This Place I Call Home & Summer Fiesta Chicken

I went to Kelowna today! Since the pandemic I think I’ve only been to Kelowna twice. Kelowna has the Costco, Kelowna has the mall, and Kelowna has the dance store. Throughout the past 16 months I have managed to find what we need in town or buy what we need and get it shipped to us. It’s one of the only sucky thing about living in our small piece of paradise.

As I drove home I looked at the mountains and marvelled at their greatness. I looked at all the trees and I wondered, what do people from urban metropolises think when they visit and see all of these trees? It’s magnificent! The whole time I was driving the Okanagan Lake is to the left of me, expansive, calm, beautiful. I drive by the wineries, the fruit stands, and the beautiful towns of Peachland and Summerland… Even the name sounds like heaven to me 😉. The skies are blue and the sun is shining.

I am so grateful.

I know that my posts have been a little dark lately, because the world is a little dark lately but I also want to express my extreme gratitude to be able to live and play on the lands of beautiful British Columbia. I remember when I was a kid taking this exact same highway and driving into Penticton and the excitement I felt! Over 30 years later and I still feel butterflies in my belly when I come down the Summerland hill and see my home off in the distance. I remember driving this exact stretch almost 13 years ago when we made the decision to call Penticton home. As soon as we turned at Sicamous I could feel it, I could feel every fibre of my being relax and I knew that this is where I was meant to be. I remember 11 years ago while being a passenger and looking around and thinking to myself,
“when my friends come to our wedding and they see this perfect place that we live will they love it as much as I do? Will they see what I see?”

What a beautiful place to raise children! Not only am I grateful to be living on this beautiful land I am also thankful that Ninja felt the pull of the west too. Our dream of living in the Okanagan Valley was made possible because of his willingness to take a risk with me! I’m also so lucky to have my Dad and my in-laws living here with us as well! I can only hope that one day soon that this majestic place will draw more of my family closer and we can all call this awe inspiring place, home 💛.

Pictures never do my food justice! This is one of those situations where I have this amazing recipe for this delicious dinner but my pictures don’t show you how phenomenal this dinner really is. If you like barbeque chicken and fresh salsa, this is the dinner for you! Although this is a very easy dinner that only uses a few ingredients, the flavours are explosive! We absolutely love pico de gallo and topping our cheesy barbeque chicken with a mountain of fresh tomatoes, red onions, and cilantro is a flavour bomb in your mouth! Don’t trust the pictures but trust me, this dinner is easy and delicious!

 

Fiesta Lime Chicken Recipe
Adapted from Lauren’s Latest

1 cup water
3 tablespoons lime juice
2 tablespoons soy sauce
1/4 cup sweet chili sauce
1/2 tablespoon Worcestershire
2 cloves garlic, pressed
pepper to taste
1/2 teaspoon cumin
4 chicken breasts
1/2 cup cheddar cheese, grated
1-2 cups pico de gallo*** recipe below

3 Roma tomatoes, deseeded and chopped into small pieces
1/2 red onion, chopped finely
handful cilantro, chopped
1 tablespoon lime juice
salt and pepper to taste

Toss all ingredients together.

In a large freezer bag, stir together water, lime juice, soy sauce, sweet chili sauce, Worcestershire, garlic, pepper, cumin, and chicken. Seal the bag well and refrigerate for up to 24 hours to marinate.

 

 

Preheat grill to medium. Grill chicken 2-3 minutes per side or until cooked completely. When you flip your chicken to cook on the second side, top with the shredded cheese to melt. Cover grill to finish cooking. Remove.


Top the chicken with the pico de gallo.

 

 

 

 

 

 

This past week was hot. Really hot! Hot enough to enjoy the beautiful blue skies and the stunning sunsets! HBear had a field trip on the Kvr to harvest sage with her Aboriginal education class, the Girls enjoyed their 3rd last week of school and the last few weeks of dance! We enjoyed delicious dinners, trying out new craft brews, and watching NHL playoffs! Ninja brought me home beautiful spring flowers, I got back into yoga full swing, we began fence demo, the Girls went to a birthday/pool party with their DanceBesties and I kicked ass at my step challenge! What a week!
