Last night a few words came to mind while I was looking at myself in the mirror. I was brushing my teeth and a wash of emotion came over me.
Forever, Finite, Non-negotiable, Non-debatable, No extra credit, No saying sorry the next day, No promises, wheel-deals or threats. Ultimate, Permanent, Unchangeable.
I have always been able to talk my way around, out of or through things. Not this time. I can’t make my Mom come back. I am 34. I will spend, if I live to a ripe old age, and I am sure wishing I do, more of my life without her than with her.
How is that possible? I see what I do for my girls, they are my everything. I know it was the same for my mom, how can the most important person in my life not be here anymore? She gave me life. How is my life without her?
This is what I was thinking last night. Maybe because today was HBear’s “first ½ hour at school” and it has been very emotional for me.
Today HBear and I met her new teacher and had a ½ hour session with 3 other families. More of a meet and question period. It went super well!
 

Thank goodness there wasn’t anyone else around! JJ I wouldn’t care anyways!! LOL

HBear reminded me the other day that Nana promised to take her for a “glamicure” before school started. So, her and I got ourselves a nice latte and hot chocolate from Starbucks and went for a pedicure to celebrate Kindergarten! It was a blast. She LOVED it! All the ladies thought she was so cute LOL. They even did her nails.

On a sidenote… SBean waved today for the 1st time!! When we went to pick her up from Grandma and Grandpa’s after our girly date, she was so excited to see big sister she waved!
We made homemade chicken Caesar salads tonight. If you haven’t already tried my Caesar dressing, go HERE because truly it is Amazeballs! To go with our salad I made savory muffins. These are sooo good! I love them at Christmas because the colors just fit LOL. My In-laws even made them for a big dinner party and got a ton of compliments!
Feta, Basil, Roasted Pepper & Spinach Muffins
Adapted from Sugar & Spice
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup feta cheese, crumbled
2 large roasted bell peppers, chopped
1 cup spinach, chopped
3 tablespoons fresh basil, chopped
1 cup 2% milk
1/4 cup vegetable oil
1 large egg
Preheat the oven to 375
Spray a muffin tin with Pam.
  
Whisk the flour, baking powder, baking soda, and salt in a mixing bowl. In a small bowl, stir together the feta cheese, roasted bell peppers, spinach and basil.  Set aside. 


Pour the milk into a measuring cup.  Add the oil and the egg and whisk together until well blended.  
Make a well in the center of the dry ingredients.  Pour the milk mixture into the well and stir gently with a spatula.  Mix until there are no more streaks of flour and the batter looks fairly smooth.  Don’t overmix!  Gently fold in the feta cheese mixture until evenly distributed in the batter.

Divide the batter evenly among the prepared muffin cups.  Bake for 20-25 minutes, until the tops feel firm and a skewer inserted into the centers comes out clean.  Transfer the muffin tin to a rack and let cool for 5 minutes. 

Serve warm or store airtight at room temperature for up to 2 days or frozen for 1 month. Reheat room temperature muffins in oven at 375 for about 8 minutes or in microwave. Makes 12.

Oh… My first batch of raisins are done! They taste sooo good! I have the next batch going already; Ninja’s Dad cleaned a HUGE amount of grapes for me, THANK YOU! I have to get these done so I can start soups, tomato sauce and the plums on our tree are almost ready! Holy Overwhelming J

What I can show for my efforts, I will need a LOT more to make it through the winter!
