A lot of people listen to podcasts because they want to learn something and be entertained along the way.

Do you listen to podcasts? I didn’t think I was a podcast listener when I began podcasting. Slowly I came to realize that I am TOTALLY a podcast listener 😂. I began listening to indy podcasts and slowly I have introduced other podcasts into my weekly listening. I find podcasts to be the perfect listening material while I work. You can find a podcast about anything and everything out there! Ninja listens to a ton of different podcasts from science, to politics, to hockey and entertainment. Both of the Girls listen to podcasts too! Today I want recognize a few of our favourites! Maybe you don’t think you are a podcast listener but once you start, I promise you will be hooked too!


Indy Podcasts I listen to:

Dark Angels and Pretty FreaksAngel and the Freak, a married couple talking about everything and nothing. No point, just fun and humor, laughing mostly at ourselves and the things we encounter. Always the truth.


Our Liner Notes: A music conversation podcast where your host Chris and Matt (as well as assorted guests) bring you great tunes from their collection based on a particular weekly theme with which to play tracks and attach stories and factoids to ignite conversation among the group.

I am hoping this past week was winter’s last blast and that this easy homemade soup will help keep the chill off in the meantime. I love this soup because it is easy and delicious. It has the flavours of chicken noodle soup without the chicken! My family loves tortellini and this is an easy and different way to serve it that tastes delicious and warms you up in the best way possible!

SBean really wanted fresh buns with our soup so she made these! They were soft, fluffy, easy and we loved the pop of salt on top! They perfectly complimented this yummy soup and we had a few left to go with our lasagna the next day!

Tortellini Soup

Adapted from Add a Pinch

3 tablespoons butter
2 garlic cloves. minced
2 celery stalks chopped
2 carrots, sliced
1 onion, chopped
8 cups chicken stock (I used turkey broth)
2 cups water
1 package tortellini
4 sprigs of parsley

3 sprigs of thyme
1/2 teaspoon pepper
1 teaspoon kosher salt

Melt butter in Dutch oven over medium-low heat. Add the garlic, celery, carrots and onion to the butter and cook until the vegetables have softened, about 5 minutes, stirring occasionally.



Pour in the broth, water, parsley, thyme and stir to combine.


Bring to a boil, reduce the heat and stir in the tortellini. Cover and simmer until the tortellini are tender, following the package directions.


Stir in the pepper and salt.




1 Hour Fluffy Dinner Rolls

Adapted from Kleinworth & Co.

1-1/2 cups warm water
1 packet rapid rise yeast
2 tablespoons sugar
2 tablespoons butter, softened
1 teaspoon salt
4 cups flour more or less as needed
2 tablespoons butter, 
melted
sea salt flakes for sprinkling on top

Using your mixer, dissolve the yeast and sugar in the warm water and let stand for five minutes, or until foamy.


Add butter, salt & 3 cups of the flour, and mix until combined.
Add additional flour, 1/4 cup at a time, until the dough pulls away from the sides of the bowl and is slightly sticky to the touch.

Let the mixer knead 3-5 minutes, until smooth.

Cover with plastic, place in a warm spot and let rise 20 minutes.

Preheat oven to 400 degrees & spray a 9 x 13 casserole dish with cooking spray.

Punch down the dough & divide it into 20 equal-sized pieces.

Roll each piece into a ball and space evenly in the prepared pan.


Brush with melted butter, sprinkle with sea salt and let rise for an additional 15-20 minutes.

Bake 13-15 minutes, or until golden brown.

This week SBean had a BIG day at school! It was Valentine’s Day and although it looked a bit different and we weren’t allowed to do our usual classmate treats, she took it upon herself to make ALL her own cards for her friends! Plus it was backwards day at school, she had a great day! I had a Zoom  PAC meeting, it snowed, the Polar Vortex hit, and it snowed some more. I continued my Yoga journey, and I kicked ass at my weekly step challenge and won BOTH my challenges this week!


Friday was a Pro-D Day and Monday was Family Day so it was a 4 day weekend! We cuddled, watched the sham of an impeachment trial, ate delicious dinners, celebrated Lunar New Year with dinner from Saigon, watched Soul and we introduced HBear to The Matrix! We also played games and changed over all the Scentsy in the house.

Ninja brought home the most beautiful Valentine roses that we used as a centrepiece for all our Valentine fun! The Girls (mostly SBean) planned a wonderful Valentine Brunch for Ninja and I on Sunday! There was romantic music playing, candles, chips for the 1st course 😆, cookies for the 2nd course, peanut butter and jelly sandwiches for the 3rd course, a homemade vanilla milkshake for me and a fresh strawberry drink for Ninja, and fresh strawberries with chocolate sauce for the last course. After we ate they invited us to go snuggle in our bedroom while they cleaned up lol. They had soft lighting, heart decorations and rose petals on the bed 😂. They are so thoughtful and it made my heart burst!

Ninja spoiled us! He bought us chocolates and he got the Girls new gorgeous earrings from Gold Dust (sadly going out of business 😔) . He also spoiled me with locally made Accent Chocolates (my favourite)! I always get them books for VDay but they didn’t get here in time 😔 HBear’s GBesty baked us cookies and chocolates and Papa and J also spoiled the Girls with chocolate, stuffies and treats!


I actually brushed my hair and put on makeup for our special dinner and Ninja and I worked together to make his famous Beef Wellington and I added green beans in a bacon vinaigrette with the most luxuriously silky mashed potatoes. For dessert, we picked up a few Chocolate Explosions from BP and we enjoyed our special 10 year anniversary Tinhorn Creek wine that my Sis and BIL got us back in August. We ended our night recording the podcast. It was a wonderful week 💕.
