Healthy Baked Haddock With Crispy/Fluffy Baked Potatoes

I’m so confused. Am I a normal person? You know, I can’t tell if I’m a normal person It’s true, I think I’m cool enough, but am I cruel enough?

Some days are just normal. Some days I don’t write because the day is just normal.

There are no temper tantrums.

There are plain Jane meals, some days we just have BBQ chicken/pork/beef with a potato packet and a medley of veggies.

There is just a bit of water painting, or black/whiteboard after schools with HBear. Some days she just gets home has a snack (whatever fruit or veggie came home in her lunch kit) and tells me about her day.

Some days SBean is a happy and content little baby that is learning something new every day and always expresses her glee at each discovery.

Some days Dad has a full day of work and we don’t even see him until dinner, we do cleanup and he heads back to the office.

Some days Ninja goes to work, we eat dinner, clean up, do bath routines, bed routines and finally get to bed any actually get to TALK to each other lol.

Some days I only think about my Mom a dozen or so times. This I am beginning to see is the norm.


These are great days in the Grand Scheme of things… but they just aren’t… funny lol

I am blissful in our normalcy… but those days are meant to be lived IN and not written about. That is why you get the OMG moments and the WTF just happened stories. They are meant to be captured in written word so not to forget the complete bizarre nature of some of the Days of Our Lives LOL.


On that note… Walmart on their Grand Opening of the SuperCenter = Complete MADNESS!!! I can’t even believe I attempted it. I should have known when this happened…

Picture it. There are NO parking spots, oh wait I see one way down there. I get up to it and so old man pulls through from the other side!!! This is a fist shaking offense as far as I’m concerned. So, I drive by and then notice he was actually just leaving and he is now behind me!!! Possible middle finger offense. So, I quickly go around to grab the spot he just pulled through. I get there aaaaannnnndddd…… a woman pulls through from the side I just passed and takes this spot?!?!?!?! I should have just left. So finally I pull back around and grab the original spot I wanted in the first place. Ahhhhhh.

Once inside I relalize that the majority of people in the store would have pushed women and children out of the way if they were on the Titanic. These people are nuts! I mean seriously is it that important to get a bag of carrots for $1? I guess so. People are yelling at poor stock boys for running out of sale items already. Demanding vouchers for the future. People are hitting my heels as they try to get the last pack of tapioca pudding, yeaaaah WTF? We got the Hell out of there quickly although SBean was in a great mood, apparently chaos becomes her LOL.

That was Friday on Saturday Dad and I went to the Xmas Craft show. Parking madness AGAIN!!! OMG, I totally went University parking spot stalker on this couple’s ass and FINALLY got a spot. Don’t mess with people and their Christmas crafts lol. We got a few cool stocking stuffers for the girls and my niece. Then we went to Fabricland for their members 50% off sale. Seriously? I am a glutton for punishment. They thought I was a quack-a-doodle! I don’t sew. I have a beautiful sewing machine and a craft area… hmmmm I will have to show it to you lol. Mom and Dad bought me the machine for my last birthday. My sister got me a membership and Ninja got me a GC. So I went in and used it. The ladies asked me questions like “what does the pattern say?” and I was like “ummmm no pattern just picking out pretty fabrics thanks. How much do I need for a 5 year old?” I am such a loser LOL But I got the stuff and Dad kept SBean busy like a PRO!

After shopping we did sports afternoon and night. I made bacon wrapped scallops and Baked Brie and we had Burger 55!!!! We watched the Bombers bite it, the Canucks kill it, and the Oilers blow it! All in all a good day!

I made fish this weekend too. I don’t like fish. Everyone else does though so I made baked garlic haddock with crispy/fluffy baked potatoes and steamed broccoli and carrots. Healthy much? I had A&W, what a bad influence LOL

Healthy Baked Haddock
Adapted from Men’s Health Magazine

1 lb Haddock fillets
4 tablespoons white wine
2 tablespoons butter, melted
2 cloves garlic, pressed
¼ cup panko
2 tablespoons parsley, chopped


Preheat oven to 350.

Place fish on foil, non-shiny side up. Place the foil on a baking sheet.


Combine all the rest of the ingredients. Spoon the mixture on top of the fillets.


Seal the foil into a packet.

Bake for 30 minutes.


Crispy/Fluffy Baked Potatoes

3 potatoes, cleaned and dried
Olive Oil
Salt

Preheat oven to 350

Poke the potatoes with a fork like 16 times, you don’t want them to explode in the oven lol.

Rub oil on them.

Roll them in salt.

Put them in the oven just on the grill, no need to dirty a pan 🙂

Bake for 30 minutes, then rotate them. Bake for 30 minutes more.

Crispy on the outside and fluffy on the inside!
