Oh Monday & Stuffed Pepper Pasta

The last 2 weeks have been crazy. Like, I need someone to throw me a life preserver CRAZY! I’m really tired and it feels like I’ve been treading water for a super long time.

Last week I picked up a single job PLUS I added 3 new clients to start this week. PLUS the kids still have after school activities AND there are last month school trips/track meets/volunteer activities/assemblies! It has been… an adjustment. 

On Monday after Dance Weekend there was nothing I wanted to do more than watch Days of Our Lives and sip on a Starbucks grande non fat, half sweet, vanilla latte.

Unfortunately  that isn’t how it went down.

I know it appears that we are always doing fun things but most of our days are pretty ordinary…

Monday: A Day in my Life 

7:30 Open 1 eye and look a the clock. Yup time to get up.

7:40 Get all the appropriate stuff ready for the day’s activities.

7:50 Get the Girls ready.

7:58 Get me ready.

7:59 Pour a coffee in a takeout mug.

8:00 Drive HBear to Gr2Besty’s house for Bike to School Day.

8:10 Take SBean to school. We are early so we watch for the Girls to ride by while we play at the park.


9:00 School assembly. HBear wins award for Commitment to Learning!


9:18 Race home to get the books I forgot.

9:23 Race back to the school to deliver books to each of the Girl’s teachers.

9:45 Leave school and head to work.

10:15 – 2:15 Get to work and clean my ass off. Move out cleans mean a LOT of washing walls 😂.

2:20 Stop at home and grab a piece of pizza, snacks for the Girls, and a hat for HBear.

2:45 Pick up the Girls from school.

2:55 Put HBear’s bike away and get going to gymnastics.

3:20 Drop off SBean at gymnastics.

3:25 Drive to Summerland.

3:55 Drop off HBear at golfing.

4:20 get to Superstore.

4:35 Get into the checkout line. Of course the scanner breaks!

4:55 Run out of Superstore, almost dropping my eggs.

5:00 Pick up SBean from gymnastics.

5:10 Unload groceries.

5:20 Start dinner.

5:30 Unload backpacks and lunchbags, start lunchbag dishes.

5:40 Throw in a load of laundry.

5:50 Take out all the garbage and recycling.

6:00 Sit down for dinner.

6:20 Clean up dinner.

6:30 Get SBean cleaned up for bed.

7:00 Get a text from Daddy.

7:01 Bean sends her very 1st text back.

7:05 3 Good night books and Home Reading.

7:25 Change over laundry.

7:30 HBear gets home.

7:35 Get HBear cleaned up for bed.

8:00 “Mommy my Science project is due on Wednesday and it is a 2 day project.” HBear says 😳

8:05 Collect all the ingredients for science project and get her  started on her experiment.

8:10 Fold laundry while HBear submerges an egg in a bowl of vinegar.

8:20 Get her started on her habit research for Habitat Diorama due next week. 


8:21-8:44 Answer questions.

8:45 HBear bedtime.

8:50 Yoga time!


9:30 shower.

10:00 The Bachelorette! I really liked Becca. Not a big fan or Arie and Lauren 🙊. This year after the 1st episode I picked my top 4:

With me working so much more, Ninja has been helping out with dinners. I try to have it prepped and then he makes it when he gets home. So, our meals have been easy, quick and healthy! This one actually tastes like a stuffed pepper! It was very tasty and we ate all the leftovers the next day.

Stuffed Pepper Pasta
Adapted from Will Cook for Smiles
NUTRITION: 440 calories

1 yellow onion
2 bell peppers, chopped

1 cup mushrooms, sliced
1 lb ground turkey
1 bottle strained tomato
6 leaves of basil
1 1/2 teaspoon oregano
1 bag farfalle pasta
1/2 cup Cheddar-Jack cheese, 
shredded

Cook pasta according to the package directions, drain and set aside.


Preheat oven to 350 and lightly grease a casserole dish.

Preheat a pan over medium heat. Add some oil, onions, mushrooms and peppers. Cook veggies until softened.


Add ground turkey to the pan. Break it up as much as possible and cook for a few minutes. Stir well breaking up clumps of turkey. 

Add tomato sauce, salt and pepper. Mix and continue to cook until turkey is done.


Stir in oregano and chopped basil. Stir in pasta and transfer the mixture into a prepared baking dish.

Spread shredded cheese all over the top and bake for 15-17 minutes.

Even when things are crazy, or especially when things are crazy, you need to slow down to enjoy the simple things 💕.

Last week was bike to work/school week! HBear went to her Gr2Besty’s house and rode her bike with all her friends. It was a great experience for her because we live in a different catchment, across a very busy street, and at the bottom of a very large hill. 

Tuesday was the last day of dance for the 2017-2018 season 😞. Who would’ve thought I would be sad lol!

Instead of having our regular jazz class, we went to Earls for drinks/dinner! 🍻 to a great year Ladies!

HBear handed in her science project, her rubber egg!

Both Girls are really enjoying tennis!

I did a move out clean this week and it looked so great when it was all done!

SBean tried her 1st strawberry off her strawberry plant! It was a little tart still 🍓😆.

This weekend HBear worked very hard making her diorama of the Amazon Rainforest! She chose the sloth to do her research on and made 1 out of play dough and hung it on a branch! It looks pretty awesome!

Ninja took the Girls for a walk to get the van (new breaks ugh) and stopped for an ice cream at DQ 😊.

HBear had a great weekend celebrating 2 of her Besties birthdays!

We finished the week with the whole family going on a movie date to see Solo! We all really liked it!
