Wednesdays & Honey Ginger Chicken Sheet Pan Dinner

Wednesdays are hard. SBean in particular finds Wednesdays hard. I noticed it last year, she had an awful time getting up in the morning and was a great big grump a lump 😂 when she did get up. It became a joke with us but really it’s just a reminder that Wednesdays are hard and it’s OK to be tired. Knowing that she has a full slate of activities after school on Monday and Tuesday lets me see Wednesday in a different light. So when I hear her be a little short or take a little bit more time getting out of bed, I understand where she’s coming from.

The other day she got home from Wednesday night gymnastics and curled up on the “coffee table” exhausted. When I came up to her to give her a hug my heart caught in my throat. She looked just like my Mom did at that age. Or at least what I think she looked like at that age. Like me and apparently SBean. My Mom had short hair when she was little and big brown eyes. There were a couple pictures that my Mom had from when she was younger that I thought of right away! I miss my Mom so much but I am thankful that I still get to see her every day in the mirror and in my Girls 💛.

On busy weeknights when Ninja works later, it’s a work day for me and I’m driving the Girl’s to their after school activities, I like a 1 pan dinner that takes minutes to prepare with stuff I have on hand. This was an easy dinner that tasted great. 
 

Honey Ginger Chicken Sheet Pan Dinner
Adapted from Sugar & Soul


½ cup soy sauce
2 tablespoon honey
1 tablespoon ginger, 
grated
3 garlic cloves, minced
1 teaspoon sesame oil

4 boneless skinless chicken breasts (I use 3 because the Girls share a breast)
3 medium potatoes, chopped into 1-inch cubes
2-3 cups vegetables (I used broccoli, cauliflower, green beans, & tomatoes)
salt & pepper

Over medium heat, add soy sauce, honey, ginger, garlic and sesame oil to a small saucepan. Whisk frequently, bring to a gentle boil and lower heat to simmer for 3-5 minutes or until sauce begins to thicken slightly.

 


Preheat the oven to 375 degrees F.


Put chicken breasts on a sheet pan and generously season with salt and pepper.


Scatter the vegetables and potatoes around the chicken.
 

Pour the glaze over the chicken and vegetables and gently toss to ensure everything is coated.
 


Bake in the oven for 35 minutes or until the chicken is cooked and vegetables are tender-crisp. Gently toss vegetables halfway through cooking time.

 

 

This week was a full week of dance, delicious local craft brews, a much needed coffee date with a friend I hadn’t seen in way too long, and dinner with The Masked Singer 😆.
 
This past weekend we had a perfect fall day outing with Sis and family at McMillan Farms. We have been going to their pumpkin patch since HBear was 3! It was super special to be able to do it with my Nieces this year! We went through the corn maze, catapulted apples and enjoyed a hay ride around the farm. After some delicious hot chocolate and waffle bites we went to Capri Bowling Lanes for a game of glow bowling! To end the day we went to Vice & Virture Brewing Co. for an amazing dinner and flight of brew! It was a great day 💛. On Sunday Ninja and his Dad finished the gate!! It looks so great! It is what I had imagined and I’m so impressed that they did it 😆💛!!
