The trouble with the rat race is that even if you win, you’re still a rat. – Lily Tomlin

Well I did it! I got my fat post-pregnancy ass back to work yesterday! I work at a local Greek restaurant down the street, part-time in the evenings. It is great way to get out of the house, make a little extra cash thst helps with the household “extras” and network for our business. PLUS I think I am going to be the Mayor someday. LOL In a small town, everyone has either come in or will at some point and they will remember the woman that served them, talked a little, was organized and had a friendly smile! It is the ONLY way to break into a tourist town filled with people that will NEVER consider you a local if you weren’t born here. Seriously.

So work was good. I have serious babybrain and every table ordered something special like a lime margarita?!?! I am NOT a very good bartender… Ninja was a bartender through our University years, so I let him make my drinks LOL I also got desserts… Americanos… Lattes… Espressos…. Caesars…. Martinis… Gift Cards… Gift Certificates… you name it, it came up last night! I really had to put on my thinking cap JNinja used a sippy cup to feed SydneyBean since she refuses breastmilk from a bottle, it went alright. She had a few meltdowns but nothing like the last time I left! Daddy was still there so I guess half the team = half the freak out! When I got home he looked exhausted… Poor Baby Daddy lol!

SydneyBean is doing it too!!! Yup, she has made it a whole 30 minutes in her crib! We moved from the bassinette to the crib and are trying naps out for now. Every 2 hours I feed her change her and put her in with a song. She cries and wails for about a half an hour… rolls onto her side and sleeps for about a half an hour. Whoo it is tough to listen to her screams. I hope she breaks soon. This is killing me.

BBQ Bacon Burgers

1/2 cup mayonnaise
1/2 cup barbecue sauce
4 bacon strips, cooked and crumbled
2 teaspoons onion powder
2 teaspoons McCormick Montreal Chicken seasoning
1 1/2 lbs ground beef

7 slices marble cheese
7 hamburger buns, split
Other hamburger toppings of your choice (tomatoes, lettuce, pickles, onions, etc)

Mix together mayonnaise and barbecue sauce in a small bowl.

In another bowl, combine the crumbled bacon, 3 tablespoons mayonnaise mixture, onion and chicken seasoning; add the ground beef and use your hands to mix well. Shape into patties.

Grill burgers, covered, over medium heat for 5-7 minutes on each side or until done. Place a piece of cheese on top. Cover and cook 1-2 minutes longer or until cheese is melted. Spread remaining mayonnaise mixture over buns; add a burger and other toppings of choice.

Loaded Fries
Adapted from Half Baked Harvest
6 medium potatoes
2 tablespoons olive oil, divided
salt and pepper
1 tablespoon chili powder
2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
2 large cloves garlic, pressed
Spicy Cheddar Cheese Sauce
4 slices bacon, cooked and crumbled
4 chives, chopped
Spicy Cheddar Cheese Sauce:
1 teaspoon olive oil
2 cloves garlic, pressed
2 ounces light cream cheese
1/3 cup sour cream
1/2 cup marble cheese, grated
1/4 cup milk
salt and pepper
2 teaspoons hot sauce
Pre-heat the oven to 400.
Line two baking sheets with parchment paper. Cut each potato into very thin fries lengthwise no more than a quarter-inch thick.

In a large bowl, toss the fries very lightly with olive oil. Season with salt and pepper and arrange the fries in single layer without crowding them.
Place the fries in the oven and roast for 30 minutes. Remove the fries and increase the heat to 425. Turn the fries and sprinkle with the chili powder, smoked paprika, cayenne and garlic.

Return the fries to the oven and bake for another 20 minutes until very crisp and brown.

During the last 10 minutes of baking heat about 1 teaspoon olive oil in a small sauce pan. Saute the garlic for 30 seconds and the add the cream cheese and sour cream.
Whisk until the cream cheese has melted into the sour cream and you have a smooth sauce.
Reduce the heat to low and add the cheddar cheese, whisking until melted.

Season with salt and pepper.
If the sauce is too thick add a tablespoon of milk at a time until you reach your desired consistency. Remove from the heat and stir in the hot sauce.
Once the fries are done remove from the oven and serve with the cheese sauce drizzled over them, then crumble on the bacon and sprinkle with green onions.

These fries taste JUST like a loaded baked potato. Awesome. The burger was another keeper. Easy and tasty. Yum!
