Today marks my 101 post! I really can’t believe it.
When I first started I didn’t tell anyone. I just wrote… kinda like a journal.

Now… I still look at it that way. Sometimes it’s funny, sometimes it is boring, sometimes I am sad, and sometimes I’m pissed off LOL.
Sometimes I have crafts, recipes, tips, cleaning dilemmas, parenting disasters, romance, successes, milestones, memories… it is all here. My children can look back someday and see our day-to-day lives, from my perspective lol

Beef “Parmesan” Pasta
Adapted from Food’n Drink Recipes
1.5 lb ground beef
1 medium onion, chopped
3 cloves garlic, pressed
½ green pepper, diced
1 small can tomato sauce
1 jar pasta sauce * I used Tomato Basil*
½ cup grated Parmesan cheese, divided
½ cup grated Mozza cheese
½ cup grated Mozza cheese
½ teaspoon ground allspice
1 teaspoon Italian seasoning
1/8 teaspoon nutmeg
1/8 teaspoon nutmeg
1 can corn, drained
½ cup butter, divided
¼ cup chives, chopped
¼ cup chives, chopped
¼ cup flour
2 cups milk
2 eggs, beaten
1 (16 ounce) package bowtie pasta, cooked and drained.
In a pan, cook beef, garlic and onion until meat is browned; drain.
Put back into the pan and add green pepper and corn.
Stir in tomato sauce, pasta sauce, 1/4 cup Mozza cheese, allspice, Italian seasoning, salt and pepper.
Bring to a boil.
Reduce heat; simmer, uncovered, for 15 minutes.
In a saucepan, melt 1/4 cup butter.
Stir in flour until smooth then add nutmeg.
Gradually add milk; bring to a boil; cook and stir for 2 minutes or until thickened and bubbly.
Stir in 1/4 cup Parm cheese.
Remove from heat.
Add eggs; whisk until smooth.
In a bowl, combine pasta and 1/4 cup Mozza cheese and chives.
Melt remaining butter; add to pasta and toss to coat.
Spread 1/3 of meat mixture in a greased 13×9 inch casserole dish.
Layer with half of the pasta, 1/3 of meat mixture, and half of the white sauce; repeat.
Bake, uncovered, at 350 degrees for 40-45 minutes or until thoroughly heated and bubbly.
