Bacon… Hotdogs, Bacon… Potatoes, Bacon… Caprese Salad and Macerated Strawberries!

 
May the dragon of life only roast your hot-dogs and never burn your buns!

A while back Ninja and I took the girls for a little adventure 🙂 We like to do that. BC is a wonderful place to explore 🙂 We drove up the hill and stopped at this beautiful lake… I was all like “hey girls go dip your toes in the lake!” Until Ninja saw the biggest fat black leech I have ever seen!! YUCK! All that ran through my head was this scene…

So after we LOOKED at the lake we took a drive to Osoyoos. We stopped at a few picturesque places for a few photos.
 
 
We made our way to Rattlesnake Canyon for some lunch, bumper boats and  friendly run-ins with school friends 🙂
 
We met Grandma and Grandpa and Auntie and JQ at Tickleberries for Ice cream. Tickleberries is a Okanagan staple and we try to go a few times in the summer. That means braving some loooooong lines but it is worth it 🙂
We ended our day at G & G’s house for a refreshing swim 🙂
Last week was PeachFest! Penticton hosts this fabulous festival every year and it has rides, food, free music and a parade! We spend tons of time there every year!
My incredibly cute and incredibly photogenic nephew, JQ  started crawling on this trip! He is 7 months old and just a charmer 🙂 I call him JQ because he NEVER takes a bad picture 🙂 and he poses SO well lol 

 

 

 

 

 

 

 

 

 

 

 

 

 

So while my Dad took HBear to the carnival and the concert in the park Ninja and I put SBean down and celebrated our 4th anniversary! He bought me beautiful flowers and the best wine around! Traditional gifts are flowers and fruit, and my man knows the fruit I like… GRAPES! LOL

 

 

 

 

Tomorrow my SIL and JQ are going home 🙁 We have had an awesome time with them the past 3 weeks and can’t wait for them to come visit again soon 🙂 I wanted to make my SIL a nice dinner before she left… but here’s the thing, in Winnipeg we are BIG kube fans. I mean BIG! When we were there for my SIL’s wedding 2 years ago her new FIL introduced us to Tenderloin Meats. They make Kube Hotdogs!!!! Waaaaat?

When my brother was here a few weeks ago he brought like 25 pounds of Kube!!!! So, I of course had to make them for my SIL’s big dinner. Fancy hey? Lol K, so it isn’t the amazing dinner I wanted to make for her exactly so I dressed it up with bacon! Lots and lots of bacon 🙂

Cheese stuffed Kube Dogs wrapped with Bacon and Caramelized Onions
 
12 Kube dogs
12 fresh buns
4 yellow onions, sliced
2 tablespoons butter
1 tablespoon oil
1 tablespoon sugar
salt and pepper
12 strips of bacon
1/2 cup shredded cheese
ketchup, mayo, relish, mustard
 
Bring a big pot of water and 2 teaspoons of salt to a boil.
 
Add hotdogs and bring to a simmer. Simmer for 30 minutes.

This is after I poured half the water out lol
Bake bacon in over at 350 for 25 minutes.
 
Reserve 2 tablespoons of drippings for the salad dressing.
 
Do not wash the pan, use the leftover grease and drippings for baking your potato wedges on. BACONY goodness!
 
Make a cut in the hotdogs and stuff with cheese. 

 


Take the bacon and wrap it around the hotdog and pin with a toothpick. (Soak the toothpicks in water for at least 10 minutes first).

Start the onions. Place a skillet on the stove on medium. Add butter and oil to pan and wait until super hot. Add onions and stir frequently. When onions start to brown turn down to low.

 

Sprinkle with sugar and if they are browning fast add a 1/4 cup of water.
 
Let simmer for 25 minutes or so. Season with salt and pepper. 

 

Put the dogs under the broiler until the bacon is perfect 🙂

 

Top with onions and ketchup and any other condiment you wish!
Hot Bacon Caprese Salad
Assorted heirloom grape tomatoes cut in half
Fresh mozzarella cheese, cut into 1/2-inch cubes
Fresh basil leaves
1 red onion, chopped
2 tablespoons bacon drippings
4 tablespoons red wine vinegar 
2 tablespoons olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Put tomatoes, onions and cheese in a serving bowl, toss in torn up basil leaves and sprinkle with desired amount of salt and pepper.
Add vinegar and oil to bacon drippings. Sprinkle with 1/2 tsp. kosher salt and 1/2 tsp. black pepper. Drizzle warm bacon mixture over tomatoes, onions, basil and cheese.
Serve immediately.

Bacon Wrapped Potato Wedges with Honey Sauce

For dessert I made Angel Food Cake… out of a box. Seriously it is way better than I could do so why not? I added whipped cream… out of a tub. Holy Smokers I suck lol BUT I did make some macerated strawberries 🙂

Angel Food Cake with Whipped Cream and Macerated Strawberries
 
1 box Duncan Hines Angel Food Cake
1 tub Frozen Dessert Topping
1 clamshell Strawberries, cleaned and quartered
2 tablespoon sugar
1 tablespoon lemon juice
 
Bake cake according to directions on the box.
 
Mix strawberries, sugar and lemon juice in a big bowl and refrigerate until ready to use.
 
Take the strawberries out 30 minutes prior to use and let rest at room temperature. 
 

Cut cake a top with a BIG dollop of whipped cream and a BIG spoonful of strawberries 🙂
