Age is Just a Number & Chicken Parmesan


Sometimes I can’t believe I’m going to be 60. I always say there’s no point moaning about getting older, when there’s nothing you can do about it. But still, I do find it quite funny. I look at that number, 60, and I think, ‘Really? Me?

This past weekend we celebrated a wonderful friend’s 50th birthday 😳. This got me thinking… I have a friend that turned 50. As I looked around at my friends at our table I realized a few of their husbands had already turned 50! As I looked closer I realized some of my girlfriends would be celebrating their 50th birthdays soon enough! It made me realize that my next birthday *gulp* I’m turning 40! When did that happen? I certainly don’t feel 40! My friends certainly don’t act 50 😜.

50 used to seem so old, Actually 40 seemed so old 😆 now… 50 to me means both of the girls are able to stay home by themselves finally LOL For real! When Ninja turns 50, SBean will just be legal to babysit and may even weigh enough to get out of her goddamn booster seat 😂. When my Mom turned 40 I was 20! Maybe that’s why I feel so young. Maybe that’s why all my Besty’s appear to be drinking from the fountain of youth. Perhaps it’s because we had children later in life and they are keeping us young?

Another thing happened this weekend that made me think about my age… Tiger Woods won his first PGA tournament in 5 years. When I picture Tiger Woods he is the new guy on the scene. However, the commentators kept on calling him the vet, the old guy 😆 they were wondering if at his declining age he could still do it. Hell yeah he can! Because he’s still freaking young! Besides, since when is golf a young man’s sport? 🤣 I mean he’s only 42! As far as I’m concerned he’s in the prime of his life! So is my friend! Hell, when I describe my Dad I always tell everybody how young he is! Ninja’s Dad is in his 70’s and he rides his bike all the time, is involved in volunteering, and continues to travel the world! I’ve don’t even look at him as being old!

It’s crazy how our perception changes over time.

I was messaging back-and-forth with an old friend from the hood the other day and her son is 17 years old!? HBear is turning double digits in less than 3 months! 🤯 My baby Sister is entering her late 30’s in 2 weeks! That is freaking Cray Cray! My Mom always said time flies and there were some days I felt like a clock stopped but now I realize, the only consistent thing is time and the fact that no matter how badly you want to slow down… it keeps on going.

Old? Pfft!

I feel like I’m in the best shape of my life! I know what I want and I’m more confident than ever. I don’t care what people think anymore, I’m settled, I have an amazing family, I love my job, I know what I like and what I don’t. I refuse to look back at the past as the good ol’ days… these are the good days!

Bring on the age!

I. Love. Chicken Parmesan. About 13 years ago Ninja and his Mom went to a cooking class at this little Italian restaurant/school in Winnipeg called De Luca’s. Ninja came home ranting about the most amazing chicken Parm he had ever had! Since then, it is the only recipe I have ever used! My MIL makes it for my birthday because although it is a very simple recipe… It does take a little bit a time. There aren’t many ingredients so you need to use the best quality ingredients you can. You also need a mill. I had no idea but the seeds in the tomato give tomato sauce it’s acidic bitter taste. Take out the seeds and you take out that taste! If you don’t have a mill you can buy bottled tomato purée… It’s different than canned tomato sauce or crushed tomatoes! If you like chicken Parm… You need to try this recipe! It is amazing!

This past week YBesty and her family came over for dinner. We made Chicken Parmesan, Caesar Salad and Cherry Cheesecake! It was SO good and just a fabulous night! So fabulous that I didn’t take 1 picture of the evening! I find that when I’m out of my element, busy or having a ton of fun I forget to take pictures. Those times will just have to live in my memories of best nights ever 💛!

**Don’t be alarmed by my pictures. I was making this recipe for 9 people and I overestimated lol. The actual recipe is for 4-5 people depending on appetites.*
Chicken Parmesan
Adapted from DeLuca’s Cooking School & Restaurant


4 chicken breasts
2 eggs
1/2 cup oil (for frying)
1 cup panko
2 tablespoons Parmesan cheese
4-8 slices fresh mozzarella 
1 onion
2 28oz cans Roma tomatoes, milled
2 tablespoons oil
5 basil leaves
4 tablespoons parsley, divided and chopped

Preheat oven to 375.

Butterfly chicken breasts or cut in half and pound thin between 2 pieces of seran wrap.

Beat eggs, 1 tablespoon parsley and season with salt and pepper.

Dredge chicken cutlets with flour, then dip in egg mixture and then coat with panko.

Fry chicken in hot oil until golden then set aside on a rack with paper towel underneath.

Saute onion in oil. When they are soft add the tomatoes, basil, 2 tablespoons of parsley, and season with salt and pepper. Cook the sauce for 30 minutes.

Place chicken in an ovenproof dish and top with a scoop of tomato sauce. Layer the mozzarella and parmesan cheese on top. Finish with another scoop of tomato sauce.

Bake for 25 minutes. Top with remaining parsley.

As I said last week, fall is officially in the air! Penticton looks beautiful in the autumn 🍂💛.


As I said above, we attended a 60’s themed birthday party for our friend this weekend! It was a blast! There were close to 180 people there! It was at the art centre and they had one room where the band played and everybody could dance (a la Winnipeg social) and it was attached to a lovely black light glowing bar/lounge. It was such a great time! All their friends from Vancouver came down and I met so many amazing people! Plus we got to hang with some of my Besties and they are just pure fun! I am not make-up girl but I was super happy on how our costumes turned out! YouTube for the win!


 

This weekend was rainy and miserable. The Girls made their own fun by using their chocolate pen and making us delicious little treats!


 

Their chore charts have been a hit so far! I find that I am not repeating myself as much because I just say, “go look at the chart!” Win win!


Yesterday was the second Pro-D day of the year 🙄. HBear wanted to go to the bank to make a deposit into her savings account. SBean wanted to take her money out of her piggy bank and go buy more LOL dolls. #TheresTheDifference 😂

 

After the bank we took advantage of the beautiful weather and spent the afternoon at the park/beach. I am so lucky to live where I do and to have the time to enjoy these days before *poof* they’re no longer here to enjoy.
