I love Spring!
When I lived in Winnipeg I never knew that spring could be so beautiful. To me spring meant grey, sandy streets, dirty melting snow.
Now I know. Now I see. Spring is truly rebirth. It is blue skies and sunny days. It is the smell of apple blossoms and the beauty of budding trees. Spring is special days where me and my girls can go out adventuring.
Today we went to OK Falls and walked through town. We played at the beach and we hung out at the park. I had a wonderful day and want to share a few pictures of an Okanagan spring day… I took so many I couldn’t narrow it down very well, sorry LOL

Tex Mex Sloppy Joes
Adapted from Smells Like Home
1 (14.5 oz) jar tomato sauce
¼ teaspoon chili powder
2 teaspoons oregano
2 teaspoons ground cumin
1 teaspoon smoked paprika
1/4 teaspoon ground allspice
Pinch of cayenne
2 teaspoons Worcestershire sauce
1 1/2 lbs ground beef
1 teaspoon canola oil
1 medium onion, diced
3 cloves garlic, minced
12 oz beer
2 tablespoons ketchup
¼ cup cilantro, chopped
1 can corn, drained
1cup mushrooms, sliced
5 whole wheat Kaiser buns
Chopped cilantro, sliced red onion, grated cheddar, sour cream (for topping)
Add the tomato sauce, chili powder, oregano, cumin, paprika, allspice, cayenne and Worcestershire sauce to a ultimate chopper and puree until smooth.

I used leftover Ragu… I’m not sure why I even had it in the fridge?

Brown the ground meat in a skillet over medium heat, stirring occasionally, about 10 minutes. Drain off the fat. Warm the canola oil in the pan with the browned meat then add the onions and mushrooms, cook until soft, about 5 minutes. 


Add the garlic and cook for an additional 30 seconds. Pour the tomato mixture into the skillet along with the beer, ketchup, corn and cilantro. Stir until well combined.

One for cooking and one for ME!

Bring to a low simmer over medium heat then reduce the heat to medium-low heat and cook uncovered for 15 minutes. 

Serve on buns with suggested toppings.

This is very good. I liked the corn in it and I love sour cream so it was a nice touch. More Tex than Mex I think but maybe next time I will add more cilantro J

Today is the first day SydneyBean is up at the table and trying REAL food! I almost hate this day. I feel like things are going too fast, they need to slow down so I can hold on to my baby… *sniff*
Ninja and I debated first food, brown rice, oatmeal or avocado. We decided on oatmeal!

Oatmeal Cereal  (makes 4-6 servings)
Adapted from Weelicious
1/2 cup old fashioned oats
½ teaspoon cinnamon
Place oats in an Ultimate Chopper, pulse for 15 to 30 seconds or until finely ground.

Store the oat powder in a sealed container in the refrigerator or freezer or in a cool dark place for up to 3 months.

To make 1 serving
Bring 1/2 cup of water to a boil and sprinkle in 2 tbsp of the ground oats and cinnamon.
Whisk continuously for 30 seconds and then occasionally for 3-5 minutes or until the mixture is thick and creamy.
Add breast milk to cool and thin the mixture
