New Years Resolutions & Honey Lime Chicken Enchiladas

Every year I try to make New Year’s Resolutions. I understand that to some people, resolutions are silly. Yes, I agree you should make goals for yourself all the time why just on 1 day of the year? However, I have always loved starting a New Year. To me, it is always felt like I could be anything… do whatever I set my sights on, and be THE person I’ve always wanted to be! The quote from Brad Paisley, “Tomorrow, is the first blank page of a 365 page book. Write a good one”, actually makes my arm hair stand up in excitement!

Do I succeed in all of my resolutions?


No.

I do try to be realistic with my goals but honestly these are personal goals that may take me years to become successful at. I’m OK with that because every 12 months… a New Year begins and I feel excited for what the unknown may bring! As I look back at last year’s goals I realize I have a few that I would like to work harder on and a few I feel I did very well with! A pat on the back and a kick in the behind 😜.

Now, on to my 2018 goals!

I won a month subscription to Headspace. I started it the other day. To be honest, I am skeptical. I have heard amazing things about meditation but I have always thought “what a waste of time”. I am going to do it for the month, like really do it, and see what happens! So far it has been super helpful! It is helped me clear my mind of all the drama of going back to school. And by that I obviously mean dealing with the moms and teachers not my children 😂😂. The more and more I read about the benefits of mindful meditation and positive thoughts the more I really want to buy in to the program. I will make sure to keep you updated on my progress!

I think balance is the key to being successful. This past year I have found a very difficult time balancing 2 of my own personal hobbies, Yoga and my Fitbit step challenge. This year I noticed that my Yoga practice fell to the side to make more time for my step challenge. Throughout the summer I tried to do yoga a few times a week but the rest of the year I ended up stepping or running during my “exercise” time. This year I would like to find a better balance. I love yoga and I love how it makes me feel. I need to find time to kick everyone’s ass in the step challenge AND enjoy a good daily stretch!

I say this often to but the Girls are getting older and they love games. I usually suggest games when I am busy, you know to keep them entertained lol but I don’t want to do that. I want to make memories playing those games with them. This year I want to take more time to sit and play WITH them.

Man does the housing market suck! We have been actively looking for the past year and have not found a house that suits our needs. I am really looking forward to having my own space. I’m also kinda scared 😱. I always rented and haven’t been able to put my style into the place I live. What kind of home style do I even have? I don’t even know!!! It’s exciting and scary at the same time. Hopefully 2018 will be the year that we find our “perfect” home 💛.


We should get a Roomba for our Roomba. I feel bad for it because it works tirelessly, and at night I can hear it cleaning, and I just feel bad for it.

So, recently we have expanded our family business to include Home Cleaning. With the kids being older I am able to set aside a few days every second week to provide this service! The other day I was cleaning a full length mirror and I looked up and saw my reflection. I saw myself and 8 years of University flashed before my eyes. As I cleaned their toilet and the rest of their bathroom I thought about things. I mean, really thought. 

The conclusion I came to was, this makes me happy. 

Some people have a dream career… I never did. I was good in school and everything I’ve tried I have been relatively good at. Opportunities seemed endless. But, nothing stood out to me. Everybody says do what you love… I love my family. Work is something I have to do so that I can have more time with my family. So, the fact that we own our own business, make our own hours, I don’t have to spend money on expensive work clothing, and that I can still drop my kids off and pick them up every day from school is my ultimate dream job! I don’t care that I’m cleaning someone’s toilet. I’m going to clean the shit out of that toilet 😂! I’m going to make that toilet Sparkle! And when I leave I don’t have to think about it until I come back in 2 weeks. Dream. Job. Now when I get home with a great big smile on my face I look around at our own home. Not so sparkly 😂.  I have realized that although I am meticulous in my cleaning, sometimes I only surface clean my own house. I see the coffee dribbles down our white cabinets. I see the dust on the baseboards. This year I’m setting a goal to clean our own house like I am getting paid to clean it 😂😊. 


I am sort of an adventurer. I like to explore new places. I don’t get to travel as often as I would like but I love it.

So. Generic. I know but I love to travel! I don’t even need to travel to a different country or a different city I just love to explore. It’s one of the many things I love about geocaching. This year I’m going to take exploration a little bit further. I would like to explore different subject matters. I would like to explore different experiences. Try new things. Last year I stepped out of my comfort zone and joined an adult dance class. I am exploring how my legs don’t necessarily bend the way I had hoped they would 😂.  This year I would like to further explore my boundaries and capabilities!

When I first started the step challenge I was super conscious of drinking enough water. Over the past few months I’ve noticed that my coffee intake has been exceeding my water intake 😳. Over the past few days I have challenged myself to drink 3 water bottles a day or 72 ounces. I forgot how much it made me have to pee! Once your body gets used to it, the bathroom breaks become less frequent but yesterday… Holy Gawd I had to stop the van at Starbucks just use the bathroom! It was pure torture because I did not buy myself a coffee LOL Already I feel better! Water helps me to snack less, clears up my face, and makes me feel good. More water… Less coffee!

Time management is an oxymoron. Time is beyond our control, and the clock keeps ticking regardless of how we lead our lives. Priority management is the answer to maximizing the time we have.

As I look back at my resolutions I see a common trend. Lack of time. It is so hard to lead a balanced life! I have always thought that I have great time management but now I see that I have a problem. I prioritize and my last priority is always… me. Perhaps it’s not time management that’s the problem, perhaps it’s my priorities that are out of whack. I resolve to make myself a priority and to take the time needed to become the person I want to be for myself, my Husband and my Kids 💛.

Well there they are! I started prioritizing right away by joining Ninja on this week’s HWYWH Episode 47 HERE!

Every time my SIL visits I try to make her a Mexican dinner. She loves Mexican and rarely ever gets it at home. This year I made Mexican Street Corn and although it was good, it wasn’t as good as my Corn Salad! We also did Pico de Gallo with tortilla chips, and 2 types of enchiladas, 1 red sauce and 1 salsa verde. They were both delicious! By using a roasted chicken from SuperStore and buying bottled sauces, it was crazy easy to make and they tasted so good… even the next day!

Honey Lime Chicken Enchiladas
Adapted from Carlsbad Cravings

Servings 8 with 2 enchiladas each
NUTRITION: 671 Calories

1 roasted chicken, all the meat taken off the bones
1 bottle salsa verde

1 bottle red enchilada sauce
16 tortillas
4 cups Mexican cheese, shredded

1/2 cup honey
1/2 cup lime juice
1 tablespoon chili powder
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper

Preheat oven to 350.


In a large bowl, whisk together the honey, lime juice, all the spices, salt and pepper. 


Add the shredded chicken. Let marinate 10 minutes.


Spray 2 baking dishes with nonstick cooking spray and pour 1/4 cup salsa verde in one of the dishes and 1/4 cup of the red sauce in the other dish. Spread them evenly over the bottoms.


After chicken has been sitting 10 minutes, remove chicken and separate in 2 bowls. Take out 1/4 cup of salsa verde and pour the rest into 1 of the bowls of chicken. Do the exact same thing with the red enchillada sauce and pour the rest in the other bowl of chicken.


Begin assembling enchiladas by filling each tortilla evenly with chicken filling and 3 cups of the cheese. Roll up each tortilla and place, seam side down, in the coated baking dishes. Repeat process until all tortillas are filled.

Pour the remaining salsa verde and red sauce sauce over each of the enchilada dishes and cover with remaining 1 cup cheese.

Bake uncovered for 30 minutes then broil until cheese is golden.

 

We started the New Year in the BEST way possible! We all went up to Apex for an afternoon skate. You forget how beautiful it is up there, above the clouds surrounded by mountains of snow ☀️❄️! It was JQ and SIL’s first time up there and we had a fantastic day.

 

 

 

 

The next day we celebrated JQ’s 4th birthday 🎉! He lives in Winnipeg, so this was a first for us. Super happy we got to sing Happy Birthday to him this year 😊!

 

 

HBear had a great New Year’s Swim Week! Every morning she went to the pool for land training and swimming. She came home for lunch starving 😂.

 

I bought HBear a journal for Christmas. It is a You Do You Journal from Mare #Mareathoners. Mare is a local radio DJ/Vlogger. She promotes Self Help and Mental Health Awareness. I told HBear she could write down all of feelings in it. The other night I found this note on my pillow 💛 (don’t look at her spelling) 😂.

 

For her last week of holidays I finally let her watch Grease! She really liked it! I had to fast forward a few parts though 😳!

SBean had a very productive week too! Cuddling and doing LEGO!

For Christmas this year Sis suggested that we ask Dad for the fabfitfun box. I thought it might be fun to get boxes filled with things I would never splurge on, so, we did it! It was super fun to open it up and see all the cool things inside! I have used almost everything inside it and besides the poncho everything is really great!

This weekend I was lucky enough to be invited to a fabulous 40th birthday bash for an awesome friend! We went to Theo’s for dinner and laughed A LOT!!!!! 🍷🍾🍻🙈🙊🙉😂

This was the week of birthdays!! On Sunday we celebrated my MIL’s 70th birthday! I went everywhere looking for 70th decorations and nothing! So, HBear and SBean made all the decorations! Including confetti 😜💕.
