A Monday in my Life & Chicken Pot Casserole with Biscuits

I used to write “a day in my life” posts because I wanted to always remember what the day to day looked like in the different stages of my life. That’s the stuff I forget. When I think of memories of my Mom, it isn’t a Tuesday doing our life routine that springs to mind. Which is sad. Those are the moments that I had everyday and didn’t appreciate them and now those routine memories are gone. I didn’t want that to happen to my Girls With those posts they can look back or I can read back and remember how crazy life with a baby and a preschooler was!!! Or a grade schooler and a toddler!!! Or a middle schooler and a grade schooler!! 😂

I realized I haven’t done one in a while so here we go, THIS was my Monday…

7:30am The bedroom door opens a crack and Ninja comes in carrying SBean in his arms. Without opening my eyes I pull the blanket down and he rolls her into my arms.

7:35am The bedroom door opens a crack and Ninja comes in carrying HBear on his back. Without opening my eyes I pull the blanket down and he rolls her into bed and she wraps her arm around my waist and snuggles down.

7:45am My watch vibrates to let us know we have hit the last possible moment of sleep before we will be late.

7:46am Up! Get dressed, slurp down coffee as I direct children to eat, get planners, lunch bags, brush teeth and put on socks.

8:31am Leave the house. We’re late 🤬.

8:37am Drop HBear off. Positive of being late, there isn’t anyone parked in the round-about 😒.

8:44am Drop SBean off. Positive of being late, I can stop in the bus lane to let her out without getting yelled at 😏.

8:55am Get to the bank. Not open for 5 minutes 😒.

9:04am Done!

9:09am Drop off paperwork at the School Board Office.

9:21am Get to the grocery store. As I look at my list I realize that this is a 4 bag shop. That’s my maximum amount of large utility totes. I usually only need 2-3 but today my list is pretty big. My last 2 shops were pretty light so we need a lot. Check watch…

9:25am GO!

9:32am Run into a friend in the Halloween candy aisle and we commiserate about the lack of choice of Halloween treats and the ridiculous prices of said treats!

9:48am Back to the list.

10:10am Paid and bagged! Check my lottery ticket, BIG WIN… $1.00 😜.

10:19am Get home and get 4 BIG utility totes up the stairs PLUS 3 big pumpkins.


10:26am Put away freezer and refrigerator items as a piece of pizza heats up I empty all the garbages.

10:46 Fly out of the house eating my pizza slice. Run to my neighbour’s house to deliver a pizza. We got an extra pizza the night before and wanted our elderly neighbour to have it. He was happy to take it!

10:58am Get to the dance studio and grab my cleaning supplies.

11:00-2:00 Dust, sanitize high touch places, clean the bathroom, vacuum and mop the stairs, the lobby, study room, preschool art room, studio 1 & 2.

2:09pm Get home and put away all the pantry items and dry goods. Empty dried dishes out of sink, water plants, and start to get dinner ingredients out.

2:20pm Leave to go get SBean.

2:39pm Get home and get SBean to empty her bag, sign planner, empty lunch bag, do spelling words, go get dressed and hair.

2:56pm Start dinner prep while SBean has a snack.

3:15pm Hi HBear, bye HBear! Drive SBean to dance.

3:27pm Home to preheat the oven and chat with HBear as we empty the dishwasher.

3:40pm Get making dinner! Easy skillet chicken pot pie. I’m cheating because I bought a precooked rotisserie chicken and a tube of Pillsbury biscuits 😜. (SEE RECIPE BELOW)

4:14pm Dish up mine and HBear’s dinner. Place a helping in a Tupperware container for SBean then I pack it in her lunch bag with utensils and a treat for dessert.

4:18pm Eat dinner.

4:32pm Clean up kitchen and keep Ninja’s dinner warm as he is just walking in from work!

4:45pm Bye Ninja! Drive HBear to dance with SBean’s dinner. She has a break between 5:00-5:45 while HBear is at ballet.

4:57pm Get home and finish cleaning kitchen and doing dishes.

5:07pm Phone date with my Gr6Besty!

6:15pm Leave to pick up Girls from the dance studio. Have fun on your Zoom call Ninja! Ninja started an online parenting workshop on superfeelers. Last week I did an online seminar for raising teens too! They have all these books for what to do when you’re expecting, toddlers, and preschoolers but information on your child as they continue to grow and evolve is hard to find! Luckily we can attend these information nights even if it’s through Zoom!

6:30pm Home! Get SBean in the shower and get HBear working on her math homework.

7:25pm Get HBear in the shower and SBean a snack.

7:39pm Sit down with my cold coffee. I smell it. I think it’s from after dinner but it might be this morning. Oh well. GULP!

8:02pm Get my work stuff ready for tomorrow.

8:30pm Good night SBean. BRUSH YOUR TEETH!!!!

8:34pm Get in the shower. Ahhhhhh.

8:52pm Step onto my yoga mat. There’s nothing that winds me down more than a nice hot shower and some stretching!

9:22pm Namaste.

9:26pm Check my hockey fantasy draft for any changes I need for tomorrow. Damn. A player I just picked up yesterday got hurt in his game today! Doh!

9:38pm Sit down to hear how Ninja’s Zoom meeting went!

10:05pm Sit down to watch Survivor before the next episode comes out lol.

10:50pm Get ready for bed.

11:08pm Get into bed. Goodnight 🥱

Apparently the coast was hit with a new type of storm, a Bomb Cyclone 😳. We got hit with the outlying weather in the form of rain. So much rain. The best way to combat the chill of October rain is, chicken pot pie! However, who has time to make a savoury pie on a Monday night? This is a 1 pot skillet dinner that uses a few shortcuts like a precooked rotisserie chicken and Pillsbury biscuits in a tube! It is creamy and warm and filling and delicious!

 

Chicken Pot Casserole with Biscuits

Adapted from Eighty Recipes

4 tablespoons butter
1 garlic clove, minced
1 onion, chopped
2 carrots, chopped
2 celery, chopped
2 tablespoons white wine
1 ½ cup peas
¼ cup flour
3 cups shredded rotisserie chicken
1 teaspoon thyme, chopped
1 ½ cup chicken or vegetable stock
2 cups milk
1/4 cup parsley, chopped
1 can flaky biscuits
salt and pepper

Heat butter, garlic, onion, carrot, and celery in a large sauté pan, sprinkle salt and pepper, and sauté until tender and lightly golden, about 3 minutes. Add wine and let sizzle.

 
 
Mix in peas, sprinkle with flour and mix until bubbly and thick.
 


Add chicken, thyme, stock, and milk while stirring constantly, let the sauce boil for 5 minutes, until thickened and flavourful. Season with salt, pepper, and parsley.

 


Preheat oven to 350ºF.

Top with biscuits. Pop into the oven for about 12 minutes, or until the directions of the biscuits tell you to.

 

 

 

 

 

 

 

 

This week the weather was AWFUL. SBean wanted none of it! 😆. The fog was so thick that I stopped the van to take a picture in a place I took a picture last summer. See the difference? 😂 The Girls had dance and gymnastics during the week and relaxed with sleepovers on Friday. SBean made Halloween Haunted Houses with her Besty and HBear and her Besty watched Practical Magic. HBear said “NO PICTURES MOM” so I have inserted a picture of the 2 of them when they were 2 instead 😂. On Saturday we had dinner at Grandma and Grandpa’s… my favourite, chicken parm, creamy Italian salad, homemade focaccia and tiramisu! On Sunday I was still full and the weather was horrible so I spent the day online shopping 😮. We started the new week with beautiful fall colours after a weekend of rain. I ended a VERY busy week on the mat and I feel prepared and ready for the new week!
