Spring Break, Surprise 40th Birthday Bash & Loaded Breakfast Burritos

Spring is nature’s way of saying, ‘Let’s party!’

I had the  BEST spring break! Ever.

Here in BC we get 2 weeks of spring break. In the past the Girls have gone to spring break camp for 1 of the weeks just to break up the monotony. Not this year! This year we spent the first week hanging out, just me and my Girls ❤️ it was great! They got along so well and we had a ton fun. We went shopping, went to the park, had a Mommy says yes hour, cooking class, and sign painting!

I also took some time out for myself to get my hair done, go to a bourbon cocktail class with Ninja and we also went to the Craft Corner Kitchen for dinner while the Girls were at cooking class!

The second week was family time! My Sis and BIL drove in from Cochrane with SweetPea and CabbagePatch! My SIL also flew in from Winnipeg with JQ!


We kept busy every day! We went to The Kangaroo Creek Farm, bowling, the Osoyoos Desert Model Railroad, the park, Tickleberry’s, Dumbo, Boston Pizza for dinner, a picnic on the beach and played hard in the back yard!

The last night before my Sis left, her and Ninja had planned a surprise 40th birthday party for me! I was blown away! I had no clue! Zilch! I didn’t even buy a new outfit! They said we were going out for dinner so I assumed we were having a nice family dinner 2 weeks ahead of mine and my brother-in-law’s birthday.

Wrong!

They blew my mind! We went to the Nest and Nectar, my favourite restaurant in town, and had a fantastic dinner. 


My Sis had decorated the table with fabulous black and gold 40th birthday balloons and signs.

After dinner, the restaurant owner brought out the most beautiful, stunning, elegant cake I have ever seen! With the best cake topper ever… 40 AF 😂.


Just as we finished eating our cake I looked up and saw a train of my friends walking through the front door! I wish someone would’ve gotten my face on video because I was completely blown away!

All my family and friends joined the celebration and Sis and Ninja even rented a band! 


It was the perfect night ❤️

Thank you to my family for making this such a special spring break and for the amazing party. I felt so loved and appreciated and excited to start my 40th year off with so many amazing people! I feel completely guilty for all the birthday wishes I have received considering my birthday is not for a few weeks yet 😂 but it’s my birthday and I can party all month if I want to! 🥂

We had 4 extra mouth to feed this past week so I tried to make things that were easy enough to feed a group, tasty, and quick. One of our favourite recipes in the past few months have been these amazing breakfast burritos! I love them because depending on our mood you can switch up the meats, the vegetables, and the cheese. These are so good that the kids beg me to make them all the time! They are also super easy! I love when I can I have veggies, eggs, tater tots, sausage, bacon, and cheese all in one delicious bite!


Loaded Breakfast Burrito
Adapted from Butter Your Biscuit


1/2 bag of tater tots
1/2 package Breakfast Turkey Sausages
1/2 lb bacon
8 eggs
2 tablespoons milk
1 tablespoon butter
1/2 onion, diced
1 jalapeno, diced
3 roma tomatoes, seeded and diced
1 1/2 cups Mexican cheese, 
shredded
6-8 10 inch tortillas
1/2 cup chopped cilantro

Prepare tater tots according to the package. Wrap tortillas tightly in foil and warm in oven during last 5 minutes of tater tot cooking.


Heat a skillet on medium and cook bacon, drain and set aside, let cool and chop into bite size pieces.


In the same skillet drain the bacon fat and add the sausage, peppers and onions. Breaking the meat up with a spoon, cook until done, remove from pan and set aside.


In a medium bowl whisk eggs and milk, season with salt and pepper. In a non stick skillet heat the butter up then add the egg mixture. Cook on medium low just until cooked, remove from heat.


In the middle of a tortilla add some cheese, then a couple tablespoons of the scrambled eggs. Followed by some bacon and some sausage and onions.

Add a few tater tots and some fresh tomatoes and a pinch of cilantro then tuck the sides in and roll up the tortilla.
