Snickerdoodles and No Bake Granola Balls

On Tuesday we made Snickerdoodles and No Bake Granola Balls. I baked 3 dozen chocolate chip cookies the other week and somehow they are all gone… and this time it wasn’t me!! LOL

No Bake Granola Bites

1 cup rolled oats
2/3 cup coconut flakes
1/2 cup creamy peanut butter
1/4 cup ground flaxseed 
1/4 cup wheat germ
1/2 cup mini m&m’s
1/3 cup honey
1 tsp. vanilla extract

Stir all ingredients together in a bowl until thoroughly mixed. Chill for half an hour.

Stir it up!

Once chilled, roll into balls.


Store in an airtight container and keep refrigerated.

Snickerdoodles
Adapted from Love in the Oven

1/2 cup margarine
1/2 cup granulated sugar
1/3 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 1/2 cups flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon cream of tartar
2 tablespoons granulated sugar
1 teaspoon cinnamon

In a large bowl, cream together the margarine and sugars with an standing mixer on high speed. Add the egg and vanilla and beat until smooth.
Makes about 2 dozen

In another bowl, combine the flour, salt, baking soda, and cream of tartar.

Pour the dry ingredients into the wet ingredients and mix well.

Preheat oven to 300 degrees while you let the dough rest for 30 to 60 minutes in the refrigerator.

In a small bowl, combine the sugar with the cinnamon for the topping.

Roll dough into a balls. Roll the balls in the cinnamon/sugar mixture and place onto an ungreased cookie sheet.

Bake the cookies for 12 minutes and no more. The cookies may seem undercooked, but don’t be fooled, they are done. When the cookies have cooled they should be soft and chewy in the middle.

Yesterday HBear went on a field trip with her class to Art Knapps. It is a overpriced local gardening store. My Mom met them there to be a chaperone. This is the first time she has felt well enough to volunteer and they both were excited 🙂

Now my Mom can be a big kid herself lol Just picture this…

For 2 weeks now the teachers have been practicing with the kids walking in line and holding hand. Single file in groups of 2. The BIG trip finally comes and my Mom takes her 2 kids HoneyBear and Friend and of course veers off away from the group whenever she sees something she knows HoneyBear would like to touch. Of course the kids have all been told that this is a LOOKING and SEEING trip not a FEELING trip!!!! LOL She got chastised and told to stay in line more than the kids…. Even the kids were telling her not to leave the line LOL. Too funny.

Last night was a lazy day so we had Breakfast Quesadillas. MMMMMmmmm, they were so good. I used 2 whole tortillas for each of us so we each had a triangle or 2 leftover for lunch today. I love fresh salsa. So does HoneyBear, in fact when she took her Star snack this week and picked out tortilla chips and salsa, she was VERY confused at the jarred stuff. LOL

Breakfast Quesadillas
Adapted from The Pioneer Woman

1 lb bacon
Butter
1 sweet onion, diced
1 bell pepper, diced
1 jalapeno, diced
11 eggs
1/4 cup half-and-half
Salt And Pepper, to taste
½ teaspoon paprika
8 tortillas
1-1/2 cup marble cheese, grated
Pico De Gallo
Sour Cream

For the Pico De Gallo: Dice 4 Roma tomatoes very small. Dice 1 red onion same size. Add a handful of chopped cilantro. Add salt and pepper and the juice of 1 lime. Mix and put in fridge.

Bake the bacon for 20 minutes at 350, then remove it to a paper towel-lined plate.

Place a skillet over high heat. Add a couple of tablespoons of butter then add the onions, bell pepper, and jalapeno. Stir it around and cook until the veggies are starting to soften and turning golden brown. Remove to a bowl and set aside.

Set the skillet back on the stove over medium-low heat.

Mix together the eggs, half-and-half, and salt, pepper and paprika in a bowl. Add 1 tablespoon of butter to the skillet, then pour in the eggs. Scramble them. Turn off the heat and set aside.

To assemble the quesadillas, place a tortilla on a buttered griddle over medium-low heat. Add a layer of cheese, a layer of cooked veggies, a layer of bacon slices, a layer of eggs, and another layer of cheese. Top with a second tortilla.

Cook on both sides, flipping carefully, until the cheeses are totally melted and filling is hot. Repeat with the other tortillas and ingredients.

Slice the quesadillas into four wedges each. Serve on a plate with sour cream and pico de gallo.

Ninja doesn’t like sour cream… but it totally adds to it!
Bubbly Nature Creations

Today is beautiful! It is +23!!!! I love this sunny Okanagan weather! Today we were up bright and early and went for a walk. We did a Nature Scavenger Hunt. HoneyBear held onto her list and we picked up whatever we could and put it into our nature bag. Whatever we couldn’t pickup she took a picture of with her LeapPad. It was a beautiful morning and we had a lot of fun 🙂 Minus the screaming SydneyBean did towards the end… she is just so curious! She wants to see the world but I want to keep her precious skin covered from the big bad sun 🙂
