This week is STAR WEEK!!!! What is star week you ask? Well at HoneyBear’s Preschool they let each child take home the star box twice a year. Each day they can bring it back with a few items for show and tell. Nice, right? Yeah, except whoever is the star that week also brings in the snack for the whole class for the week.
At first I was super excited, what snacks could I make, granola… cupcakes… fruit leather… muffins…. POPCORN, oh the choices were endless. WRONG.
All snacks must be prewrapped. They must be healthy. Prewrapped. Snacks. Is that even possible? So nothing can be homemade or open or have peanuts for that matter.
Seriously?
So I let HoneyBear pick her snacks because really, what is the harm with those rules. She has to pick 2 dairy, 2 fruit, 2 veggies and 2 grains. We went to the store yesterday and picked everything that we needed. She picked yogurt tubes, marble cheese, broccoli, carrots, grapes, oranges, Ritz crackers, and multigrain tortilla chips with salsa. Well the grains are stretching it but I did say she could pick lol
So this morning she was super excited. She wanted to wear her new yellow jeans, because stars are yellow of course. You should have seen me this morning getting the bucketseat, a huge bag of groceries, her large Star box, and Her into class… as I struggled she moaned…. “Geeze Mommy this backpack is heavy!” The backpack that holds her slippers. J Man life is tough lol


When she got home she was like drunk on power. The word “no” popped out of her mouth almost every second word. My patience level was teetering on levels of North Korea psychoness. So during quiet time she crept into my room with a tray (my Mom stole from the food court in the mall, tsk tsk!) and on it was a teapot, a teacup and a variety of plastic fruits and veggies.
 “Mommy this is a snack for you to have during quiet time. Please enjoy.” Of course she said all of this while dressed in a tiara, butterfly wings and a tutu… with no underwear underneath lol Way too cute!
After quiet time we worked on an Earth Day project. I got the idea from KidWorldCitizen I tried to incorporate French into our project, you know just to test the waters. She did gluing, drawing, cutting, writing and coloring, she WAS a star! We only had 1 meltdown… when she picked up the tablecloth and cut it. TIME OUT! When I asked her if she wanted to rejoin the craft table she looked down from her bunk bed and said
“I need a bit more reading time by myself before I am ready to behave.”
Fair enough. She came out a few more minutes and finished up, cleaned up and set the table.
That plus 2 loads of laundry, a Dr appointment for SydneyBean, cleaning the stupid glass shower (a future rant about that is inevitable), and dinner all while a screaming SydneyBean is strapped to me is what I call a FREAKING STARRIFIC kind of day! LOL

Butter and Garlic Pork With Crispy Fried Garlic

Adapted from What2Cook
2 pounds stirfry pork, cubed
2 tablespoons oyster sauce
2 tablespoons worcestershire sauce
1 tablespoon garlic, minced
1 teaspoon cracked black pepper
1/2 teaspoon salt
1/4 cup butter
1 tablespoon garlic, minced
2 red peppers, sliced
1/4 cup chives, sliced
1 head garlic, minced
1/4 cup canola oil
Basmati rice, cooked
Marinate pork with the first 5 ingredients overnight.
Fry the head of garlic in oil until golden brown and crispy. Set aside.
 

Looks like a lot of garlic… it is!

Heat a pan and melt butter and sauté 1 tablespoon of garlic in butter until soft. Add the pork and sauté for 6-8 minutes.
Add the sliced peppers. Sauté for 2 minutes.
 

Chives fresh from the garden

Serve over basmati rice.
Sprinkle with chives and crispy fried garlic bits.

Crispy Baked Turkey Spring Rolls
Adapted from Just a Taste
1 tablespoon garlic, minced
2 teaspoons fresh ginger, minced
1 teaspoon sesame oil
1 tablespoon olive oil, plus more for brushing on rolls
1.5 pound ground turkey
1 cup bagged cabbage coleslaw
2 chives, chopped
1 cup mushrooms, sliced
2 tablespoons hoisin sauce
12 rice spring roll wrappers
Sweet chili sauce, for serving
Preheat the oven to 400
Sauté the garlic and ginger in the sesame and olive oils in large pan set over medium-low heat.
Add the ground turkey to the pan, breaking it apart into small pieces, and sauté until fully cooked.
Add the mushrooms to the pan and sauté just until wilted. Remove the pan from the heat and drain out any liquid.
Stir in the coleslaw, chives and hoisin sauce until thoroughly combined. Transfer the mixture to a large bowl and let it cool for 10 minutes.
 

The filling

Wet the spring roll wrappers with a damp towel until pliable then place 3 to 4 tablespoons of the mixture in the center of each of the spring roll wrappers. Roll the wrappers around the mixture, folding the edges inward.

Arrange the spring rolls in a single layer on a baking sheet lined with parchment paper. Brush the tops of the rolls with olive oil then bake them for 10 to 12 minutes, rotating after 6 minutes, until they’re golden brown and crispy.
Remove the spring rolls from the oven and serve them immediately with the sweet chili sauce.
 

Crispy and delish!

This was good. I was amazed at the ridiculous smell of garlic that permeated the entire house, amazed but kind of scared lol. But, it wasn’t overpowering and had great flavor. The spring rolls were tasty but not very pretty. Actually I find pork dinners always look a bit disappointing but always taste good. I will make this again. Everyone even HoneyBear liked the rolls, they were a big hit!
