Easiest Steak EVER, Steakhouse Mushrooms & Risotto with Spinach & Feta

Today was a long day. Ninja had his first full day back to work  since SydneyBean was born. Yup, the whole day… just me and the 2 girls! I was up making breakfast and portioning chicken stock and everything was going dandy. I had the TV blasting children’s music and The Kerplunks, our favorite children’s band even came on!

Then it happened, SydneyBean realized that I wasn’t holding her.

Eeeeekkkkk. She had a serious meltdown, For. The. Whole. Morning. I had told HoneyBear it was craft day so I HAD to put her down to use the scissors and glue stick!  Today was the day that was preparing me for the summer. You see, we have a seasonal business so Ninja is off for the winter… but today reminded me that at some point it is going to be just me. 

GULP! How do I grocery shop? How do I make pasta? How do I do all the things that make me a stay at home Mommy? They are now all looking like impossible feats!!

I am scared.  

Everyone does it so I know it will be ok but you know when you are comfortable with the way things are and then BAM, everything is different and you have to begin to work in the good ol’ ass groove.   

Yeah… 


So, to show my love for my husband I decided to make his favorite for dinner tonight. It WAS a full day of work for him. Hard work, our family owns a window washinng business. 


Actually I plan my whole menu for the week on Sunday so it just happened, but we can go with… I am the best wife ever lol


Teriyaki T-Bones, mushrooms, risotto and garlic bell peppers. YUM!


Easiest Steak EVER!!!

6 tablespoons brown sugar
3/4 cup soy sauce
3 teaspoons dry mustard
2 teaspoons ground ginger
1 1/2 teaspoons garlic powder
3 lbs. of T-bone steaks

Put all together in a Ziploc bag and marinate in the fridge for at least 6 hours.

Ready to go on the Barbie

Take them out, drain and bbq!

Delicious Mushrooms


I don’t measure for this one I just do 🙂 peel mushrooms and slice ’em up. Add them to a hot pan that has butter and garlic sizzling away in it. Add some salt and let them cook down until there is no more liquid. When they are starting to brown, stir in some soy sauce & Worcestershire sauce. Stir and cook until nicely caramelized. You are going to wonder why you ever had mushrooms any other way!


These mushrooms are to die for!

Risotto with Spinach & Feta

3 cups homemade chicken stock
Olive oil
2 cloves of garlic, minced
1 small cup onion, diced
1 cup Arborio rice
¼ cup dry white wine
2 cups spinach
½ cup feta cheese

Pour the stock (I used my homemade stock from dinner last night) in a pot and boil. When it hits a boil, cover and turn down to simmer.

In a skillet add olive oil and let it heat up over medium – high. Sauté onions and garlic until golden. Add rice and stir until every grain is coated in oil. Add the wine to SHOCK it! Stir constantly till wine is all absorbed.

Now, here is the patience part. Add 1 ladle of stock at a time. While stirring, wait until the stock is absorbed, then add the next ladle… until all the stock is gone. It will probably take about 25 minutes. Keep stirring often. This is important; you can’t have a million things on the go because risotto needs patience and understanding. You’ve seen Ramsey freak on Hell’s Kitchen about the risotto, there’s a reason! LOL

When it is all gone add the spinach and cook for a few minutes, until it is wilted but till a pretty green.

Creamy and delicious!
Take off burner and stir in cheese!
