Oh what a tangled web we weave when first we practice to weave ~ The Neurotic’s Notebook


Ok 3 things:

1 I hate that all my pants are too big. I am not in maternity and even big-but-under-maternity clothes are too big. My normal size is still too small. I refuse to buy another in between level… But when SBean pants me in the kitchen, well it just freaking sucks LOL
2 Today I can cross off my last 2013 goal… I used my sewing machine. Mom and Dad got it for me for my birthday in April and I still hadn’t got up the balls to take of the protection stickers.
I even made my craft area. We cleaned out the office closet and made it my craft area J

Mom and I went shopping to get all the boxes perfect LOL I am happy that after all out hard work I finally used it… BUT…
I am so intimidated by it! Now, HBear puts everything that she makes on there and anything she BREAKS lol. It is the place that holds anything that needs taped, glue gunned or GULP sewn!!!!
I am fortunate in that while I don’t doing anything Great, I do many things well. J which leads to the fact that there aren’t many things I do, I don’t know the word… ummm, TERRIBLE.
Sewing is unfortunately one of them. 

Mrs Williamson my grade 7-9 Home Ec. Didn’t even let me do the class project of making a hoody. I had to sew little stuffed animals or something silly like that LOL
HBear needed a button a few weeks ago and oh man, I watched a 1.14 minute YouTube video for almost an hour… ON HOW TO TIE A KNOT!!!! Seriously, I kept on hearing my Mother looking down at me laughing her as off!!!!! LOL
So today I did it! I can’t tell you what I made until after Christmas lol but last night I opened up the huge manual to read about my sewing machine OMG the first thing I saw was…
I was like, believe me, I know!

This morning Ninja helped me. He is great at reading diagrams J So he figured it out and then showed me how LOL It was a group effort because he got kicked off when he kept on laughing at spool shaft and bobbin slit!!! LOL

So while he figured it out I did another one of those not-many-but-when-it-happens-I-suck-so-severely-it-is-embarrassing things… IRONING.

I should have known that those 2 tasks would be tied together, grrrrrrr.

3 HBear had a shopping extravaganza at school today! It was so cute, she takes a few dollars in coins and she buys stuff at the “store” in the open area. Adorable J she came out of her school doors hefting this big white plastic bag with the proudest look on her face lol then she was all like “Yeah I went shopping today and bought my sister, and you and Daddy presents. Look! It’s like Santa’s toy bag, it’s so heavy” LOL

So today we finished up Xmas presents to be shipped to Edmonton, Calgary and 2 different boxes to Winnipeg. Damn these are huge boxes L I hate shipping lol. For dinner we are having Tex Mex Breakfast Stromboilis. So I started by making the dough around lunchtime.

   
Stromboli Dough
AKA PIZZA DOUGH

1 3/4 cups warm water
1 envelope active dry yeast
2 teaspoons sugar
3 tablespoons olive oil
4 ¼ cups bread flour
2 teaspoons salt

Combine the warm water, yeast and sugar. Allow the yeast to dissolve and bubble up on top, about 5 minutes. Once bubbled, add the olive oil.
In the bowl of a stand mixer fitted with the paddle attachment, combine 4 cups of flour and salt.
Pour in the water/yeast mixture and as the dough begins to come together, switch to a dough hook attachment.
Allow the dough to knead, adding a bit more flour if needed, so that the dough releases from the sides of the bowl, 1 to 3 minutes. You should be able to touch the dough and not have the dough stick to your fingers.

Once the dough has kneaded and has pulled away from the sides of the bowl, remove the dough from bowl, about 6 good minutes.
Form the dough into a ball and place it into a large bowl sprayed with Pam. 

Cover the bowl with plastic wrap and let the dough rise in a warm area of your kitchen until it doubles in size, 1 1/2 to 2 hours.

After I picked up HBear, showed my M.I.L. my finished sewing projects!!!! And took HBear to the library, it was time to roll out the dough and get my strombolis together J

Tex Mex Breakfast Stromboli
Adapted from Bev Cooks
1 package of Turkey Daystarters
1 teaspoon extra-virgin olive oil
8 eggs, plus one more for an egg wash
1/4 cup milk
1 teaspoon cumin
1 teaspoon chili powder
1/2 bell pepper, diced
½ red onion, diced
2 green onions, sliced
1 cup mushrooms, sliced
1/2 cup cilantro leaves
1 cup Tex Mex cheese, shredded
1 pizza dough, recipe above, in 4 balls
Preheat oven to 450.

In a large skillet, crumble and brown your sausage. Once cooked all the way through, transfer to a bowl and cover to keep warm.

Add some oil to your pan and sauté your veggies.

In a large bowl, whisk together the eggs, milk, cumin, chili powder, a pinch of salt and pepper.

Reduce the heat to medium-low and pour the eggs in. Lightly scramble until cooked through, about 8 minutes.

On a large floured work surface, roll out each pizza ball until you get 4 rectangles.

Sprinkle with a little bit of cheese, followed by some of the sausage, eggs/veggie mix, a few cilantro leaves and a little more cheese on top. Roll up the dough around the filling… anyway you can J

Place on a Pamed baking sheet.

Brush the tops of the strombolis with an egg yolk, then take a knife and lightly score the tops, to create little vent slits.

Put into the oven for about 30 minutes, or until the dough is cooked through and golden brown.

Serve with salsa, more cilantro and sour cream!
