility and rife with possibility. It’s a time to hunt for insects, master handstands, practice swimming strokes, conquer trees, explore nooks and crannies, and make new friends.

HBear has had a rough week. In fact, just as I dictated that into my phone I watched her take a dive running across the playground 
😬 actually, I cleaned her up and then started again and just as I dictated this… SBean fell off a rock at the nature park! I think that is telling me that my almost 9-year-old and almost 5-year-old cannot play at the park without me watching their every single move 😒. Honestly I am watching them as I dictate but when do I actually get 15 minutes to talk into my phone while they play?? Grrrr

Seriously though, at Science Camp a few weeks ago, a Girl told HBear a ghost story and she has not slept through the night once since then! At first we let her crawl in. Then, we let her have a cuddle for just a few minutes. We are now at the point where we wordlessly usher her back to bed and let her cry it out. Are we bad parents? The wailing, the screaming, and oh the snot! I almost feel like calling this little Girl’s Mom and screaming at her for allowing her 9-year-old to tell such scary stories! However, the Girls will hear lots of things they are going to have to deal with throughout their lives. So we need to give them the tools to do that. We tried talking about it when she is awake and more rational but it’s like a bad habit… She just cannot help herself 😒. Advice anyone?

SBean said 3 things this week that are honestly so freaking hilarious!

We were discussing what suitcases to use on our upcoming trip and SBean said quite confidently, “I want the red one. I think red is so much more defisticated.” 😳 I think she meant… Sophisticated 😂.

While at the table this morning both of the Girls were singing “this girl is on fire.” That’s it, that’s all they know and on the top of their lungs they sang that line on repeat 😬. I asked them very pleasantly (as pleasantly as I could before my coffee of course) to please stop. You could see the physical dilemma SBean was in. Her mouth was literally quivering. 10 minutes later she shook her head ruefully and looked down at her cereal and said, “But my mouth really wants to sing it.” 😞😂

We went to the library today. This summer thing is really messing me up LOL having so many visitors I am completely out of sync with my regular routine. When I checked the library list this morning I realized that our 35 books were 4 days overdue! We collected them all and took them all in. The Girls were allowed to take out 8 books each for the road trip. I picked out 4 more, 1 about Alberta, 1 about Saskatchewan, 1 about Manitoba, and 1 of facts about Canada. When we got to the checkout one of the nice ladies that have helped us every 3 weeks for the past almost 9 years thanked us for our “generous contribution” and I paid the lady almost $20 in late fees! I really detest avoidable fees! So as we are going through the books the lady looked down at SBean and said, “my these are some good books! What are you going to be when you grow up?” She smiled shyly, blushed a little bit and very nicely said, “I really want to be a garbage man when I grow up.”

We like Mexican food! I really really really like taco salad but the taco salad I always have is basically a taco in a bowl, no dressing needed. Ninja likes taco salad as well but he cringes at the thought of MY taco salad. He likes how his Dad has always made it so I asked him for the recipe! He was right, his way is so much better than mine! You actually use taco seasoning in the dressing! How did I not think of that before? You got to try my FIL’s crazy easy, super healthy and absolutely tasty version of taco salad.

My FIL’s Taco Salad

1.5 pound ground beef
1 head lettuce, torn up
1 cup tomatoes, diced
1 onion, diced
1 pepper, chopped
1/2 cup cheese, shredded (Mexican blend)
1 6 ounce bag taco chips
2 tablespoons dry taco seasoning mix
1/3 cup oil
1 tablespoon vinegar

Dressing: combine oil, vinegar and taco seasoning.


In skillet, brown beef.

In salad bowl, combine lettuce, tomato, onion, green pepper and cheese. Add meat and taco chips to salad mixture. Pour on dressing and toss well. I like to put it all out on the table and let everyone pick what they like in their own salad.

 
It was HOT this week. Is going to be hot for the next 2 weeks! We still have a lot of smoke in the sky but I think that the smoke coverage is actually helping to keep the skin from frying off our bodies 🤣.

HBear did a weeklong, half day, Sailing Camp this week! She took the beginner course last year and absolutely loved it! This year was no exception. They were out on the lake every day and even sailed to Naramata for ice cream on their last day.

SBean was a super brave girl this week and went to the dental specialist to get a tiny cavity filled. We went to the nearby park before her appointment to relax but she was a Rockstar and we were done and back playing super quickly!

On Monday evening we took advantage of the $20 summer concert series and drove to Kelowna to see Bob Dylan. They were super strict about camera use so we didn’t get any pictures of the actual band but after 12 songs we decided to leave and explore downtown a little bit. The concert was very… Weird. I was expecting a lot of conversation between songs, stories, and Bob Dylan classics. He didn’t speak to the crowd once, he didn’t sing any of his own songs, and it really felt like a old timer band that got asked to play at the local bowling alley lounge. Kind of disappointing but it was a night out with my Ninja anyways so it was still great!


 

HBear was supposed to be in tennis camp in the mornings this week but I pulled her out so that we could have the mornings to just relax and play.

Relaxing mornings = more energy to spend the rest of the day sailing the open waters!


SBean got a sticker at the dentist for being such a good behaver. Imagine my surprise when I noticed that she “decorated” the van with it 😳😬

HBear has been on a mission to help make dinner. SBean has even got into it by helping with things like grating the cheese. The other day HBear made us delicious vegetable omelettes!

The Girls have even been helpful with the whole Dog walking thing. 

SBean and I had a lovely week exploring Summerland! We found a little park that was built before I was even born. It had a few “rides”, a small beach and was close to HBear’s Sailing Camp.

It was incredible to sit there watching my Sweet Baby Girl sailing her little Pico in the middle of the great Okanagan Lake! She is getting so big, so independent, and so adventurous! On 1 hand my heart bursts with pride and on the other hand it wants to break into a million pieces because she is growing up so quickly.

I am super happy that we had the chance to just relax in the mornings, they have certainly played well together. Granted by 11am they were ready to go their separate ways lol. 

SBean and I did a little local shopping while in Summerland. They have the best little thrift store and we got a few movies for the road trip!

 

After we bought SBean a new hat, she forgot hers back at home, we went to the park/water park.

 

We also took a little walk to the dock and SBean was enthralled with the older kids canon balling off the side 😳😊.

We went back to the little private park we found a few days earlier and SBean played in the sand while I relaxed on the lounger chair that was just calling my name! We were fortunate enough to watch HBear sailing while we played.

We have been busy taking our rental Dog on walks. This is our last week with my Sister’s dog… I don’t think we will be getting a dog of her own anytime soon LOL. 

On Friday SBean and I met one of her Preschool Besties at The Bench for a fabulous Tea Party! It was so great to catch up with them and to see how a little cookie and some apple juice can brighten a Girl’s whole day 💕🍪. 

 
At the end of the week, HBear received her certificate for the next level of sailing!

On Saturday we did something that truly made my heart burst! All 4 of us went Golfing! We only did 9 holes but the Girls were fantastic! The only problem we had was every time I went to swing SBean would yell, “Mommy!” 😂. SBean took a few swings but mostly enjoyed driving around in the cart with me while HBear was freaking amazing! She only got frustrated once and she shot a fabulous score!

 

After golfing we relaxed and just hung out in the backyard. 

 

 
The next day HBear had a Birthday party at the community center. The little girl had a Toonie party. She asked everyone to bring 2 Toonies in lieu of a gift. Half the Toonies were devoted to the charity of her choice and half for the Birthday Girl. What a fabulous idea!

While HBear was at her party, Ninja took SBean to his parent’s for a swim and I went for a haircut! I walked in and told the lady to do whatever she wanted. I absolutely love it!

That night we met my Uncle and Aunt at Salty’s for dinner and a walk on the beach. They have been in all weekend and it was/is great catching up with them! We definitely don’t do that as often as we should! Being locals we sometimes get so caught up in our daily lives that we forget to go walk in the sand.

This was a good week. My heart is full.
