Emo & Cilantro Lime Chicken with Mango Avocado Salsa

My eyes are puffy. I have to be honest. I cried this week. A lot. I hate to blame it on that time of the month but I can literally feel hormones bouncing under my skin and making me feel on edge and emotional.

I didn’t realize how tightly I was wound up about the school reopening plan until Education Minister Fleming was on my screen informing us that indeed schools will be reopening 100% on September 8. As soon as he said it, the floodgates opened. I was surprised! I didn’t realize how this would make me feel. I have so many conflicting emotions about back to school. I know that the kids need to go back but the thought of my children leaving this house to social distance and maintain safety precautions on their own is terrifying. I trust Dr. Bonnie but I would really prefer to listen to the teachers and start a bit later in the year after the teachers have had proper training and feel more comfortable. This is all just so crazy. I just can’t believe we are here.

The moment my 2 precious Girls walk out of this house I have absolutely no control of my children’s safety in the middle of a pandemic. That thought makes me cold.

I bawled in the final scene of Katy Keene! It was such a good show and knowing that it was cancelled made me sad. I then watched the final episode of The Baker and The Beauty and the tears poured down again. Another show cancelled too soon. I don’t usually cry when silly shows get cancelled. I liked the shows well enough but just the thought of things ending has really made me so emotional. Especially because they made me forget the shitty stuff and enjoy something in these past few stressful months. They were also 1st season shows that got lost in the COVID craziness. It made me think, there is going to be a whole generation that would have had different lives if this virus didn’t change everything. In the timeline of life, this is where a new vector begins.

I cried watching John Lewis’s funeral. I was in bed surrounded by tissues as I watched men and women stand up and speak about the historical giant that was John Lewis. His life… everything he did… everything that happened… 😭. And then, Barack Obama. His eulogy was amazing. It was sad, it was personal, it was angry and it was perfect. #GoodTrouble

This week I had a friend reach out to me that I hadn’t spoken with in 10 years. Not really a friend but my childhood best friend. He is going through some stuff and he needed me so I called. Just talking to him was an emotional roller coaster. I almost cried when I heard his voice. I had missed him very much and I could hear his deep sadness. I had anger. I wanted to confront him for not calling when Mom died. I want to ask, “how could you have left me, us, when we needed you?” But I didn’t, he can’t right now. There will be time for that later.

It was a week.

There are a few important people in our lives just going through some really hard shit right now and everybody’s troubles seem to be hitting me hard. It’s like I am one of the charmed ones that can feel other peoples emotions 😂.

All these things just seem to have made me more reflective and sad that there’s so much uncertainty and hurt in the world right now. Watching that explosion in Lebanon today made me stomp my foot and shake my finger up to the skies and curse out whatever God, alien, or thing that might be out there watching us.

We are done with this nonsense! I’m hitting refresh on 2020 and hoping that when the little spinning wheel stops this year will be reloaded! Glitch free 😊.

I wasn’t going to post this because I posted a healthy chicken dinner last week 😆 however, this is just too good not to share right away! This is summer on a plate! This salsa is surprisingly delicious. I say surprising because I am the only 1 in the house that likes mangos or avocados 😂. Yet every single person in my family licked the plate clean! This is bright, healthy, and delicious! You could even add a jalapeño pepper to spice it up if your family isn’t chickenshit like mine 😆. I made it with cilantro rice but you could just add tortilla chips to this or even add lettuce and make a salad or better yet grab some tortillas, shred the chicken and make it a chicken taco! Let me know what you decide to do!

 

Cilantro Lime Chicken with Mango Avocado Salsa
Adapted from Chelsea’s Messy Apron

3 chicken breasts
3/4 cup + 1 tablespoon orange juice, separated (I used half orange juice and half pineapple juice because that’s what I had in the fridge)
1/2 cup + 1 teaspoon olive oil, separated
1/3 cup + 2 tablespoons lime juice, separated
1 and 1/2 teaspoons lime zest, separated
1 tablespoon honey
1 teaspoon + 1/4 teaspoon cumin, separated
2 and 1/2 tablespoons soy sauce
2 cloves garlic, pressed
1/2 cup coarsely chopped cilantro, separated

Mango Avocado Salsa
1 mango
1 avocado
1/4 cup red onion, finely diced
1/4 cup red pepper, chopped
kosher salt and freshly cracked pepper

Whisk together all of the marinade ingredients: 3/4 cup orange (pineapple) juice, 1/2 cup olive oil, 1/3 cup lime juice, 1 teaspoon lime zest, honey, 1 teaspoon cumin, soy sauce, garlic, and 1/4 cup cilantro in a medium-sized bowl. Add salt and pepper to taste.

Remove about 1/2 cup of marinade, and pour the rest into a large resealable bag.
Pound the breasts to even thickness and place in the bag with the rest of the marinade. Place in the fridge for at least 30 minutes making sure to flip the bag halfway through the time it is in the fridge. I recommend marinating for 2-8 hours.

Lightly oil the grill grate and place the marinated chicken on the grill. Discard leftover marinade. Grill for 10-12 minutes. Flip the chicken halfway and brush it generously with the reserved 1/2 cup marinade.

Take the remaining 1 tablespoon orange juice (pineapple), remaining 1 teaspoon olive oil, 2 tablespoons lime juice, remaining lime zest, and remaining 1/4 cup cilantro and toss together.
Chop the mango and avocado into small bite-sized pieces. Add to the salsa along with the finely chopped red onion, and red pepper. Season the salsa to taste with pepper, salt, and remaining 1/4 teaspoon cumin. Toss together.
Serve grilled chicken over a bed of cilantro lime rice and add spoonfuls of the salsa to top.

 

Ninja is the sweetest and brings home beautiful fresh flowers on a semi regular basis. All 3 of his ladies adore his sweet gestures ❤️.

Lately I have been trying to eat healthier. Dinner isn’t a problem because I menu planet but breakfast and lunch have been weak points for me. I might grab a banana in the morning and lunch usually consists of salsa and Tortilla chips 😂. The Girls and I went for a breakfast picnic on the beach this week! Starbucks makes the best egg white, feta and spinach wrap! The Girls had a great time and I got to wear my Oilers hat in August because the NHL started playoffs this week! 2020 is so weird. SBean loves her morning smoothies and I love my beachbody program, Morning meltdown 100! It has a mixture of yoga, weights, cardio, Hiit, mixed Martial arts, and core. I just finished day 15!

It was a super hot week! On the really hot days we just stayed in the air-conditioning and appreciated the view from the living room. HBear attended her GiftedBesty’s birthday this week! She had a social distanced night time glow paddleboarding party! They had the best time! What an amazing experience!

We spent Friday at the beach as a family! The guys worked their butts off this week so they could have Friday off after a very long and hot work week. This past weekend we spent a great day swimming at Grandma and Grandpa’s followed by s’mores with Papa and J! Ninja let me have coffee and a doughnut in bed on Sunday morning with my book while he started the prep for the rec room feature wall! He did all the prep in one afternoon and when I went to work on Monday morning he finished all the painting! I love it so much! It’s exactly the fun and colourful pop we wanted for that room!
