Fences & Garlic Cashew Chicken Casserole

 

I can be impatient. But I don’t think it’s always a bad habit. Sometimes a little impatience can be a good thing. It keeps you motivated.

Last Thursday my Dad’s GF mentioned that she saw a wicked cool fence in town that I should check out. I did and it gave me an idea! Before bed I mentioned to Ninja that the neighbour’s fence that has been up for 40 years was falling down and that we should look into building a new one. He said, “that sounds like a good plan. I’m pretty busy right now but I will look into what we need to make that happen. That would be a great project for next year.”

The next day I went to all the lumber stores in town and priced out my idea.

On Sunday I got Ninja to go with me to the store to see exactly what I meant.

6 days later… We began building.

That’s how you get things done! 😂

 

For real though, this is a major project! I thought it would be best to start it when we’re not travelling or planning on having guests here this summer. Next summer, if all goes well in the world, I plan on doing things! Seeing places! Visiting people! Not spending my entire summer building a fence… So this year it is!

I don’t know why I thought it would be so easy? Probably because I thought we would just hammer some boards into some posts 😜. I should’ve known better, Ninja measures everything! 😂 Which I am grateful for don’t get me wrong but who knew you had to measure, measure again, cut wood, paint wood, string string, dig holes, drill holes, drill sinkholes, cement holes, and then measure AGAIN?!?!

Not me 😳🤣. Did I mention we live on a deceptively slanted hill and that NEEDS to be taken into account?

We decided to start at the front of the house and took down the 40-year-old chain-link fence that has been in front of our house for my entire life. It was a good fence. It did its purpose. Zero maintenance… also, ugly AF. I figured if we had to build a new fence down our neighbour’s side, we might as well do the front too, you know, for practice 😜!

 


Although it was a lot of work after a LONG week of work and I forgot to put sunscreen on so I burnt to a crisp, I had fun! I always have fun with Ninja! We work well together and even when I’m bugging him by asking absolutely ridiculous questions, he answers me with patience. Don’t tell him but sometimes I ask the questions just to make him laugh 😆. 

 


We didn’t quite get the front done this weekend but it was a great start! I really don’t care how long it takes us, we have all summer! I hope it looks as good as I think it will! 15 feet down… only 105 feet to go 
😳🤣.

Garlic Cashew and Chicken Casserole
Adapted from Better Homes and Gardens

1 cup chicken broth
¼ cup hoisin sauce
2 tablespoons ginger, grated
4 teaspoons cornstarch
⅛ teaspoon pepper
1 pound chicken breasts, cut into 1-inch strips
1 cup spinach or bok choy
1 can water chestnuts, drained
1/2 cup snap peas, cut in half
1 onion, cut into thin wedges
1 cup broccoli, cut into florets
1/2 cup carrots, chopped
1 bell pepper, chopped
4 cloves garlic, minced
2 cups rice, cooked
½ cup cashews

Preheat oven to 400°F. Lightly coat a 2-quart rectangular baking dish with cooking spray; set aside.

For sauce, in a medium bowl combine broth, hoisin sauce, ginger, cornstarch, crushed red pepper, and black pepper; set aside.

 


Lightly coat an extra-large skillet with cooking spray; heat skillet over medium-high heat. Add chicken; cook until lightly browned, turning once. Remove from skillet. 

 
 
Add veggies to skillet. Cook for 3 to 4 minutes or until vegetables start to soften, stirring occasionally.
 
Add garlic; cook and stir for 30 seconds more. Stir in sauce. Cook and stir about 3 minutes or until sauce is thickened and bubbly. Stir in chicken and cooked rice.
 
 
 


Transfer chicken mixture to the prepared baking dish. Bake, covered, about 20 minutes or until chicken is no longer pink (165°F) and edges are bubbly. Sprinkle with cashews. 

 

Bake, uncovered, for 4 to 5 minutes more or until cashews are golden.

 

This week the Girls had a fun filled week of school and I had my second last PAC meeting! Or at least my second last meeting from 1 school! My lettuce grew out of control and is super tasty! My Oilers got knocked out of the playoffs early and my Winnipeg friends and family were quick to rub it in! We had good eats and drinks and got my fence building project under way! I managed to take a short break to watch my favourite golfer Phil Mickelson make history by being the oldest golfer ever to win a Major! SBean went on a playdate, I got a nasty sunburn and HBear bravely got her first Vaccination!!!! We asked her if she wanted to and she felt very strongly that she did! I think this entire year has been so out of her control that she was just so happy to do something to be part of the solution! I am so very proud of her 💛.
