Zucchini Banana Muffins and Banana Oat Muffins

Spring has sprung! Seriously. Here in the Valley this is happening 🙂
The Castle Chives

So last year we painted the house, put in all new floors, and built the new deck. This year we are transforming the rest of the backyard 🙂

 
My Mom LOVED gardening. Me… not so much. It takes A LOT of time and that is something I just don’t have. Especially in the summer with both girls home. 
 
When my parents made the backyard years ago, they made it for adults… cause duh. they are adults lol. The rocks were perfect for them. They are not so perfect for the girls. 
 
My Mom had beautiful flower beds that had flowers that bloomed at all points of the year. It always looked lush and beautiful back there. Last year it looked like hell. Seriously, my Mom would never have wanted it like that. So even though it kills us to pull out all the gorgeous flowers and plants… it is for the best.

 

I tried looking through pics to show the beautiful backyard but looking through pictures is still very hard 🙁
First we shoveled up all the rocks and moved them to the side of the house. It makes a beautiful patch to park the bikes on.

 

 

 

 

 

Then we pulled up all the bricks and cement pads. We moved them out of the way for now because we are planning to reuse them 🙂

Then Dad cut down the cedars. We love them especially for the privacy but without Mom here treating them… 4 of them died 🙁

Next we are taking out the rest of the trees and starting to level 🙂

It has been pretty busy this past week but we still managed to make 2 batches of yummy muffins! We did a banana zucchini and a banana oat muffin. 

The girls LOVE them both so enjoy 🙂

Zucchini Banana Muffins
Adapted from A Hint of Honey
1 1/4 cups multigrain flour
1/4 cup ground flaxseed
1 1/4 tsp. baking powder
1/2 teaspoon baking soda
1 1/2 teaspoon cinnamon
1/4 teaspoon salt
2 medium bananas, mashed
1 tablespoon coconut oil
1 teaspoon vanilla extract
1 egg
1/4 cup honey
1/3 cup plain Greek yogurt
1 cup shredded zucchini
1/2 cup chocolate chips
Preheat oven to 375.
Line muffin tin with liners.
In a bowl combine flour, flaxseed, baking powder, baking soda, cinnamon, and salt; set aside.

 

In a large bowl mix together mashed banana, oil, honey, vanilla and egg until smooth. Add in zucchini (if very moist, squeeze extra moisture out first) and yogurt and mix until well combined.

 

Slowly mix in dry ingredients until just combined. Do not overmix.
Evenly divide batter into muffin cups. Add chocolate chips. (I made 1/2 chocolate chip and 1/2 blueberry)

 

Bake for 18 minutes or until a toothpick inserted into the middle of a muffin comes out clean.

 

 

Banana Oat Muffins
Adapted from The Gunny Sack
1½ cups multigrain flour
½ cups old-fashioned oats
½ cup sugar
2 teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
½ teaspoon nutmeg
2 mashed bananas
1 egg
 cup buttermilk
 cup melted butter
1 teaspoon vanilla
½ cup blueberries
Mix together flour, oats, sugar, baking powder, baking soda, salt and nutmeg.

 

In another bowl mix mashed bananas, egg, buttermilk, melted butter, and vanilla.

Add the dry ingredients slowly to the wet ingredients.

 

Fill paper lined muffin cups  full.
Add blueberries or chocolate chips. (I used 1/2 and 1/2)
Bake at 375 degrees for about 20 minutes.
