This week I’m doing something a little different. I’m not going to talk 😂. I read a post from someone recently that said something like, why do bloggers yammer on for ages before you can get to the stuff that we actually came for… the recipes? I thought this was hilarious! Normally I have something to say but today I am just Grateful.

Grateful for… leftovers!!

In this post I have 3 recipes! Yup, 3! 3 amazing recipes to use up ALL that delicious leftover turkey and veggies that are sitting in your fridge right now! I LOVE leftovers! I love taking super yummy foods and finding new ways to make them even more delicious!

I have a flavourful, dark and tasty Turkey Stock that you can freeze for later use orrrrr you can make a delicious Turkey Noodle Soup with the recipe I use below! If you STILL have turkey leftover, like I did, you can make easy peasy yummy Turkey Salad Sandwiches that the kids will beg for!

Now you can enjoy Thanksgiving for the whole week instead of just 1 day! Your welcome 😀!

Turkey Salad Sandwiches


2–1/2 cups cooked chopped turkey (white meat is best)
1 stalk celery, diced
1/2 cup craisins
1/2 cup pecans, chopped
1 cup Miracle Whip or mayo
1 tablespoon poppy seeds
salt and pepper
1/3 cup red onion, finely diced

Combine all the turkey salad ingredients in large bowl and toss until everything is thoroughly mixed and coated with the Mayo.



Serve on your favourite roll (we used croissants) and favourite salad extras (we used spinach).


 

The Best Turkey Stock

Carcass from a roasted Turkey
4 carrots unpeeled and cut into halves
4 ribs celery cut in half, leaves on
1 onion, unpeeled cut into quarters
1 head of garlic, unpeeled and cut in half crosswise
Everything in the cavity of the turkey
1 bunch fresh parsley
6-10 sprigs of fresh thyme

6-10 sprigs of fresh rosemary
6-10 whole black peppercorns
2-3 bay leaves
1-2 tablespoons kosher salt

Add the carcass (and anything that was stuffed in the cavity while being roasted), carrots, celery, onion, and garlic halves to a large stock pot. Add cold water, covering the turkey and veggies by at least 1-2 inches. Add a handful of the parsley (with leaves and steyms intact), thyme sprigs, peppercorns, rosemary, bay leaves, and salt.

Bring to a boil, then reduce to a lightly rolling simmer and cook partly covered for 1 1/2 to 2 hours or until the stock is amber brown and tastes well flavored. Add more salt to taste if necessary.



Turn off the heat and allow the broth to cool. Place a large colander over a glass measuring cup and slowly drain the broth so the colander catches any veggies or bones that may fall from the pot. Strain into freezer bags and cool.

Homemade Turkey Noodle Soup


2 tablespoons olive oil

1 onion, diced
3 large carrots, peeled and sliced
2 stalks celery, diced
2-3 cups leftover turkey, chopped
8 cups homemade turkey broth (see above)
2 bay leaves
salt and pepper to taste
1/2 bag broad egg noodles
1 tablespoon parsley, chopped

1 tablespoon rosemary, chopped
1 tablespoon thyme, chopped
2 cloves garlic, chopped



Cook onion and garlic in olive oil until tender, about 3-4 minutes.


Add carrots and celery. Cook for another 5 minutes.

Add turkey, broth, bay leaves, herbs and season with salt and pepper. Simmer 10 minutes.

Add noodles and cook 8-10 minutes or until tender.

Remove from heat, discard bay leaf and season to taste.


 

  

 

This was a week! Every day I try to take a morning picture of the Girl’s on the way to school. We are 1 month in and they are already quite bored with my antics 😂. Every morning we also write a gratitude on a pumpkin in our living room. It is amazing what we each are thankful for! This week HBear was registered for her first official dance audition! She is nervous and excited. Her goal is to gain experience at this audition and to see how the process works. She is very new to ballet so her expectations are realistic and we are very proud of her for just trying 💗.

This week we ate delicious dinners, watched a fly land on Mike Pence’s head and wished my Sis a wonderful birthday. I KILLED it in the Weekday Hustle with our Fitbit group, SBean did an instructional video on how to make the perfect banana split, and both the Girls had playdates while HBear’s turned into her first sleepover in our new home!

Thanksgiving was an even more special day because this year it landed on Dad’s 65th birthday! I woke up with a nasty sinus cold so I stayed home. I cried, which made my nose stuffer but it was the right thing to do. Everyone had a wonderful time and I enjoyed the amazing leftovers that were brought home for me! On actual Thanksgiving. Ninja took the kids out for ice cream and Halloween decor shopping.
