So my Sister and BIL got in late Friday night. Sis is 25 weeks pregnant; when they got here they showed us a slideshow of their little… GIRL!!! Another little girl, we are all soooo happy and excited!

Sis hung out with us for the day. I guess this is the perfect way to prepare for a baby, spend the day with a Mom and her newborn. I hope I didn’t scare her away from having another one though lol. It IS a bit different the second go of it. LOL 

It is amazing, my Sister is 4 years younger than me, she is growing up so fast though 🙂 She is making such good decisions and asking such great questions and taking it all in stride. PLUS the brat looks better pregnant than not, if that is possible, BLAH! Hahaha. I am not just saying this because she is one of my only subscribers either. I am so excited for her to be an awesome Mommy!

So we got up and took HBear to gymnastics. After a nice visit with my Nana at her retirement home it was off to the Whitespot for lunch. We ordered our food and then realized, ummm should we have invited our husbands for lunch? Ninja and BIL have been building a loftbed in HoneyBear’s pinkalicious room so we can move the crib in soon 🙂 I am so thankful for the hard work they are doing, it is going to be amazing!

So they DID join us and we had a nice lunch. By this time Mom had more tests and has been admitted into the hospital. She has an infection and her fever is high and counts are low. The men went back to work (insert whip sound here) and the 4 of us ladies went to the hospital for a visit.

Tonight was the ballet! I have been so excited for this! Kari and I took HoneyBear to the Kelowna Ballet to see Passages. It is her first REAL ballet.

I was kinda worried that she wouldn’t be able to keep her 4 year old butt still for the entire thing, but she was awesome!!!  There were 3 dances before intermission and 3 after. During intermission I asked her, “Do you want to go for ice cream or stay and watch some more?” “MORE” she replied. Well, OK.

It was a great ballet. I did notice something strange though. Whenever the men got close and danced together a ripple of laughter went through the audience. I was stunned. This happened 3 times. Really? I mean, you ARE at the BALLET. I asked my Sister about it and she noticed it too. Granted, we live in a community of elderly people but I was shocked.

Anyways, when we were leaving a lady at the front desk asked HoneyBear, “Did you have fun? What was your favorite?” HoneyBear replied “Yes I loved it. Spring Waters was my favorite and my best. Thank you.” LOL That was the fourth dance in the program. The lady stood there stunned lol.

It was a 2 hour performance so we didn’t get home until 10pm. I had to carry HoneyBear in, she was so cute!

So obviously it was a busy day. I threw together dinner for the guys to eat while we were gone as they were still working hard and we were still full from lunch 🙂

Thai Turkey Burgers
Adapted from How Sweet it Is


2 pound lean ground turkey
4 green onions, thinly sliced
½ cup panko
1/2 cup carrots, shredded
1/2 teaspoon salt
1/2 teaspoon pepper
8 whole wheat buns, toasted

Thai sauce
1/2 cup sweet chili sauce
1/4 cup rice vinegar
1/4 cup coconut milk
3 tablespoons brown sugar
2 garlic cloves, pressed or finely minced
1 tablespoon creamy peanut butter
1 teaspoon ginger, grated
1 lime, juiced
1/2 tablespoon soy sauce

Slaw
2 cups chopped savoy cabbage
3/4 cup shredded carrots
1/2 cup fresh cilantro, chopped
1/2 cup peanuts, chopped

Combine all the ingredients together for the sauce and whisk until combined and fairly smooth. Take out 1/4 cup of the sauce and set it aside. Place the rest in a small saucepan and bring to a boil, then reduce to a simmer and cook for 3-4 minutes until slightly thickened. Set aside.

In a large bowl, combine the ground turkey with the salt, pepper, panko, sliced green onions, shredded carrots and the 1/4 cup of sauce that you set aside. Mix until just combined, being careful not to overmix but making sure everything is incorporated. Grill on BBQ.

To make the slaw, quickly throw together the cabbage, carrots, cilantro and peanuts, tossing well. Add 3-4 tablespoons of the sauce, then toss well to coat. Add additional sauce if desired. Place each burger on a bun and top with a heaping spoonful of the slaw and additional sauce if desired.

This was my lunch the next day… it was still absolutely delicious!!!!
