SBean’s 5th Birthday & Chicken Enchilada Soup

Well hello! First off, let me apologize for last week. It is not very often that I don’t put out a weekly blog post but then again, it’s not very often that I have a cold hit me as hard as this one did for the past 2 weeks. So, I am very sorry. This post will be a bit longer because so much has happened in the past 2 weeks!

While everybody is having fun putting up their Christmas trees and decorating for the holidays I… am in birthday Hell. I mean, I have been blissfully enjoying my daughter’s birthdays 😉.

Have I told you the joys of having 2 birthdays, 4 days apart, less than 1 month before Christmas? Oh boy the joy is spewing, let me tell you.

As I have told you in a previous post, this year SBean decided to have a gymnastics birthday party! I love this because the kids sleep so well that night LOL and there is basically no mess to clean up!

SBean was very specific in what she wanted. Pink plates, ice cream cake with lots of pink whips, and personalized water bottles for each of the kids as a thank you gift. Thank goodness MBesty has Beyond The Stitch for all of my personalized gift needs!

The kids had a TON of fun and there were great big smiles all around… Smiles = success!

 
 

 

 

 

 

 

 

 

 

 

 

 

SBean and PSBesty had not seen each other in months. They snuck away for a few minutes for a water break and a chat 💛.

 

 

 

 

One of SBean’s most favourite things she received (and she got a LOT of amazing gifts, her friends really know her!) was a card that was handmade from MBesty. She couldn’t take her eyes off of it and wanted to sleep with it that night 💛.

 
The day after the big birthday party was her actual birthday!

I cannot believe my baby is 5! I know everybody says it but it is so so true, the years fly by so quickly. It seems like just yesterday she was born. 


My little Bean. Let me tell you a bit about her. She is a feeler. She feels everything from the tip of her toes to each hair follicle on her head. When she is happy, she literally brings sunshine into a room. When she is unhappy, the ground shakes under her fury. She is loud, energetic and full of life.

She is smart. Not reading Charlotte’s Web at 3 smart but, smart like… Well take this for example. She comes up to me the other day and says, “Mommy, why is it bad to lie?” Taken aback I said the first thing that came to mind, “well Sweetie because when you lie to people they can’t trust you and there are consequences.” She thought about this for a few seconds and said, “what are the consequences for little lies?” I had no idea where she was going with this so I said, “well Bean, for every action there is an equal and opposite reaction.” She mulled that over for a few seconds and said, “OK then. I washed my hands for dinner!” I was like, “hey! I didn’t hear the water run!” And she looked at me and shrugged her shoulders and said, “little lie… Little consequence. I’m OK with that.” 😳

She has style! She is very particular in what she wears. Although she says pink and purple are her favourite colours she prefers to dress in primary colors, black, and gray. When she accessorizes she is very particular in what she puts on. She wears a necklace to school, she actually comes home at the end of the day still wearing the necklace. 

She loves gymnastics, dance, music, skating, golf, pottery, and bike riding. She also loves winter! She does not mind being cold as long as she is playing in the snow.

She loves wearing fuzzy socks to bed, loves popcorn with movies, cucumbers, and breakfast for dinner.

She doesn’t like to ask for help and is quite independent unless it comes to wiping her butt and then she will gladly ask someone else to do it 😂.

She has a wonderful sense of humour and her imagination is outstanding! She loves to play Barbies and dolls and make up stories as she goes along.

She has no interest in reading but loves patterns and numbers. However, she loves books and being read to. She doesn’t have a lot of patience and crafts make her frustrated but if she wants to do something and she has it set in her mind… nothing is going to stop her!

She is very affectionate and loves cuddles and kisses. Unless they’re sloppy, sorry HBear 😂.  Dress up is one of her favourite activities and she loves to pretend she is a superhero princess.

She has an eclectic group of friends ranging from her preschool Besties, to dance friends, to new kindergarten friends, and grade 1 friends. Her best friend is MusicBesty and she has informed us that when she grows up she is going to marry him.

Some days she is challenging but every day I am so proud that she is our daughter. She really does sparkle. Wow, when I lay it all out like that it makes me realize just how lucky I am to be her Mom 💛.

On her actual birthday she chose dinner and of course she chose waffles! We decided to have our family birthday dinner for both girls together this year. I hate doing that because they are such individuals and I like having their birthdays on separate weekends to make sure they get our full attention. However, this weekend coming up has a lot of things planned and I didn’t want HBear to miss out on her family dinner/birthday cake experience. So, I bought 2 separate cakes with 2 separate coloured candle sets and we sang happy birthday to both of them. Then, SBean opened up her presents from the family.

It was a busy but wonderful 2 days and SBean enjoyed every second of it! She was so very excited to be called down to the office to pick up her birthday pencil that it kept her up most of the night LOL.

Happy 5th birthday my beautiful SydneyBean. I can’t wait to see what adventures this year brings 💛.


 

 

 

 
 

While I was sick we tried to put out a new episode of How Was Your Week, Honey? But… it got lost while saving. Apparently you are not a true Podcaster until it happens to you so I guess I can safely say, I have been initiated and am now a full fledged Podcaster! I have received a LOT of great feedback from my Hamburger Soup recipe I put out a few weeks ago! I am so happy that so many of my readers have tried it… and loved it! With the cold weather upon us, I have been trying out all sorts of yummy soups. This one is another easy peasy recipe and it tastes delicious! It is filled with fabulous vegetables and cheese. Sounds like a winner to me! I would love to hear about it if you try it so comment or message me and let me know how you like it!

Chicken Enchilada Soup
Adapted from Jo Cooks
Servings: 8
NUTRITION: 253 calories/bowl

1 tablespoon oil
1 white onion, chopped
2 bell peppers, chopped
1 bottle enchilada sauce
8 oz cream cheese
1 can diced tomatoes
1 can black beans, drained and rinsed
1 can corn kernels, drained
2 cups cooked chicken from a roasted chicken, chopped
1 cup chicken broth
2 green onions chopped
1 cup Tex Mex cheese, shredded

Heat the oil in a large pot, over medium heat. Add the onion and bell pepper and cook for about 5 minutes until the onion is soft and translucent.

Add the enchilada sauce and cream cheese. Break down the cream cheese and cook until the cheese has completely melted.


Add the diced tomatoes, black beans, corn and stir.

Add the chopped chicken and chicken broth. Stir and cook for about 10 to 15 minutes, stirring occasionally, just until the soup is really hot. Don’t let it boil for too long because the cream cheese could curdle.

Remove from heat and garnish with green onions and cheese before serving.

 

So last week after months of hard work and planning we executed the 3rd Annual Columbia Elementary Stock Up and Shop Vendor Fair. In the morning we set up all of the Christmas decorations and decorated the entranceway.

After school we set up the gym and got everything ready for all of our customers! This was the first year that we have tried doing it on a Friday evening and a big country concert was happening at the event centre at the same time so we were unsure of how the traffic would be.

We had 30 unique Vendors, a fabulous raffle table, a crazy huge bake sale and hot chocolate, Starbucks coffee, and homemade apple cider. Everything went super well and we made over $1800 for the school PAC! Success 😊 Thank you to my YBesty for watching the kids after school and getting HBear to her Coding camp! Also, thank you to Ninja for helping out a TON and having so much patience. I couldn’t have done it without you 💛.

 

 

The next morning I had no voice left and a good fever running so I had to miss HBear’s first Mini Swim Meet of the season 😞. Thankfully Ninja stepped up to the plate and volunteered to be a timer. HBear had a wonderful time!

From there, Dad and Ninja took HBear truck shopping in Kelowna! I took SBean to her friend’s unicorn birthday party at the bowling alley. Of course I was still stupid sick so I spent 2 hours in the van sleeping while they enjoyed the festivities. Look at these unicorn cupcakes this Super Mom made for the party, Stunning! It was fabulous for SBean to see some of her Preschool Buddies again 💛. 

 

On the way home I had to stop for a picture of the beautiful November day at the golf course. Coming from Manitoba days like this still surprise me.

Grandma and Grandpa got home from their cruise and came over for dinner the next day. Even though they were only gone a couple weeks the Girls missed them like crazy 💛!

SBean picked out a new library book this past week and to my delight it was a 3-D snake book 😬. I think she just liked the accessory that came with it LOL.

This year we went to Penticton First Annual Christmas Tree Light Up! I have to say it wasn’t much 😂 but it was the first one and I look forward to it becoming an annual downtown attraction in the years to come. For their first attempt they had a gingerbread making tent, letters to Santa tent and Carollers. At 7:15 there was a countdown and the tree was lit! The Girls were excited to take pictures with the Grinch, Frosty, and of course Santa and Mrs. Clause.

 

The next day was Pyjama day at school! Such an easy event but the kids freaking love it!

While the kids lounged at school in their PJs the adults went Black Friday Shopping! I started my day by rolling out of bed and heading down to one of the local businesses that were having a super fabulous amazing deal between 7 AM and 8 AM. When I got there, there was a line all away down the street! Thankfully the owner honoured the line and even brought us out muffins and coffee while we waited! I would love to rant about this business but I can’t give away the surprise. There’s nobody else I’d wait in a cold line for other than my Ninja and I am so excited to give him a very special Christmas present! After I dropped the kids off at school I went to the mall and spent more money.


At this point I was feeling horrible about spending so much money that I decided to cheer myself up by buying myself some chocolate at Purdy’s 😂.  On my way to the chocolate store I remembered that 2 weeks prior, while grocery shopping, SBean and I found a $20 bill on the ground. With the money I had bought a lottery ticket that was still sitting at the bottom of my backpack. The lotto kiosk is right across from Purdy’s so I quickly checked my mangled ticket. It dinged. I looked at it and thought… That can’t be right. I turned the ticket over and signed it just in case and then walked up to the front. When I handed it to the lady behind the counter she checked it and said, “oh Hon I’m sorry we don’t have that much cash here you’ll have to go to the casino to collect your winnings.“

I won a free play and $1000! How crazy is that? What a fortunate time to win something! In fact, it comes in 3’s and I’ve had been having a little bit of luck lately. On Facebook I won a $5 gift certificate for Starbucks and a month subscription to learn how to meditate!

 

I didn’t tell Ninja about my good fortune until we podcaster that evening! 😂 I had such a hard time keeping in the good news, thank goodness my Sis answered the phone when I called to tell her! 😂

Before the Birthday madness, the Girls got beautiful haircuts to start off the holiday season.

After SydneyBean’s birthday party we went over to my in-laws to have a delicious dinner and watch the Grey Cup. This is how we do football in Canada… 😂
