End of Summer Slump, Tequila Lime Coleslaw & Baked Chicken Chimichangas!

The leaves are changing colour.


We are entering the final 2 weeks of summer vacation. Our final visitors have come and gone. Usually I would be dancing with joy that school is about to begin… Usually. This year however, all I feel is sadness.

We have been so busy this summer, I feel like I missed out. Now I know that doesn’t make any sense because what could we have possibly missed out on? We did absolutely everything our amazing city had to offer! We had visits from my Brother and SSIL! We celebrated PrettyPenny‘s first birthday with her! Not only did we visit with my Sis, BIL, and Kids, we got to see them twice! Plus we got to celebrate SweetPea’s 5th birthday with her! We also visited with Ninja’s Sis, Brother and PSketches AND JQ! This was the first year that WinnipegBesty and her family came out for a visit and the first year time in 10 years we got to visit each other with no planned agenda! We had a surprise visit from my Uncle and Aunt, plus we were able to visit with some amazing podcasting friends! The Girls were in dance camp, art camp, sports camp, tennis camp and gymnastics camp. We did PeachFest, saw Kim Mitchell, held a python, rode the rides at the midway, saw Motocross, Parachuters and SBean danced on the MainStage  We picked cherries, went wine tasting, beer tasting AND cider tasting! We went bike riding, floated down the channel, made S’mores, celebrated Canada Day, went to RibFest, The Penticton Speedway, the Farmer’s Market and the waterpark. We had a camp out, met the Prime Minister of Canada and his wife, podcasted, played cards, exercised, paddle boarded, went swimming, did the WBit twice, went to LocoLanding, golfed, ate ice-cream from Tickleberries and went to the Kangaroo Zoo! 

All in all we played hard!

So why am I sad? There are a few reasons. This year I worked every second week and I didn’t have as much time to spend with the kids. Another reason is because we spent so much time visiting with family, which I loved, we were unable to see any of our local friends. I miss them. Speaking of friends, last week HBear’s KBesty moved to Airdrie. I know how that feels, my WpgBesty moved away in grade 4. Granted she moved across the city and this move is to another province! I have to say they handled it so well! Maybe even better than me 😂. 


This week they had their final play date altogether! They went to the beach and had a barbeque and laughed a lot! HBear made her a beautiful photo album with 60 of her favourite pictures from the past 5 years together. After their play date she walked in the door and crumbled. It is so hard to see your daughter have her heart broken. I hugged her hard and wiped away her tears for the next hour while silently shedding my own. I just feel like she has had so much loss already in her very short life and seeing her heartbroken was devastating. However, I loved that she asked me to buy a photo album with 100 slots, so that her KBesty could fill it up with pictures of her new friends that she meets. That kid makes me so happy and so proud ❤️.

I am also deeply saddened to be losing 1 of our family’s closest friends and her parents. We connected early on and going out with them 2 to 3 times a year was basically our entire social life 😂. I was lucky enough to go out for 1 last hurrah with the Ladies the day before they left. We had a fantastic time… like usual! We will miss their entire family so much and are already planning a visit! We wish them luck in everything they do and are grateful for the time we have had with them.

Remember last week when we made Mexican for my SIL? Yeah, so after months and months of trying different recipes we decided to say screw it and make something completely new 😂. We had Ninja’s famous Fresh Pico de Gallo and my favourite Corn Salad which is also my most viewed recipe on the blog! We also tried the most refreshing Tequila Lime Coleslaw and Baked Chicken Chimichangas! Ninja and I both worked that day and still had dinner on the table for 11 guests within an hour! Fresh, healthy, fast, and delicious!

Tequila Lime Coleslaw
Adapted from The Chunky Chef

NUTRITION: 45 calories a serving

1/4 cup mayonnaise
3 tablespoons lime juice
tablespoons cilantro, chopped
tablespoons tequila
3 teaspoons sugar
1/4 teaspoon salt
pinch of black pepper
1/3 cup green onions, thinly sliced
1 bag coleslaw mix


To a large mixing bowl, add the first 7 ingredients (through black pepper) and whisk to combine until smooth.


Add green onions and coleslaw mix and toss to combine.



Cover and refrigerate for at least an hour, to allow flavors to fully combine.

Baked Chicken Chimichangas

NUTRITION: 379 calories per chimichanga


1 roasted chicken, shredded
2 cups salsa
3 teaspoons cumin
2 teaspoons oregano
2 tablespoons oil
1 package Knorr Mexican Rice
2 cups Mexican cheese, shredded
8 flour tortillas

Preheat oven to 425.


Mix the shredded chicken with salsa, cumin, and oregano; set aside.

Prepare Mexican Rice according to package directions. Remove from the heat.

Stir the cheese and rice into the chicken mixture.

Divide the mixture between flour tortillas, wrap and place seam-side down on a lined baking sheet. Brush with the oil and place in oven to bake for 25 minutes or until golden brown and crispy.


Serve topped with your favorite toppings such as; shredded cheese, sour cream, chopped tomato, chopped cilantro, chopped green onion, and chopped lettuce. I was too busy to take pictures when we ate them… BUT I put 1 aside for my lunch the next day and it looked and tasted just as great on Day 2!

This past week the Girls were in 2 amazing camps! SBean did dance camp and HBear did the most spectacular Xplore Sports camp! They tried out track and field, gymnastics, swimming, Dragonboat racing, kayaking, pickleball, basketball, soccer, and did a athletic test which told her she is best suited for gymnastics, synchronized swimming and dance 😂 that test is pretty bang on! She loved it and the instructors were phenomenal! At the end of the week SBean put on a show for us and even her big cousin, PSketches came to watch! She was so nervous and so excited! She was the main character and to wrap up their Disney Dance week they performed the trailer for the new Wreck It Ralph 2 coming out soon! SBean played Vanellope!

 

 

The smoke was bad this week and continues to be so. It is a very sad way to end our summer. I tried to go for a walk on the beach with my new cold foam iced cappuccino from Starbucks, man… this was a delicious drink!

This weekend we had our Calgary podcasting friends, the Milroy’s from Full of Fibre come for a visit! They came for dinner and we made our Honey Glazed Bacon Potatoes, Roasted Chicken, and Sautéed Green Beans with Mushrooms! We finished it off with fresh BC Peaches grilled with cinnamon and brown sugar and topped with vanilla bean ice cream! The kids had Smore’s too of course 😜. It was awesome getting to know them better and we enjoyed our smoky but fun day at the Farmer’s Market, a delicious lunch at Craft Corner Kitchen and a drive to Tickleberry’s!

Although I didn’t come in first in our step challenge this week, I hit my goal every day!

This weekSBean is in outer space art camp and HBear is in acro jazz/musical theatre camp!

Summer is definitely coming to an end but rest assured, we plan on making the most out of our final 2 weeks!

  1. End of summer celebrations! That sounds amazing. I also would be hosting the chic party at one of the Los Angeles venues for my birthday but want to go for an indoor themed party. I have to find a location with gold and black themed décor. Do you know about any locations?
