I have noticed that my posts have been super serious lately. Probably because my world is super serious lately. All the negativity and fear is stressing me out! HBear just started a 4 week workshop on dance mindset! It has been wonderful so far! Something that helps me reset is reflecting on other people’s words. I love quotes and I have picked out 15 of my favourite quotes that help me when I’m feeling low. They remind me that my thoughts are powerful and that my story hasn’t been written yet. Sometimes when everything seems overwhelming we need to remember that we can get through this and whatever comes our way. Our family LOVES kielbasa! We call it kube. It was a staple in my house growing up. We haven’t been able to find good Ukrainian kube anywhere in Penticton. Every time my SIL or my Bro visits that bring us some good, stinky, garlic KUBE! Until we are fortunate enough to be given a good ring of kube again, I found this recipe! It is a different way to eat kube but because it isn’t good Winnipeg kube, I am going to call it kielbasa 😜. This was delicious! Even without a great garlic sausage, we enjoyed this easy 1 pot dish! It is flavourful, creamy, quick and doesn’t make a mess! SO GOOD! 
 

One Pot Kielbasa Pasta
Adapted from Sugar Apron


1 tablespoon oil
1 lb smoked kielbasa, sliced 1/4 inch thick
1 onion, 
diced
2 cloves garlic, minced
2 cups chicken broth
1 can diced tomatoes
3/4 bag of dry pasta
1/2 cup heavy cream
1/2 tsp salt and pepper, each
1 cup cheese, shredded
3 green onions, sliced

Add oil to a saute pan over medium high heat. Fry the kielbasa and onions.
 

Add garlic and cook until fragrant, about 30 seconds.
 

Add chicken broth, tomatoes, heavy cream, pasta, and seasonings.

Simmer for 15 minutes, or until pasta is tender.
 

Remove skillet from heat and stir in 1/2 cup cheese.
 

Top with remaining cheese and broil until cheese is melted, spotty brown, and bubbly.
 

Sprinkle with sliced green onions and serve.

 

We didn’t do much this week. The Girls enjoyed only 3 days of school due to a pro-d day and our 1st Truth and Reconciliation Day! We wore our orange shirts, talked about what Truth and Reconciliation means, bought orange doughnuts to support residential school survivors and took 2 minutes and 15 seconds of silence before dinner in honour of the 215 that never made it home from the Kamloops Indian Residential School.
 
Ninja and SBean brought me home beautiful flowers, we watched our Friday night family movie although lately SBean has been talking us into The Masked Singer instead 😆, I took us out new library books including a history of The Simpsons, and SBean started skating lessons again! We took last year off because of COVID but she was SO happy to be back on the ice! On Sunday we had a Girl Date with Sis! HBear really wanted to try out Indian food. Lately her friends have been asking her out for lunch at a local Indian restaurant but HBear never knows what to order, so we went on Sunday and tried everything! It was delicious!! Thankfully my Sis knew what everything was and taught us how to order. After lunch we went for a walk on the beach and then to HBear’s pick of movie, Dear Evan Hansen. I’m going to let you know right now, it is a tearjerker. I BAWLED the entire movie. It is a true musical and the lyrics were so emotional! Ninja and BIL took the younger Girls to The Adams Family 2. More laughing… less crying 😂.
