Today is SBean’s 7th birthday!

She is something else! She is smart, sassy, willful, funny, fast, loud, sensitive, has an amazing sense of style, creative, and cuddly.

She is hard to get to know but once you do, she is loving, fiercely protective and super sweet.

She loves LOL’s, singing, dancing, reading, skating, swimming, tennis, movies, sweets, juice and steak. She loves to play minecraft, Uno and board games. Weekends are for relaxing and movies. She loves Green Eggs and Ham, Full House, Game Changers, Legally Blonde, all Barbie movies, Disney, and The Avengers.

Oh and she LOVES unicorns!

When I was a kid I LOVED unicorns! I believed that a magical land of unicorns and fairies lived on the other side of my closet. I collected unicorn posters, pictures and figurines. Who would have thought that 30 years later my own daughter would love them just as much?!

This year she wanted a dance party filled with unicorns and rainbows! We started by making each of her guests a Unicorn Mask invitation! We printed them up from Darling Darleen and had so much fun making them!

We made unicorn water bottles HERE for all the guests, got unicorn cupcakes from Safeway (our power was out for the entire day before the party thanks to house construction lol) and put them in the shape of a 7, tied pink and blue balloons to the chairs that each of the kids were able to take home with a unicorn squishy, put out a rainbow of fruit and left over Halloween candy!

A few weeks ago I was lucky enough to guest on one of my favourite podcasts, 2on3!! We discussed all things BH90210! I don’t know how this happened but I went to make my famous Potato Leek Soup the other day and realized, I haven’t put it on the blog!!!! This is crazy to me because I spent months perfecting this recipe when HBear was a little baby. This was her FAVOURITE soup. It’s still Ninja’s fav! This is the BEST soup! I like to leave it a little bit chunky but you can puree it to your liking! I also realize that I have posted 3 soup recipes in the row… well, ’tis the season so enjoy!


Potato Leek Soup with Bacon and Cheddar

4 russet potatoes (2lbs)
1/4 cup butter
2 large leeks, rinsed and chopped
3 cloves garlic, minced
3 cups chicken stock
3/4 cup milk
3/4 cup sour cream
6 slices of thick bacon
1 cup cheddar cheese, shredded
2 tablespoons green onions, chopped

Heat oven to 375. Clean potatoes, pat dry and pierce with a fork in several places. Set directly in oven and bake for about an hour or until easily paired with a fork. Cool on a wore rack.

Place bacon in a skillet and cook over medium heat, stirring occasionally, until browned and crisp, about 10 minutes. Transfer bacon to a paper towel to drain.

Melt the butter in a soup pot over medium-low heart. Add leeks, season with salt and pepper and cook, stirring occasionally until softened, about 10 minutes.

Add broth and 2.5 cups of water. Bring to a simmer over medium heat and cook until leeks are tender, about 20 minutes.

When potatoes are cool, coarsely chop the potatoes and add to pot with leeks. Puree the contents of the pot in a food processor until super smooth. work i batches. Return the pureed soup to a clean soup pot and reheat at medium low.

Whisk together milk and sour cream until smooth and whisk into the soup along with 1/2 cup of cheese.

Season with salt and pepper. Serve garnished with remains cheese, bacon and green onions.

 

Since I last posted we had Halloween! SBean dressed up as Rocker Baby (an LOL) and HBear dressed up as a beautiful ballerina. We reused old dance costumes! I went as a Social Butterfly!

SBean had her 1st sleep out all by herself at her MBesty’s house!

SBean also woke up with a story in her head that she just HAD to get out.

I went to a Soup Night Fundraiser for the Penticton Art Gallery with my PSBesty!

 

 

 

SBean continued to learn how to skate in her figure skates!

HBear performed at the OSNS Telethon at the local mall.

AND SBean had her Magical Birthday Party at Sparkle Dance Academy!
