Under the Same Roof & Veggie Quesadillas

When I was very young my Nana and Poppy came to Winnipeg with my Uncle Robin and his family for a visit. I remember waking up very early in the morning with the first rays of sun just peeking through our back sliding doors. My Nana was laying on the couch in her velour blue houserobe. I remember laying on her while she wrapped her arms around me and we had an intimate one on one discussion. You see, that day was my end of the school year field trip to the Assiniboine Park Zoo. I had been looking forward to it for weeks! However, my family was taking all my Cousins to Grand Beach for the day. I had a choice. I laid there early that morning and talked the pros and cons with my Nana. I felt very grown-up because she told me it was my choice. I thought about it long and hard and I went to the Zoo with my classmates.

I remember having the worst feeling in the pit of my stomach the entire day. I remember not enjoying the field trip at all. I remember going on the little steam train towards the end of the day and sparks flew up from the railway and burnt the back of my legs. To this day I believe it was the Universe telling me that I made the wrong decision. When I got home I told my Nana that her stupid lists didn’t work and that I had made the wrong decision despite my good intentions. I promised her no matter what that I had learned my lesson. Family was the most important thing. I would never, ever second guess that fact ever again.

That lesson stayed with me my entire life. Did I always make the right decision and put my family over my friends? Not even close. Especially during my teenage years and my selfish 20s 😬! However, family is and always will be my number one priority. Always.


This week I have felt more content than I have in years. I have my entire family under one roof! I can sleep so much better knowing that just downstairs my Dad, my big Brother, my little Sister and my PrettyP are sleeping soundly. My heart is full knowing that just down the hall my 2 Children and my Sister’s 2 Children are sleeping peacefully curled up next to one another. I have both of the dogs and my Husband stretched out happily beside me. I EVEN have my InLaws and my SIL and JQ just 6 minutes away, sleeping peacefully!!

And suddenly, everything is right in the world.

At least my world. I am so incredibly grateful to be surrounded by this much love. Even though we all have different views, we are all staying in our small house 😂 and even though we have all branched out on our own… It is our roots that deeply bind us together. It is this bond that gives me strength and gives me a new perspective on life. I am loved. I love. Things could be so much worse. I will enjoy every second of this family visit and keep these memories in my heart long after everyone has gone back home 💛.

Lately we have been trying to to eat less meat in our diets. We have a few reasons for doing this, 1, HBear and SBean have been really talking to us about the environmental impact of eating meat and asking us to use less meat, especially beef in order to protect our environment. 2, it’s hot out! Salads and lighter dinners are our summer go toos right now and 3, meat is expensive!

Two weeks ago we made vegetable quesadillas! They were absolutely delicious, used up the veggies in my fridge and I had awesome leftovers! Out of this one dinner I made taco salad and tacos for lunches over the next 2 days plus we each had 1 and a 1/2 quesadillas for dinner and we were stuffed! My favourite part of this entire meal was the sour cream cilantro sauce! It takes seconds to whip up and was absolutely delicious! I will be making that sauce anytime we have tacos, burritos, enchiladas, or taco salad! Get in my belly!


Veggie Quesadillas
Adapted from Gimme Delicious

1 tablespoon oil
2 bell peppers, diced
1 can black beans, rinsed and drained
1 can corn, rinsed and drained
1 onion, diced
2 cloves garlic, minced
1 cup spinach
1 teaspoon cumin
1 teaspoon chili powder
salt and pepper to taste
¼ cup chopped cilantro
8 flour tortillas
2 cups shredded cheese


For the sour-cream cilantro sauce:
3/4 cup sour cream
¼ cup cilantro, minced
Juice of ½ lime
1 teaspoon olive oil
Salt and pepper to taste


Heat 1 tablespoon oil in a pan over medium-high heat. Add the oil, bell peppers, black beans, corn, onion, garlic, cumin, chili powder, salt, and pepper. Season with salt and pepper and cook for 3-4 minutes or until the bell peppers and onions of softened.



Stir in spinach.


Turn off heat and stir in the cilantro.


In a clean skillet over medium heat, add a flour tortilla. Top with cheese, cooked veggies mixture, and another layer of cheese. Place another tortilla on top and cook, flipping once, until golden on both sides, about 3 minutes per side. Repeat with remaining ingredients.


Make the sour-cream cilantro sauce. Whisk all the ingredients in a medium bowl until combined.



Slice and Serve with sour-cream cilantro sauce.

What can I say about this week? It has been amazing! It’s been so hot that we have spent some indoor time during the hottest parts of the day. The kids have been making a movie, practising their make up skills, and playing with the dogs! SBean and PrettyP have been inseparable! They baked my Bro a miniature chocolate cake for his birthday and I have to say… I think it was the best and lightest cake I’ve ever tasted in my life! SBean cut back on a tablespoon of cocoa powder and honestly, it was perfect! She may need to start a baking blog sometime in the near future 😂. On my Brother’s 48th birthday we met my SIL, JQ & my Cousin and her family and everybody floated down the channel! Not me though, I have been staying out of the heat as much as possible, I waited in the air-conditioned van with a book and an iced coffee while waiting for my fun floating family to arrive 😂. That afternoon we hit up Slackwater Brewing and Neighbourhood Brewing for a few flights before heading over to Shaughnessy’s Cove for birthday dinner! My Sis and her family got back after a LONG flight home from the East Coast and we were all back together again 💛.

We had cuddles, movies and a water fight against the Penticton Firefighters! We had a backyard barbecues, lots of dog walks, and fun at the Farmer’s Market! There were cocktails at The Station Public House, delicious food including a dragon salad my Brother promised me the recipe to, and a pool party at Grandma and Grandpa’s! To end the week my Brother, PrettyP, HBear and SBean joined my Sis and the family and went to Kelowna for a couple days. It’s so quiet now, I already miss the loving chaos 💛.
