Halloween & Thai Meatballs with Noodles

If ever there was a holiday that deserves to be commercialized, it’s Halloween. We haven’t taken it away from kids. We’ve just expanded it so that the kid in adults can enjoy it, too.

Wow! Where did October go? It seems, even when I try to get ahead of the game when it comes right down to it I’m scrambling to get things done.

This year SBean wanted to go as a pirate. Years ago HBear had gone as a pirate and I bought her a big hoop skirt costume. I was smart 😆 and didn’t put it in the dress up bin so when I brought it out for SBean it was brand new to her!

Done, Eazy Peezy!

HBear on the other hand is never eazy peezy 😂 she decided she wanted to go as Mary Poppins. Perfect! Not. Where do you find a early 1900’s Hillary Clinton dress suit that fits a 9-year-old? The answer… Nowhere. You find that costume nowhere. So after months of looking I finally called defeat and told her to pick her second choice. Anything she wanted 😳. So of course she picked a character from her favourite book… The Child-like Empress from the Neverending Story 😳.

Piece by piece I began collecting items to try to put together a costume that would make her happy, keep her warm, and somewhat look like the Child-Like Empress. Ninja spent hours outside hammering pearls, glueing necklaces, and hanging old clip on earrings to build the empress headpiece.

She looked beautiful and absolutely loved it! #Winning

At the last minute I threw together a costume too! I was a French Kiss 💋🤣.

This year while trick-or-treating we noticed a few things…

1. Almost all the parents dressed up to accompany their children while they went door to door! It was awesome!

2. Kids don’t yell trick-or-treat or Halloween apples anymore! They all ring the doorbell 🙄. We spent half the evening convincing the Girls to yell trick-or-treat really loud instead of politely knocking 😝.

3. Halloween hasn’t changed that much. Lately when I look around I feel like so much from my own childhood has changed drastically… But not Halloween! Kids were laughing, parents walked together as they smiled with their friends, some kids used the sidewalks and some ran all over the grass 😳🤣. It is such a small moment in time that we get to share these moments and although Halloween has never been my favourite holiday I will cherish every minute and hold these memories close to me forever 💛.


Last week we were lucky enough to be featured on hour 9 of the 3rd Annual Podtoberfest! It will be released later this month! We had SO much fun podding with new friends from the East coast! When we were done recording for that, we recorded the newest episode of How Was Your Week Honey? When you live in a small town you tend to check out every restaurant that opens just to change it up once a while. A few weeks ago we were talking about the Thai restaurant in town. Dad loves Chinese food but was a bit sceptical about Thai. He didn’t really know the flavour profile and he isn’t a fan of spicy foods. To give him an idea I decided to make a Thai dish! This meal is full of Asian flavour, wasn’t the least bit spicy (although you could always add spicy Thai peppers if that’s what you like 😉) and took no time to make!


Thai Meatballs with Noodles

1 pound ground turkey
½ cup panko
2 tablespoons fish sauce
2 tablespoons cilantro, chopped
4 green onions, finely chopped
2 teaspoons lemongrass, minced
1 garlic clove, pressed
1 teaspoon ginger, grated
1 tablespoon oil
1 package fresh chow mien noodles
1 bag coleslaw

Sauce:
1/4 cup soy sauce
1/4 cup lime juice
2 tablespoons honey
2 teaspoons sesame oil
3 green onions, thinly sliced
2 teaspoons cilantro, chopped
2 teaspoons ginger, grated
2 garlic cloves, pressed

Stir together all ingredients for the sauce and set aside.


Combine all the ingredients for the meatballs thoroughly and roll into tablespoon sized balls with wet hands.



Bake for 25- 30 minutes or until cooked through.

Boil noodles according to directions.

Saute coleslaw in a little oil.

When noodles are done boiling, drain and add to the coleslaw.

Add sauce and meatballs to the noodles.

We started our week carving our pumpkins! This year we decided to freestyle it and we didn’t use any stencils 😳. It was tough for me to be creative without help lol so I cut out holes and stuck rubber rats in each hole 🤣.

 

This weekend we went out to film a short video for a contest we entered. On our way home POP SBean lost her very 1st tooth!!!! She was CRAZY excited! She left the Tooth Fairy a note and The Tooth Fairy left her $5.00 AND a very official certificate!


HBear and her dance partner have been working very hard on their duet! They are so dedicated 💛. I can’t wait to see the whole thing at the end of the year!

Speaking of practicing… SBean has been working very hard on her reading skills! She is blowing my mind! On Friday I joined her and her KBesty for family reading in the morning. Those Girls read to me so well, melts my heart 💛.

On Halloween I attend the school’s annual Halloween Parade with my MIL! This year HBear is in grade 5 so she got to be a class leader! She was chosen to lead SBean’s grade 1 class with her Gr2Besty 💛. The costumes were amazing, the spirit was contagious and we had a great time!

 

After dinner Ninja, Dad, the girls and I got bundled up and we were off! We trick or treated from 6-8 and the Girls had so much fun… so did we!


 

 

 

Another Halloween in the books! It was a gooder! Now we start the birthday planning 😆!
